1 can (7 ounces) whole green chiles
1-1/2 cups shredded Colby-Monterey Jack cheese
3/4 pound ground beef
1/4 cup chopped onion
1 cup whole milk
4 large eggs
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Split chiles and remove seeds; dry on paper towels. Arrange chiles on the bottom of a greased 2-qt. baking dish. Top with cheese. In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Spoon over the cheese. , In a bowl, beat milk, eggs, flour, salt and pepper until smooth; pour over beef mixture. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 45-50 minutes. Let stand 5 minutes before serving.

1 green pepper, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano
1/8 teaspoon garlic powder
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
2 cans (4 ounces each) chopped green chiles
4 large eggs, beaten
1 cup half-and-half cream
1 tablespoon all-purpose flour
1 can (8 ounces) tomato sauce
Additional shredded cheddar cheese, optional

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. Add the green pepper, salt, pepper, oregano and garlic powder. Cook until green pepper is tender. Combine cheddar and Monterey Jack cheeses; set aside. , In a 2-1/2-qt. baking dish, layer half each of meat mixture, chiles and cheese; repeat with remaining meat mixture, chiles and cheese. Meanwhile, in a bowl, combine the egg, cream and flour; pour over cheese layer. , Bake at 350° for 35 minutes. Remove from oven; cover with tomato sauce. Sprinkle with additional cheese if desired. 4 large poblano peppers, (roasted, seeded)
1 lb ground beef
1/2 medium onion, (chopped)
2 cloves garlic, (minced)
1 tsp cumin
1 tsp pepper
1/2 tsp crushed red peppers
1 1/2 cups Monterey Jack cheese, (shredded)
1 1/2 cup sharp cheddar cheese, (shredded)
1 cups Pepper Jack cheese, (shredded)
1 1/2 cups half & half
1/3 cup all-purpose flour
5 eggs

Steps:

  • Preheat oven to 450° and line a baking sheet with foil and spray with a non stick spray.
  • Wash and dry peppers and place poblano peppers on baking sheet. Roast until peppers are charred and skin are blacken and bubbly, making sure to turn a few times. Approximately 20-25 minutes.
  • Once peppers have finished roasting, remove from oven and carefully place in a glass bowl. Cover with plastic wrap and let cool for about 15 minutes. When cool enough to handle, remove skins, slice in half lengthwise and rinse to remove seeds. Pat dry.
  • In a large frying pan, brown ground beef, onions and garlic. Add crushed red peppers, pepper and cumin. Once ground beef is thoroughly cooked, drain grease and return to pan.
  • In a 2 1/2 quart baking dish, spray with a non stick spray. Place a layer of peppers in the bottom, then 3/4 cup of Monterey Jack cheese, 1/2 of the ground beef mixture, 1/2 cup Pepper Jack cheese, and 1/2 cup of sharp cheddar cheese. Repeat layers ending with sharp cheddar cheese.
  • In a small mixing bowl, whisk half & half, eggs and flour together. Pour on top of pepper mixture.
  • Bake uncovered at 350° for 30-35 minutes. Add remiaining 1/2 cup of cheddar cheese on top and pop back in the oven for 15 more minutes or so.
  • Once cheese has browned a bit, remove from oven and enjoy with your favorite side dishes like refried beans, rice, etc.

1 pound ground beef
2 teaspoons taco seasoning
4 poblano chilies (broiled with charred skin peeled off and seeded or 8 ounces whole or chopped green chilies)
1 cup heavy cream
6 ounce tomato paste
1 packet cilantro-tomato seasoning SAZON (optional)
6 eggs (large)
2 cups pepper jack cheese (shredded)
1 cup Cheddar cheese or Monterrey Jack (shredded)

Steps:

  • Brown ground beef sprinkled with a pinch of salt and pepper, and drain off any excess fat. Stir in taco seasoning.
  • Broil fresh poblano chilies just until skin is charred. Place in a paper bag or covered bowl to steam for about 10 minutes. Carefully peel away blackened skin. Split open and remove seeds. OR, use canned whole green chilies and split lengthwise so you can open them up flat. You can also use chopped green chilies.
  • Whisk together heavy cream, tomato paste, Sazon seasoning, and eggs in a medium bowl.
  • In a 9-inch square dish or pan, layer half the ground beef, then half the green chilis, then 1 cup of pepper jack cheese.
  • Make a second layer using the remaining beef, chilies, and 1 cup of pepper jack cheese.
  • Pour cream mixture over the layers. Sprinkle Cheddar cheese on top.
  • Bake at 350 degrees F for 35-40 minutes or until pie is set and a knife comes out clean.
  • Allow to set for at least 5 minutes before serving.

