GROUND BEEF SOUP
This recipe is one of our family's favorites...fairly easy to make and very yummy! My husband, who won't normally eat leftovers actually hoards these leftovers (this makes a big batch) and will eat them for days in a row! :) This recipe also works great in a crockpot! Just brown the beef ahead of time, then throw everything together to simmer for the day!

Steps:
- Boil potatoes, corn, carrots and tomato paste in water.
- Add beef bouillon and garlic.
- Brown beef and onions, drain off fat.
- Add beef and onions to soup. Boil until vegetables are fully cooked.

- In a large saucepan, cook the beef, onion, celery and carrot over medium heat until meat is no longer pink; drain. , Add the water, au jus mix, bouillon, bay leaves and pepper; bring to a boil. Stir in the noodles. Return to a boil. Cook, uncovered, for 15 minutes or until noodles are tender, stirring occasionally. Discard bay leaves.

- Crumble ground beef into a stockpot over medium-high heat; cook and stir until beef is crumbly, evenly browned, and no longer pink, 7 to 10 minutes. Drain and discard any excess grease.
- Stir carrots, celery, and onion into the ground beef; cook and stir until vegetables are soft, about 5 minutes. Add potatoes, tomato sauce, crushed whole tomatoes, undrained peas, corn, and green beans to the pot; season with black pepper. Stir mixture until evenly mixed. Add thyme and bay leaf to the pot. Pour 1/4 cup water over the mixture if needed to moisten mixture, replenishing as needed while cooking.
- Bring soup to a simmer, place a cover on the pot, and cook, stirring regularly, until potatoes are tender, about 1 hour.
