Mexican Chicken Taco Casserole image

This is flavorful way to deconstruct your tacos and make serving them up a little easier on you! Serve tacos casserole-style, and top them with your favorite toppings - shredded lettuce, diced tomatoes, salsa, sour cream, etc. as desired! Adjust the seasonings to your preference - you can start with less than called for and add more if you're worried it will be too strong of a flavor profile. Add your favorite taco toppings such as shredded lettuce, diced tomatoes, sour cream, salsa, etc. if desired to serve!

Time 1h15m

Yield 8

Number Of Ingredients 14

nonstick cooking spray
1 tablespoon olive oil
1 pound ground chicken
1 medium onion, diced
2 teaspoons chili powder
2 teaspoons cumin
2 teaspoons garlic powder
½ teaspoon salt
1 (15 ounce) can black beans, drained
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 (14 ounce) can tomato sauce
7 (6 inch) flour tortillas, or as needed
2 cups shredded Mexican blend cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with nonstick cooking spray and set aside.
  • Heat oil in a large nonstick skillet over medium to medium-high heat. Add ground chicken and onion. Cook, stirring occasionally to break up the meat, until onion is mostly tender and meat is cooked through, about 5 minutes. Season with chili powder, cumin, garlic powder, and salt. Add black beans, corn, tomatoes, and tomato sauce; stir until well combined.
  • Bring mixture to a low simmer and cook for about 10 minutes. Taste mixture and adjust the seasonings as desired.
  • Spoon a couple of good-sized scoops of meat mixture onto the bottom of the prepared casserole dish, and spread into a thin layer. Lay about half of the tortillas over the sauce, breaking them in half as needed to make a fairly even layer without too much overlap. Add remaining meat mixture over the tortilla layer. Top with remaining tortillas, again breaking into pieces as necessary to evenly cover the surface.
  • Cover with shredded cheese. Spray a piece of foil with nonstick cooking spray, and set the sprayed side against the cheese to cover the casserole dish (this helps prevent "cheese loss" when you remove the foil).
  • Bake in the preheated oven until casserole is bubbly and cheese is nicely melted, about 30 minutes. Allow to cool for 10 to 15 minutes before cutting into wedges or scooping out to serve.

PASTA CHICKEN TACO BAKE

Pasta Chicken Taco Bake image

This is a very tasty casserole, I have only made this using penne pasta, but you can of coarse use any kind of pasta that you desire, make certain to use a pasta that will hold up well when cooked a second time in the oven, and only cook the pasta until just fork-tender, as it will cook more in the oven, don't cook it to the same texture that you would if you were using it immediately, just drop into boiling water and cook until JUST a bit tender. If you are using low-sodium chicken broth in place of the water, make certain to season with salt and pepper (if using) towards the end of cooking in the frypan. If you prefer a more spicy taste, then add in a finely chopped jalapeño pepper for extra heat! Serve this with a side salad.

Categories     Chicken

Time 1h25m

Yield 6 serving(s)

Number Of Ingredients 13

8 -10 ounces penne pasta (cooked to only firm-tender, drained and set aside)
2 lbs uncooked ground chicken (can use ground beef also)
1 large onion, chopped
1 tablespoon fresh minced garlic (optional or to taste, but good to use!)
1 1/2 cups water (more if needed, can use low-sodium chicken broth in place of water if desired, or use half of each)
1 (1 ounce) package taco seasoning mix (or use my own Kittencal's Taco Seasoning Mix)
2 (11 ounce) cans whole kernel corn (use the corn mixed with sweet peppers if possible)
2 1/2 cups sliced pitted olives (use the large green pimento-stuffed, also you can use black)
3 cups grated cheddar cheese (or to taste)
1 1/4 cups salsa (or to taste)
2 (4 ounce) cans green chili peppers, drained
salt and pepper (optional)
1 small green bell pepper, chopped (optional)

Steps:

  • Grease a 3-quart casserole dish.
  • In a skillet cook the ground chicken with onion and garlic until brown.
  • Stir in water (or chicken broth if using) and taco seasoning mix; bring to boil, reduce heat and simmer uncovered for about 10-12 minutes stirring occasionally.
  • Stir in cooked pasta, corn, olives and half of the shredded cheese, salsa, chile peppers and green bell pepper (if using); mix to combine.
  • Transfer the mixture to a prepared baking dish.
  • Set oven to 350°F.
  • Bake covered for about 35 minutes, then remove from oven and sprinkle the remaining cheese on top.
  • Return to oven and bake uncovered for another 10-15 minutes.
  • DELICIOUS!

EASY CHICKEN TACOS (LOW FAT IF YOU CHOOSE SOFT SHELL OVER HARD)

Easy Chicken Tacos (Low Fat if You Choose Soft Shell over Hard) image

I try to avoid cooking with pre-made spices and sauces (some are better than others), so this recipe is based off my re-interpretation of all the good things a taco should be: spicy, tasty, moist, and most of all packed with delicious veggies; using chicken and what I can find in my pantry at a moments notice. You could even simply top a bowl of lettuce and tomatoes with the taco meat and eat it as a taco salad - that would be very low fat!

Provided by SuzanneThePainter

Categories     One Dish Meal

Time 25m

Yield 6 tacos, 2-4 serving(s)

Number Of Ingredients 18

1/2 lb ground chicken
1/4 large white onion, diced
1/4 cup roasted red pepper, strips chopped (from a jar)
1 garlic clove, minced
1/4 medium green pepper, diced small
1/2 teaspoon vegetables or 1/2 teaspoon olive oil
1 tablespoon cornstarch
1/2 teaspoon ground red pepper
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon salt (or less to taste)
1/4 teaspoon Tabasco sauce (leave out if you don't like spicy food)
1/4 cup cold water (or chicken broth if you have it)
1 (8 ounce) package fresh organic guacamole
1/4 head lettuce, shredded
1/2 fresh ripe tomatoes, diced
1/2 cup shredded cheese
2 -3 green onions, chopped

Steps:

  • Prepare your tacos/tortillas as directed on the packaging.
  • Place your onions, green peppers, and oil into a non-stick pan/skillet on medium/medium-high heat and cook until the onions are soft. Add in the garlic and chopped roasted red peppers. Cook until the garlic is fragrant (don't let it burn).
  • Move the veggies to the edge of the pan and place your ground chicken in the center. You'll want to keep breaking apart the meat as it cooks.
  • In the meantime prepare your Taco sauce by combining in a small bowl your spices and corn starch. Then, add water and Tabasco sauce, stir well to combine.
  • Just as the chicken finishes cooking (roughly 5-12 minutes) stir to combine all the veggies and the chicken together, breaking apart any large pieces of chicken. Add your sauce mixture and stir together. The sauce will thicken, coating the chicken mixture, add additional water/broth if needed one tablespoon at a time. Allow the sauce to cook through. Cover and set aside.
  • Now you're ready to assemble your tacos. Spoon about 2-3 tablespoons of the meat mixture into your shells, top with cheese, guacamole, tomatoes, lettuce, and enjoy!