6 large poblano peppers, halved and seeded
1 ½ pounds ground beef, or to taste
1 tablespoon chili powder
2 cloves garlic, minced

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place poblano peppers with cut sides down onto the prepared baking sheet.
  • Cook under the preheated broiler until poblano pepper skins have blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 10 minutes.
  • Heat a large skillet over medium-high heat. Add beef, chili powder, garlic, cumin, oregano, cayenne pepper, paprika, chipotle pepper, salt, and black pepper. Cook and stir until beef is no longer pink, about 4 minutes. Add onion; cook until slightly softened, about 2 minutes. Steps:

  • Preheat the oven to 350 degrees. Prepare a 9x13 baking dish with nonstick cooking spray.
  • Pour the chiles into the baking dish and create an even layer.
  • In a large mixing bowl, mix together the cream cheese, eggs, heavy cream, and seasonings until the eggs and cream cheese are well blended. Stir in the ground beef and 2 cups of the fiesta blend cheese.

27 ounces green chilies (1 can, whole chilies, preferrably Hatch brand)
1½ pounds ground beef
1 onion (finely chopped)
1 pound grated cheese (monterey jack or white cheddar (or pick your favorite))
12 corn tortillas
16 ounces refried beans
4 eggs (beaten well)
¼ cup flour
½ cup evaporated milk (small can)
2 teaspoons hot sauce
¼ teaspoon paprika
¼ teaspoon onion powder
1 teaspoon salt

Steps:

  • Prepare a 9 x 13 inch pan by spraying it with cooking spray, and set aside.
  • In a large bowl, mix eggs, flour, evaporated milk, hot sauce, paprika, salt, and onion powder together, whisk until combined. Set aside.
  • In a large skillet, brown ground beef over medium heat, with onions. Cook until onions are soft and meat is browned. About 5-7 minutes.
  • Add refried beans to the pan with the ground beef, and mix meat and refried beans together until full incorporated.
  • Cut tortillas in 1 inch wide strips. Place ½ the tortillas to form a layer of the strips into the bottom of a greased 9x13 inch baking pan.
  • Layer ½ the green chilies over the strips evenly.
  • Layer ½ the cheese, then add a second layer of tortillas, then another layer of green chilies.

1 lb ground sirloin
1/2 c chopped onion
3/4 c red bell pepper
1 tsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1 tsp cumin
1/4 tsp allspice
2 can(s) chopped green chile, 4 oz each
1 1/2 c shredded sharp cheddar cheese, and a little more for the top of the casserole
1 dash(es) milk
1/2 c sour cream
1/4 c all-purpose flour
4 eggs, beaten
dash(es) Tabasco
toppings of sour cream, black sliced olives and chopped green onions

Steps:

  • 1. In a medium-sized skillet, add the olive oil and saute the onion and bell pepper with and a pinch of salt until onion is translucent.
  • 2. Then add the ground beef and season with salt and pepper, cumin, allspice, garlic powder, and cook until just browned (cooked through). It is going in the oven so don't overcook the beef.
  • 3. Set your skillet at an angle and allow all the fat to drain away from the beef mixture. Soak up the grease with a paper towel and discard.
  • 4. In a 9 x 13 x 1 1/2 inch baking dish add one can of the chiles. Spread evenly over bottom of the dish.
  • 5. Sprinkle with the sharp cheese on top of the chiles.
  • 6. Then add the drained ground beef mixture, spreading evenly.
  • 7. Add the second can of chiles over the meat.
  • 8. In a small mixing bowl add the milk, sour cream, flour, salt, pepper, beaten eggs, and a dash of Tabasco. Whisk well until smooth.
  • 9. Pour this mixture evenly over the dish.
  • 10. Bake at 350 degrees for 45 to 50 minutes until it is set.
  • 11. Add some cheese to the top about ten minutes before the dish is done. If the dish is not brown enough when cooking time ends, turn the oven on broil, watch carefully so it doesn't burn, only takes about five minutes or so.
  • 12. Cut into squares to serve and top with sour cream black olives and chopped green onions. Enjoy!

4 large poblano peppers
2 large jalapeno peppers
1 Tablespoon olive oil
1 pound ground beef
1/2 large onion (chopped)
2 ears of fresh corn (kernels removed)
1 teaspoon ground cumin
kosher salt & freshly ground black pepper
2 eggs
1 10 ounce can evaporated milk
2 Tablespoons flour
1 10 ounce can enchilada sauce
3 cups mexican-blend shredded cheese

Steps:

  • Preheat broiler. Place poblano and jalapeno peppers on a baking sheet and broil until very blackened on all sides. Place in a large resealable plastic bag (or bowl covered tightly with plastic wrap) and seal well. When cool enough to handle, remove blackened skin, stems and seeds from peppers. Set aside.
  • Change oven from broil setting to 350F.
  • Preheat skillet over medium heat. Add onions and saute for two minutes. Add ground beef and cook until fully browned. Drain off fat, add cumin and saute for one additional minute. Dice the jalapenos and stir them in along with the corn.
  • Whisk eggs together in a medium bowl. Add flour and whisk well. Add milk and whisk just until combined.
  • Grease a 13×9 baking dish (or an 11×7, just increase cooking time slightly) and add beef mixture. Pour egg mixture over beef then top with roasted poblano peppers, pressing peppers down into egg mixture. Bake for 25 minutes.
  • Remove casserole from oven and pour enchilada sauce over the top. Top with shredded cheese and continue cooking for another 20 minutes or until bubbling hot and cheese is fully melted and beginning to brown.
  • Remove from oven and allow to sit for 10 minutes before serving.
