ORANGE CHILI ROASTED TURKEY



Orange Chili Roasted Turkey image

A great new flavor for roasting turkeys. Using an injector will make the turkey super moist. The amounts given here are for an 18 pound turkey.

1 whole turkey
1 cup margarine
3 teaspoons chili powder
2 teaspoons garlic powder
2 1/2 cups orange juice (fresh is best)
kosher salt
coarsely ground black pepper

Steps:

  • Remove giblets and neck from turkey, reserve for gravy.
  • Rinse turkey with cold running water and drain well.
  • Blot dry with paper towels inside and out.
  • Preheat oven to 325° degrees.
  • Reduce orange juice down to 1 cup.
  • Melt margarine with chili powder and garlic powder.
  • Mix in reduced orange juice.
  • Cool slightly.
  • Place turkey, breast side up, on a rack in a large shallow (about 2 1/2" deep) roasting pan.
  • Use an injector to inject the mixture into the turkey, especially in the meaty parts of the breast and thighs (see photo).
  • Sprinkle inside and out with salt and pepper.
  • Insert an oven safe meat thermometer into the thickest part of the thigh, being careful the pointed end of the thermometer does not touch the bone.
  • Roast turkey in a pre-heated, 325° F oven.
  • Loosely cover with aluminum foil to prevent over browning, remove foil during last hour and a half of cooking time.
  • Continue to roast until thermometer registers 180 degrees F in the thigh, or 170 degrees F in the breast.
  • Remove turkey from the oven and allow it to rest for 15-20 minutes before carving.

Excellent dish for Thanksgiving. Smoking the Turkey gives it a wonderful flavor and frees up the oven for other dishes. Serves 10 with plenty of leftovers. Serve with Recipe #77817 and mashed potatoes.

1 (12 -14 lb) whole turkey, giblets removed, rinsed and patted dry
12 wood chunks (orange or hickory)
2 tablespoons kosher salt
2 oranges, scrubbed, additional oranges may be used for garnish
2 cups orange juice
1 bunch fresh sage
3 heads garlic, cut crosswise in half
1 (6 ounce) package garlic & herb spreadable cheese

Steps:

  • At least 1 hour before cooking, soak wood chunks in enough water to cover.
  • Preheat coals.
  • Rub the turkey cavity with salt.
  • Cut oranges into 2-inch chunks.
  • Place the cut oranges, sage and garlic in the cavity.
  • Loosen the breast skin and spread the cheese spread underneath.
  • Tuck the wings under the back and tie legs together.
  • Rub the turkey with oil, juice from an orange, chopped sage, salt and pepper.
  • In a smoker, arrange preheated coals, half of the drained wood chunks and the water pan according to the manufacturer's directions.
  • Add water and orange juice to water pan.
  • Cover and smoke for 5 - 6 hours until thermometer registers 180°F when inserted in the breast.
  • Throughout, add more coals, wood chunks, and water/juice as needed.
  • Remove turkey to platter.
  • Cover with foil to keep warm.
  • Rest at least 5 minutes prior to carving.
  • Reserve any drippings for Orange Turkey Gravy with Sage.

1 -1 1/2 lb turkey london broil
1/4 cup reduced-sugar orange marmalade (I used home made)
1/8 cup cranberry juice
1/8 cup Italian dressing
1/8 cola (soft drink beverage)
1/4 cup water
1 teaspoon soy sauce
1/8-1/4 teaspoon garlic powder
1/8-1/4 teaspoon onion powder
1/8 teaspoon black pepper

Steps:

  • Mix all marinade ingredients in a plastic sealable bag or bowl with tight fitting lid.
  • Blend well.
  • Place london broil in bag.
  • Coat well with marinade.
  • Place in fridge 1/2hr-1hr.
  • Grill over med- low heat till desired doneness.
  • About 45 minutes.
  • Let rest 5 minutes.
  • Slice& serve.
