GROUND CHERRY PIE II
Ground cherries, also known as husk tomatoes, produce tiny tomato-like fruits in papery husks on low, lanky bushes. This is an old Mennonite recipe with a crumb topping.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Wash ground cherries and place in unbaked pie shell. Mix brown sugar and 1 tablespoon flour and sprinkle over cherries. Sprinkle water over top. Mix together 3 tablespoons flour and 3 tablespoons sugar. Cut butter in until crumbly. Top cherry mixture with crumbs.
- Bake in the preheated oven for 15 minutes, reduce temperature to 375 degrees F (190 degrees C) and continue to bake for 25 minutes.

EASY CHERRY SAUCE
Steps:
- Gather the ingredients.
- If working with fresh cherries, wash them thoroughly and carefully remove all the stems and pits.
- In a medium saucepan, place the cherries (fresh or frozen), sugar, and water. If using frozen cherries, add just half the amount of water to begin with. Bring to a boil over medium-high heat, stirring often.
- In a small bowl, stir the lemon juice and cornstarch together until smooth.
- Whisk the cornstarch mixture into the boiling cherry mixture.
- If working with frozen cherries, check on the texture of the mixture and add one tablespoon of water at a time if too thick.
- Return the sauce to a boil, stirring constantly. Don't let the sauce scorch on the bottom.
- Cook until the liquid has properly thickened, about one more minute.
- Remove the pot from the heat and taste. Add a little extra sugar or lemon juice if needed at this point, depending on your personal preference. Allow the sauce to cool to room temperature before using it.

GROUND CHERRY SAUCE

- Place the water, sugar, vanilla extract, cinnamon, nutmeg, and cloves in a pan over medium-high heat. Bring to a boil, and stir in the cherries. Reduce heat, and simmer until cherries are transparent. Pour into resealable freezer bags and freeze, or pour into hot jars, leaving 1/4-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water bath.

GROUND CHERRY PRESERVES
Ground Cherry, a.k.a. Husk Tomato, is an orange fruit similar in size and shape to a cherry tomato. It is close kin to the tomatillo. The fruit is covered in papery husk. Flavor is a pleasant, unique tomato /pineapple like blend. The ground cherry is very similar to the cape gooseberry, both having similar, but unique flavors. Uses are similar to common tomato. Can be eaten raw, used in salads, desserts, as a flavoring, and in jams and jellies. Fruits are excellent when dipped in chocolate, and can be dried and eaten. Cooking time approximate. From the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. - Husk the ground cherries and add them to a saucepan.
- Add the lemon juice and cook over low heat until the ground cherries have popped and released their juices. Give it a stir to break them up a bit.
- Add the sugar and cook over medium heat until the jam thickens, about 15 minutes.
- Pour into clean quarter pint mason jars, leaving 1/4 inch headspace and store in the refrigerator or process in a water bath canner for 5 minutes.

- Preheat the oven to 350°F and butter the inside of a 9-inch springform pan. Cream together the butter and 1 cup sugar in a medium bowl until light and fluffy. You can use an electric mixer, but I find a wooden spoon and a little elbow grease to the job just fine. Add in the eggs, one at a time, making sure each is fully incorporated. Sift in the flour, baking powder and salt, then mix until just combined.

- If canning, thoroughly wash jars and arrange them in a hot water bath canner. Bring pot with jars to a boil, and process on a rolling boil for 10 minutes.
- Remove the husks from all of your ground cherries, throwing out any fruit with black spots or mold. Wash fruit carefully.
- Grate ginger, zest lemon, and juice both the lemon and lime. Set ginger aside, but feel free to combine the lemon and lime juices.
- Combine ground cherries, sugar, lemon zest and the citrus juice in a large, heavy-bottomed pot. Bring pot to a boil, stirring occasionally. Lower heat to medium and continue simmering until all the ground cherries have burst and dissolved, about 30-40 minutes, stirring occasionally (your whole house will smell like a confectioner’s shop).
