⅓ cup extra-virgin olive oil
1 teaspoon sea salt
2 cloves garlic, minced
1 tablespoon chopped fresh rosemary
½ teaspoon ground black pepper
6 small zucchini, sliced lengthwise into 1/4-inch thick strips
3 tablespoons balsamic vinegar

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Whisk olive oil, sea salt, garlic, rosemary, and black pepper together in a bowl; brush evenly onto zucchini strips.
  • Cook on preheated grill until brown, 5 to 7 minutes per side; transfer to a serving platter. Drizzle balsamic vinegar over zucchini to serve.

¼ cup Italian-style salad dressing

Steps:

  • Slice zucchini into 1/4 inch slices. Toss in a bowl with Italian dressing.
  • Place on a hot grill and grill about 4 to 5 minutes or until nice grill marks appear and the zucchini is slightly limp. Serve and enjoy.

Grilled Zucchini With Fresh Mozzarella image

Use as an appetizer or side dish for your Italian food. It is amazingly easy to put together. Drizzle with balsamic vinegar for another great taste.

3 zucchini, cut lengthwise into 1/4 inch slices (about 1 pound)
2 tablespoons olive oil
salt, to taste
fresh ground black pepper, to taste
1/4 teaspoon white wine vinegar
1 garlic clove, minced
1 tablespoon chopped flat leaf parsley
1/2 lb salted fresh mozzarella cheese, cut into thick slices

Steps:

  • Light the grill or heat the broiler.
  • In a large glass or stainless-steel bowl, toss the zucchini with 1 tablespoon of the oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper.
  • Grill or broil the zucchini, turning once, until tender and golden, about 5 minutes per side.
  • Put the zucchini back in the bowl.
  • Toss the zucchini with 1/2 Tbs of the oil, 1/8 tsp salt, the vinegar, garlic, and parsley.
  • Let cool.
  • Put the mozzarella slices on a serving plate, fanning them out to form a circle.
  • Drizzle them with the remaining 1/2 Tbs oil and sprinkle them with a pinch of pepper.
  • Fold the zucchini slices in half and tuck them between the pieces of cheese.

1 1/2 cups pitted green olives, such as Spanish olives (6 ounces)
3 garlic cloves, minced
1 teaspoon finely grated lemon zest
1 cup extra-virgin olive oil
Salt and freshly ground pepper
8 hero rolls, split
2 tablespoons red wine vinegar
1/4 teaspoon dried oregano
4 medium zucchini (about 1/2 pound each), sliced 1/4 inch thick
3/4 pound fresh mozzarella, thinly sliced
2 large tomatoes, cored and thinly sliced
32 small basil leaves

Steps:

  • 1. In a food processor, pulse the olives with the garlic and lemon zest until the olives are finely chopped. Add 1/4 cup of the olive oil and season with salt and pepper. Spread the olivada on the cut sides of the rolls. 2. In a small bowl, whisk the vinegar with the oregano and 1/2 cup of the olive oil. Season the dressing with salt and pepper. 3. Preheat a grill pan. In a large bowl, toss the zucchini with the remaining 1/4 cup of olive oil and season with salt and pepper. Grill the zucchini slices over high heat for about 5 minutes, turning once, until tender and lightly charred. 4. Mound the zucchini onto the rolls and drizzle with a little of the dressing. Top with the mozzarella, tomatoes and basil and drizzle with more of the dressing. Close the subs and serve right away. Make ahead: The grilled zucchini can be refrigerated overnight. Bring to room temperature before assembling the subs.
