Steps:
- Heat the oven to 350 degrees F. Lightly grease a 13x9x2-inch baking dish. Stir the chicken, soup, sour cream, tomatoes and green chiles, beans and seasoning mix in a large bowl.
- Layer half the chicken mixture, 3 cups tortilla chips and half the cheese in the baking dish. Layer with the remaining chicken mixture and tortilla chips. Cover the baking dish.
- Bake for 30 minutes. Uncover the baking dish. Sprinkle with the remaining cheese.
- Bake, uncovered, for 10 minutes or until hot and bubbling and the cheese is melted. Sprinkle with the chopped tomato, green onion and cilantro before serving, if desired.

- Lightly spray pan with oil and brown ground turkey. Mix Tabasco with the tomato sauce and pour over the browned turkey. Simmer until slightly thickened.
- Spray bottom of 9 x 9 casserole (with lid) and cover with the tortilla shells. I tear them and place them so they cover the entire bottom.
- Sprinkle 1/2 the cheese on the shells, spread refried beans over the cheese and then top the beans with your turkey and tomato mixture.
- Cover the top with the crushed chips and remaining cheese.
- Cover and bake until the cheese is bubbly. Remove the lid and let the cheese brown slightly.
- Remove from oven and allow to cool for 5 minutes.
- Great topped with lettuce, sour cream, salsa, diced peppers and onions.
MEXICAN CHICKEN TACO CASSEROLE

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with nonstick cooking spray and set aside.
- Heat oil in a large nonstick skillet over medium to medium-high heat. Add ground chicken and onion. Cook, stirring occasionally to break up the meat, until onion is mostly tender and meat is cooked through, about 5 minutes. Season with chili powder, cumin, garlic powder, and salt. Add black beans, corn, tomatoes, and tomato sauce; stir until well combined.
- Bring mixture to a low simmer and cook for about 10 minutes. Taste mixture and adjust the seasonings as desired.
- Spoon a couple of good-sized scoops of meat mixture onto the bottom of the prepared casserole dish, and spread into a thin layer. Lay about half of the tortillas over the sauce, breaking them in half as needed to make a fairly even layer without too much overlap. Add remaining meat mixture over the tortilla layer. Top with remaining tortillas, again breaking into pieces as necessary to evenly cover the surface.
- Cover with shredded cheese. Spray a piece of foil with nonstick cooking spray, and set the sprayed side against the cheese to cover the casserole dish (this helps prevent "cheese loss" when you remove the foil).
- Bake in the preheated oven until casserole is bubbly and cheese is nicely melted, about 30 minutes. Allow to cool for 10 to 15 minutes before cutting into wedges or scooping out to serve.

PASTA CHICKEN TACO BAKE
This is a very tasty casserole, I have only made this using penne pasta, but you can of coarse use any kind of pasta that you desire, make certain to use a pasta that will hold up well when cooked a second time in the oven, and only cook the pasta until just fork-tender, as it will cook more in the oven, don't cook it to the same texture that you would if you were using it immediately, just drop into boiling water and cook until JUST a bit tender. If you are using low-sodium chicken broth in place of the water, make certain to season with salt and pepper (if using) towards the end of cooking in the frypan. If you prefer a more spicy taste, then add in a finely chopped jalapeño pepper for extra heat! Serve this with a side salad.

- In a skillet cook the ground chicken with onion and garlic until brown.
- Stir in water (or chicken broth if using) and taco seasoning mix; bring to boil, reduce heat and simmer uncovered for about 10-12 minutes stirring occasionally.

I try to avoid cooking with pre-made spices and sauces (some are better than others), so this recipe is based off my re-interpretation of all the good things a taco should be: spicy, tasty, moist, and most of all packed with delicious veggies; using chicken and what I can find in my pantry at a moments notice. You could even simply top a bowl of lettuce and tomatoes with the taco meat and eat it as a taco salad - that would be very low fat!

- Prepare your tacos/tortillas as directed on the packaging.
- Place your onions, green peppers, and oil into a non-stick pan/skillet on medium/medium-high heat and cook until the onions are soft. Add in the garlic and chopped roasted red peppers. Cook until the garlic is fragrant (don't let it burn).
- Move the veggies to the edge of the pan and place your ground chicken in the center. You'll want to keep breaking apart the meat as it cooks.
- In the meantime prepare your Taco sauce by combining in a small bowl your spices and corn starch. Then, add water and Tabasco sauce, stir well to combine.
- Just as the chicken finishes cooking (roughly 5-12 minutes) stir to combine all the veggies and the chicken together, breaking apart any large pieces of chicken. Add your sauce mixture and stir together. The sauce will thicken, coating the chicken mixture, add additional water/broth if needed one tablespoon at a time. Allow the sauce to cook through. Cover and set aside.
- Now you're ready to assemble your tacos. Spoon about 2-3 tablespoons of the meat mixture into your shells, top with cheese, guacamole, tomatoes, lettuce, and enjoy!
"SKINNY" CHICKEN TACOS

- Combine chicken, juice of 1 lime, 1 teaspoon cumin, 1 teaspoon garlic powder, and 1 teaspoon chipotle pepper in a bowl; allow to marinate for 10 minutes.

- Preheat oven to 400°F.
- Prepare pasta dinner as directed on package, with butter or margarine and milk.
- Place in a 2 quart casserole.
- Heat olive oil in large frypan, add chopped onion and sliced mushrooms, sauté till onions are just turning brown, 5 minutes.
- Add ground chicken, pepper and scramble fry with onions and mushrooms turning often until no longer pink, 5 to 8 minutes.
- Add stewed tomatoes, simmer for 3 or 4 minutes.
- Add chicken/tomato mixture to casserole.
- Stir to mix with pasta.
- Add chopped basil, turn several times to distribute through casserole.
- Sprinkle Parmesan cheese over top of casserole and bread crumbs if using.
- Bake uncovered for 20 to 25 minutes, until bubbling around edges and Parmesan is melted and crisp.
- VARIATION:.
- Use chopped veggies, any that you have and a half pound of very lean hamburger.

I just put this together tonight since I decided to buy ground chicken and had no clue what to do with it, haha! I used low fat/low carb/low calorie whole wheat tortillas by La Tortilla Factory. But you could use whatever you wish :)

- Brown the Ground Chicken, until no longer pink.
- Add the Garlic or Garlic Powder & Lawrys Seasoning Salt to meat.
- **could even add a taco/burrito seasoning packet**.
- Once Chicken is pretty much done, add the salsa and refried beans. (and corn if adding it).
- You can add the onions & bell pepper now or wait until you start layering the dish and let them cook that way.
- Spray the Casserole Dish w/ non-stick cooking spray.
- Lay 1st Tortilla Shell on bottom.
- Sprinkle some Cheese all over Tortilla.
- Then on top of that add the ground chicken mixture.
- If you didn't add the onion & pepper to meat mixture then sprinkle some on top of meat.
- Put 2nd Tortilla Shell on top.
- Repeat Cheese, Meat, etc until entire casserole is full.
- Bake at 375 Degrees for about 35 minutes until heated through and cheese is melted.
