GRILLED SALMON WITH STRAWBERRY SALSA
Grilled Salmon with Strawberry Salsa is the only salmon salad recipe you'll need all summer long!

- Add all of the ingredients for the vinaigrette to a blender and blend until smooth. Transfer to a jar or sealable container and refrigerate until ready to use.
- Stir together the ingredients for the salsa in a bowl. Refrigerate until ready to use.
- Add the ingrediens for the salad to a large serving bowl and toss in desired amount of strawberry vinaigrette. Refrigerate until the salmon is ready.
- Place the salmon on a plate or in a casserole dish and drizzle with olive oil. Use your hands to spread the oil over the flesh so that the whole surface is coated. Stir together all of the spices (or use your favorite spice blend) and sprinkle them over the fish.
- Scrape any food particles off of your grill and spray (or brush) it with oil - this ensures the fish will not stick to the grill. Preheat the grill to medium-high (about 400 to 450 degrees F), keeping the grill covered.
- Place the salmon fillet on the grill skin-side down and cover the grill, leaving the fish untouched for 5 to 6 minutes. Carefully flip and cook on the other side about 2 minutes, or until grill marks appear. Note: Salmon fillets that are one inch thick or less will take about 8 minutes total on the grill. Thicker fillets will require 10 to 12 minutes. You can cook the salmon for less time if you want the center of the fish to be rare).
- Transfer to a cutting board and cut smaller fillets to serve.
- Serve arugula salad with salmon and top with strawberry salsa.

GRILLED SALMON WITH STRAWBERRY SALSA
Its Strawberry season!!! My friend served this last weekend and everyone raved about it, said the flavors were wonderful. My hubby decided we should make this for company this weekend, and I thought I'd share my neighbor's recipe with my friends at Zaar. (I have not personally prepared this dish yet). Prep time does not include 1 hour chilling time. Cook time does not include the time to prepare the charcoal grill.

Steps:
- ***Salsa***.
- Mix together cucumbers, green onion, yellow pepper, cilanto and vinegar.
- Cover and chill at least 1 hour.
- Just before serving add strawberries.
- ***Sauce***.
- In small sauce pan over low heat, melt butter with garlic.
- Stir in honey, soy sauce and lemon juice.
- Cook 2 minutes, then set aside.
- ***Grill***.
- Prepare charcoal grill.
- When coals are ready, oil a fish grilling rack.
- Brush sauce on salmon pieces and place on well-oiled rack.
- Place rack over coals (about 4 inches from heat).
- Grill salmon about 4-5 minutes on each side.
- Brush fish with sauce after turning, and again when done.
- Place grilled fish on warm platter and top with salsa.

- Mix together in a bowl, the strawberries, green pepper, onions, and parsley.
- Add salad dressing, hot sauce, salt and pepper; stir until well blended.
- Cover and refrigerated for 2 hours.

GRILLED SALMON WITH A PINEAPPLE, MANGO AND STRAWBERRY SALSA
Fresh Salmon is just the best. I go fishing in Alaska once a year and bring home a fair amount. Testing different peoples recipes is great. This one is from EMERIL. I keep some of his Essence on hand at all times. The fruit salsa is so refreshing and a great summer time addition to the fish. I have not tried it on other fish but I am sure it would be great.

- Preheat a grill to medium. I also grilled mine on a cedar plank.
- Brush both sides of the salmon with the olive oil. Season the salmon on both sides with the Essence(2 teaspoons), salt and pepper. Place the fish on the grill, skin side down and cook for about 3 minutes then turn the fish 45 degrees and cook for an additional 3 minutes. Turn the fish over and cook for an additional 2 minutes, or until cooked through to the desired degree of doneness.
- Remove the fish from the grill and serve with the fruit salsa spooned over the fish. Serve immediately.
- For the Salsa:.
- In a medium non-reactive bowl, combine all of the ingredients and stir to blend. Cover with plastic wrap and allow the salsa to macerate for 20 to 30 minutes before serving.
