The gang's all here, so make dinner special with ground beef simmered in a delicious sauce and then topped with everyone's favorite--garlic mashed potatoes.

1 small onion, chopped (1/4 cup)
1 cup frozen mixed vegetables (from 12-oz bag)
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
1 jar (12 oz) fat-free beef gravy
1/4 teaspoon dried marjoram leaves
1/4 teaspoon pepper
1 1/3 cups water
2 tablespoons light stick butter
1/2 teaspoon garlic salt
1/3 cup low-fat (1%) milk
1 cup Betty Crocker™ mashed potatoes
1 tablespoon chopped fresh parsley

Steps:

  • In 12-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Stir in mixed vegetables, tomatoes, gravy, marjoram and pepper. Heat to boiling. Reduce heat to low; simmer uncovered 8 to 10 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, in 2-quart saucepan, heat water, butter and garlic salt to boiling. Remove from heat; add milk. Stir in potatoes (dry) and parsley. Let stand about 30 seconds or until liquid is absorbed.
  • Fluff potatoes with fork. Serve stew over potatoes.

1/2 teaspoon garlic salt
1/3 cup milk
1 cup Betty Crocker™ mashed potatoes
1 tablespoon chopped fresh parsley

Steps:

  • In 12-inch nonstick skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.

Creamed Ground Beef Over Mashed Potatoes image

Number Of Ingredients 14

1 onion, finely chopped
1 garlic clove, minced
1 lb ground beef
1/2 tsp salt
1/4 tsp cayenne pepper
1/4 tsp pepper
1/4 c butter
1/4 c flour
1/2 tsp salt
1/4 tsp pepper
2 c milk
4 potatoes, peeled and cubed
1/4 c milk
1 Tbsp butter

Steps:

  • 1. Put the onions, garlic, and ground beef in a large skillet.
  • 2. Cook until ground beef is no longer pink.
  • 3. Drain excess fat, then add salt and peppers.
  • 4. Remove to a separate bowl.
  • 5. Melt butter in the skillet.
  • 6. Add flour, salt and pepper.
  • 7. Cook, stirring constantly over low heat for about two minutes.
  • 8. Do not allow to burn.
  • 9. Gradually add milk, stirring constantly after each addition and allowing to boil before adding more.
  • 10. This results in a smooth sauce.
  • 11. When all milk has been added, continue to stir constantly and bring to a boil.
  • 12. Allow to boil for one minute or until sauce is thick, continuing to stir.
  • 13. Remove from heat and stir into beef mixture.
  • 14. Prepare mashed potatoes: Place potatoes in a pot with enough water to cover by about 1/2 inch.
  • 15. Cook until potatoes are tender.
  • 16. Pour off cooking water (or save for a terrific addition to breads).
  • 17. Add butter and milk (or cream).
  • 18. Mash to desired consistency.
  • 19. Serve ground beef mixture spooned over the mashed potatoes.
  • 20. Variations: Add one teaspoon of your favorite spice blend to make a new and exciting variation.
  • 21. You can eliminate the cayenne pepper if you don\'t like spicy hot foods.
  • 22. If you do, then please add more!

1 boneless beef chuck roast (3 pounds), cut into 2-inch pieces
1-1/4 teaspoons salt
3/4 teaspoon coarsely ground pepper
1/2 cup all-purpose flour
2 tablespoons olive oil
12 garlic cloves, minced
1 cup dry red wine or reduced-sodium beef broth
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (14-1/2 ounces) reduced-sodium beef broth
6 medium carrots, thinly sliced
2 medium onions, chopped
2 tablespoons tomato paste
2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
2 bay leaves
Dash ground cloves
Hot mashed potatoes

Steps:

  • Sprinkle beef with salt, pepper and flour; toss to coat., In a large skillet, heat oil over medium-high heat. Brown beef in batches. Remove with a slotted spoon. Reduce heat to medium. Add garlic; cook and stir 1 minute., Add wine to skillet, stirring to loosen browned bits from pan. Transfer to a 5- or 6-qt. slow cooker. Stir in tomatoes, broth, carrots, onions, tomato paste, rosemary, thyme, bay leaves, cloves and beef., Cook, covered, on low 8-10 hours or until beef is tender. Remove bay leaves. Serve with mashed potatoes.

My favorite way of cooking a tough cut of beef.

Number Of Ingredients 14

1 ¼ pounds blade steak, cut into 4 portions
salt and pepper to taste
⅓ cup all-purpose flour
2 tablespoons olive oil
2 medium onions, halved and sliced
2 cloves garlic, minced
½ teaspoon ground thyme
2 cups low-sodium beef stock
¼ cup dry red wine
2 ½ pounds baking potatoes, peeled and halved
5 cloves garlic, sliced, or more to taste
¾ cup warm milk
2 tablespoons melted butter
salt and pepper to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Season blade steaks with salt and pepper. Coat steaks with flour, shaking off any excess. Reserve excess flour.
  • Heat oil in a skillet over medium-high heat. Add steaks and brown on both sides, about 3 to 4 minutes per side. Transfer steaks to a covered casserole dish.
  • Add onions and minced garlic to the skillet; cook and stir until the onion has softened, 3 to 4 minutes. Add thyme and 3 tablespoons of the reserved flour; stir until well combined. Slowly pour beef stock and wine into the skillet, stirring constantly. Bring to a simmer. Season to taste with salt and pepper. Pour the stock mixture over the steaks.
  • Cook, covered, in the preheated oven until steaks are very tender, about 90 minutes.
  • While the steaks are cooking, place potatoes and garlic slices into a large pot and cover with salted water. Bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Add warm milk, melted butter, salt, and pepper to the potato-garlic mixture; beat with an electric mixer until smooth.
  • Serve steaks on a bed of mashed potatoes and spoon pan juices over top.

1 (7 1/4 ounce) box instant roasted garlic mashed potatoes
2 1/2 cups hot water
1 1/3 cups milk
1/4 cup butter

Steps:

  • Brown ground beef and onion in large nonstick skillet until meat is thoroughly cooked and onions are tender. Drain excess fat if necessary.
  • Add mixed vegetables, tomatoes, gravy, marjoram and pepper. Bring to a boil. Simmer over low heat 8 to 10 minutes or until vegetables are tender.
  • Meanwhile, in medium saucepan, bring hot water, milk and butter to a rapid boil. Remove from heat. Stir in both pouches of potatoes and seasoning just until moistened. Let stand about 1 minute or until liquid is absorbed. Whip with fork until smooth. Serve stew over potatoes.
