KAFTA KABOB (GROUND BEEF KABOBS)

This a classic Moroccan dish combining lean beef and fresh herbs served with creamy yogurt sauce. Make this kafta recipe for a quick, flavorful grilled meal.

1 1/2 lbs ground beef ((See Note 1))
1 tsp red pepper flakes
1 tsp ground fennel seed
1 tsp ground cumin
1/2 tsp kosher salt
1/2 cup breadcrumbs
1 medium white onion (quartered)
4 garlic cloves
1 cup fresh flat-leaf parsley leaves
1 cup fresh cilantro leaves (plus more for serving)
1/2 cup fresh mint leaves
½ cup plain Greek yogurt
1 lemon ((½ grated lemon zest plus 2 tablespoons juice))
2 tbsp mint leaves minced
1 tbsp tahini
1 tbsp water
¼ tsp salt
¼ tsp black pepper
Moroccan couscous
Tabouli Salad
Rice
Warm Pita
1 lemon (cut into wedges for serving)

Steps:

  • Place the ground beef (and or lamb mix), red pepper flakes, salt, ground fennel, cumin and breadcrumbs in a mixing bowl. Set aside.
  • In a food processor place the onion, garlic, parsley, cilantro, mint and process until very finely chopped, scraping down sides of bowl.
  • Place in a fine mesh sieve and allow to drain excess liquid. Press with fingers or with back of spoon to extract.
  • Transfer mixture to bowl with the ground meats and mix by hands until evenly combined. Chill mixture at least 1 hour.
  • Make the Tahini Yogurt Sauce: Zest half of the lemon and then juice it. You need 2 tablespoons of lemon juice.
  • In a bowl whisk together the yogurt, lemon zest and juice, mint, tahini, water, salt and pepper. Set aside.
  • Prepare grill at 450°F. Clean and lightly oil grill grates.

This is my comfort food. Quick dish and so tasty. Can't decide what my favorite is. The potatoes, the tomatoes, the onion, or beef! Old Middle Eastern dish my mom makes when she wants something quick. Tahini sauce is to taste. If you like it lemony, add more lemon juice. Or if you like tahini, add more tahini. Serve with white rice.

1 pound ground beef
2 onions, or more to taste, chopped small
¾ cup chopped fresh parsley
1 ½ teaspoons ground allspice
1 ½ teaspoons salt, divided
1 ½ teaspoons ground black pepper, divided
4 potatoes, sliced
3 tomatoes, sliced
1 ½ cups water, divided
¾ cup tahini
⅔ cup lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground beef, onions, and parsley together in a large bowl. Mix allspice, 1 teaspoon salt, and 1 teaspoon pepper together in a bowl; add to beef mixture and mix. Spread the meat mixture into a casserole dish in an even layer, but not all the way to the edges.
  • Arrange potato slices atop the beef mixture; season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Arrange tomato slices in a layer atop the potatoes; season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Pour 1/2 cup water around and over the layers of beef, potatoes, and tomatoes.
  • Bake in preheated oven for 30 minutes.
  • Stir tahini and lemon juice together in a bowl until smooth. Slowly stream remaining 1 cup water into the tahini mixture until fully incorporated and smooth; pour over and around the layers of beef, potatoes, and tomatoes.
  • Continue baking until the beef is no longer pink in the center and the potatoes are tender, about 30 minutes more.

  • Slice all your vegetables for your sandwich or platter (Tomatoes, small Lebanese pickles, pickled turnips)
  • While the beef is cooking, prepare your Tahini sauce. Crush 1 large or 2 small cloves of garlic with a ½ tsp of salt. Add the Tahini, freshly squeezed lemon juice and water. Whisk until fully combined. Tahini paste has a very strange texture when you first begin to whisk it. You will notice it starts to get thicker and clumpy but, just keep whisking, and it will get silky and smooth.
