GROUND MEAT KIMBA

It's not Keema, but it's inspired by. I wanted something quick because it was late, but this took me nearly an hour anyway because of the chopping. I'm a slow chopper. It would be good with brown rice, but I thought I didn't have time to cook rice so we just mashed our potatoes in our bowl and stirred it all together and it was delicious like that. Some might like to add pepper sauce to theirs.

Number Of Ingredients 13

2 tablespoons olive oil
1 onion, diced
3 garlic cloves
2 tablespoons curry powder
2 teaspoons cumin
1 large potato, cut into 1/2-inch dice
1 1/2 lbs ground turkey
2 (14 ounce) cans diced tomatoes (with their juice)
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 lemon, juice of
1 cup plain yogurt (use whole yogurt, it's still way less fat than sour cream)

Steps:

  • In a large skillet, heat the oil over medium heat.
  • Heat the onion and garlic until beginning to soften.
  • Add curry powder and cumin.
  • Cook, stirring ocassionally until spices are aromatic and onion is transparent, about 7 to 10 minutes.
  • Meanwhile, place the potatoes in a microwave-safe bowl. Loosely cover with waxed paper. Microwave in 30 second intervals until beginning to soften, about 5 intervals (they will finish cooking in the skillet).
  • Add ground turkey (or ground meat of your choice) to skillet. Break into crumbles. Cook until no longer pink, stirring frequently.
  • Add diced potatoes.
  • Add tomatoes and juice.
  • Add cinnamon, salt, and pepper.
  • Stir a bit, but it's okay if everything is basically in layers.
  • When it's bubbling, reduce heat and cover. Cook for 12 to 15 minutes, stirring ocassionally, until potatoes are soft and flavorful. Add water or broth if it seems too dry.
  • Add lemon juice. Stir well.
  • Serve with a dollop of yogurt, or pass the yogurt for diners to add their own.

2 tablespoons butter, or more to taste
2 onions, diced
1 clove garlic, minced
1 ½ tablespoons curry powder
2 ½ teaspoons salt
1 teaspoon ground turmeric
1 teaspoon cayenne pepper
½ teaspoon ground black pepper
¼ teaspoon ground ginger
½ cinnamon stick
1 pound ground beef
2 potatoes, diced
2 tomatoes, diced

Steps:

  • Melt butter in a large wok or skillet over high heat; saute onions and garlic until onions are almost transparent, about 5 minutes.
  • Combine curry powder, salt, turmeric, cayenne pepper, black pepper, ginger, and cinnamon in a bowl.
  • Stir ground beef into onion mixture and cook, breaking beef into small crumbles, until beef is cooked through and browned, 5 to 7 minutes. Add curry mixture to ground beef mixture and stir well.
  • Mix potatoes and tomatoes into ground beef mixture, reduce heat to medium, cover wok, and cook until potatoes are tender, about 20 minutes.

3 tablespoons butter
1 medium onion, chopped
1 garlic clove, minced
1 lb ground beef (I use venison)
1 tablespoon curry powder
1 1/2 teaspoons salt
1 dash black pepper
1 dash cinnamon
1 dash ginger
1 dash turmeric
2 cups tomatoes, diced and cooked
2 potatoes, peeled and diced
2 cups green beans, chopped (fresh or frozen)

Steps:

  • Saute onion and garlic in butter till soft.
  • Add meat and brown well.
  • Stir in curry powder and seasonings, and remaining vegetables.
  • Cover and simmer 25 minutes, stirring several times and adding more water if needed.
  • Serve with rice.

  • In a bowl, combine all the ingredients for the beef. Mix everything together by hand and set it aside to marinate while you prepare the other ingredients. When all the other ingredients are prepped, and the beef has had time to marinate, heat a large pan with some olive oil and fry the beef until it is nicely browned. Remove the beef with a slotted spoon into a bowl and set aside.
  • Peel and slice your carrot(s) thinly on a diagonal. Lay the slices flat and run your knife through them lengthwise to create thin julienned slices. Saute them in a pan with some olive oil and season with a couple pinches of salt to taste. Set aside.
  • Slice the log of radish into ½” thick slices. Cut each slice into strips, so that you end up with thin long strips, about ½” thick in diameter. Set aside.
  • Break 5 eggs and add a couple pinches of salt. Whisk well. Heat a large pan with olive oil over medium low heat. Use a paper towel to wipe the pan so that it is evenly coated. Pour in the eggs and let it cook until the bottom is firm and light golden brown. Flip the egg over and cook until light golden brown. Remove to a plate and cut the egg into half-inch strips. Set aside.
