Steps:
- Prepare your campfire for cooking over hot coals.
- Prep vegetables as described: garlic, onions, potatoes, carrots and celery.
- Prep beef and bacon as described.
- In 12-inch camp Dutch oven, cook and stir bacon over medium-high heat until bacon is browned and crisp. Scrape up brown bits from bottom of pan.
- Season beef with salt and pepper and add to Dutch oven, stir until beef is seared.
- Reduce heat to medium, add garlic and onions, cook till softened.
- Add remaining ingredients including the tomato paste, beef broth, rosemary, parsley, thyme, potatoes, carrots and celery, stirring to combine.
- Bring to simmer over medium heat.
- Cover and continue simmering over low heat, stirring occasionally until meat and vegetables are tender, approximately 1 - 2 hours. Camp Cooking Tip: We like our stew meat to be extremely tender so I give it as much time in the pot as possible. I always plan for 2 hours of simmering time unless we have a super busy camping day and I just don't have that luxury. No matter what, don't increase the campfire temperature to the boiling point because that will just make the meat tough.
- Remove lid and continue to simmer until your Campfire Stew reaches your desired thickness. Camp Cooking Tip: The longer it cooks with the lid removed, the thicker the stew becomes. If you want a soup-like stew you will be ready to serve shortly after the meat and veggies are tender. But if you want a thick beef stew in a rich sauce (which is how our family likes it), you should plan on about 20 more minutes to finish cooking to that consistency.

CAMPFIRE HOBO DINNER
In the sixties I was a Camp Fire Girl and this is a recipe we learned to make and cook over a campfire. We made ours with a pork chop, potatoes, carrots and onion. I've tried to revise it so you can use any of your families favorite vegetables and meat. You could make these before you leave home and put them in a waterproof container in your ice chest. List of meats that work good: chicken tenders, smoked sausage slices, ground beef patties, ground turkey patties, thin boneless pork chops. List of vegetables that work good: carrots, green beans, corn, mixed vegetables, etc. (Vegetables can be fresh, frozen or canned). Be creative!

- Spray 18-inch square of aluminum foil with cooking spray.
- Place 1/4 of the meat in center of foil.
- Place 1/4 of the vegetables on top of meat.
- Season with butter, salt, garlic powder and pepper to taste.
- Fold top and sides of foil several times to seal food.
- THREE WAYS TO COOK: Always place seam side up when cooking. You may want to double wrap if cooking on a campfire or grill.
- •CAMPFIRE: Place on hot coals near the edge of your campfire and allow to cook 25-30 minutes, or until meat is done.
- •GRILL: Place on medium/hot grill for 40 minutes; rotate 1/2 way through cook time.
- •OVEN: Preheat oven to 350°F Place on cookie sheet or cooking stone; bake for 30 to 45 minutes, or until meat is done.
- OPEN CAREFULLY!
GROUND BEEF "HOBO" STEW
A throwback to my Girl Scout days, this Hobo Stew is made with ground beef, a mixture of vegetables, canned tomatoes and V-8 juice.

Steps:
- In the bottom of a Dutch oven or other heavy pot, heat the oil over medium high heat.
- Add the onion, peppers and celery; cook and stir until softened, about 4 minutes.
- Add the garlic and ground beef, cook and stir until meat is browned and cooked through. Drain off excess fat.
- Sprinkle meat with flour; cook and stir for 3 minutes.
- Add the beef stock, V-8 juice and diced tomatoes. Stir in the potatoes, carrots, corn and green beans. Add Worcestershire, hot sauce and seasonings to taste.
- Stir, cover and simmer over medium to medium low (low bubble) for 1-1/2 to 2 hours, or until veggies are tender, stirring occasionally. Taste and adjust seasonings as needed.
- Hobo stew may be served as is, or spooned over rice or mashed potatoes. Serve with hot cornbread, biscuits or rolls.

- Place bacon in a Dutch oven or large pot; cook and stir over medium-high heat until evenly browned, about 10 minutes. Stir onions and garlic into bacon and cook until onions are translucent, 5 to 10 minutes. Add beef; cook and stir until beef is thoroughly browned, 5 to 10 minutes.
- Pour enough beer over beef mixture to almost fill the Dutch oven; add Worcestershire sauce, bay leaves, salt, and pepper.
