WINE-MARINATED COUNTRY-STYLE RIBS



Wine-Marinated Country-Style Ribs image

These are a delicious way to grill ribs. Be very careful while grilling ribs for at least the first 1/2 hour otherwise they will burn from the drippings falling into grill (unless you put a drip pan underneath). These do require a long marinading time.

2 tablespoons oil
1 teaspoon dried oregano leaves
2 cloves garlic, minced
1/2 cup dry red wine
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
3 lbs country-style pork ribs, cut into serving pieces (I use the big beef ribs)

Steps:

  • Heat oil over medium heat.
  • Cook oregano and garlic 30 seconds.
  • Remove from heat and stir in wine, sugar, salt, and pepper.
  • Place ribs in a glass dish.
  • Pour wine mixture over top; turn to coat.
  • Cover and refrigerate at least 4 hours.
  • Turn ribs occasionally to coat with marinade.
  • Prepare grill.
  • May want to place a drip pan underneath.
  • Remove ribs from marinade reserving marinade.
  • Grill ribs on grill over medium heat for approximately 1 hour, turning occasionally and brushing with marinade, until ribs are cooked.
  • Discard remaining marinade.

½ cup Burgundy wine
¼ cup barbeque sauce, plus more for basting
¼ cup cider vinegar
¼ cup hot pepper sauce
2 tablespoons Worcestershire sauce
2 tablespoons prepared yellow mustard
4 pounds country-style pork ribs
1 tablespoon onion powder
1 tablespoon garlic powder

Steps:

  • Stir wine, barbeque sauce, cider vinegar, hot pepper sauce, Worcestershire sauce, and mustard together in bowl until well mixed. Place ribs in a baking dish; pour Burgundy wine mixture over ribs and coat completely.
  • Mix onion powder and garlic powder together in a bowl. Dust ribs with powder mixture; let marinate 2 hours, turning once.
  • Preheat grill for medium-low heat and lightly oil the grate.
  • Grill ribs, covered, over indirect heat on the preheated grill for 45 minutes, turning once. Baste with barbeque sauce and grill until meat is tender, about 15 minutes, turning and basting frequently.

4 pounds bone-in country-style pork ribs
1 cup water
1 cup ketchup
1/4 cup packed brown sugar
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1 tablespoon celery seed
1 teaspoon chili powder
1/8 teaspoon hot pepper sauce
Dash pepper

Steps:

  • Preheat oven to 325°. Place ribs in a shallow roasting pan. Bake, covered, 1-1/2 to 2 hours or until meat is tender. Meanwhile, in a small saucepan, combine the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes, stirring occasionally. Pour 1 cup sauce over ribs; turn to coat. Let stand 15 minutes., Drain and discard sauce from ribs. Grill ribs, uncovered, over medium heat 10-12 minutes or until browned, basting with 1 cup sauce and turning occasionally. Serve with remaining sauce.

1/2 cup red wine vinegar
1/4 cup ketchup
3 tablespoons soy sauce
2 tablespoons honey
1 teaspoon minced garlic
1/2 teaspoon dried thyme
1/2 teaspoon Tabasco sauce
1/4 teaspoon fresh ground black pepper
1/4 teaspoon chili powder
8 country-style pork ribs, about 4 pounds, trimmed of excess fat
kosher salt
fresh ground black pepper
hickory chips, soaked in water for at least 30 minutes

Steps:

  • Make the sauce: in a medium saucepan, combine all the sauce ingredients; bring to a boil.
  • Decrease heat and simmer for 15 minutes, stirring occasionally.
  • Remove from heat and let cool to room temperature.
  • Pour some of the sauce into a small bowl to use for basting the ribs.
  • Let the ribs stand at room temperature for 20-30 minutes before grilling.
  • Season ribs with salt and pepper; follow your grill's manufacturer's instructions for using wood chips.
  • Grill over Indirect Medium heat for 1-1 ½ hours, until the meat is tender, turning once halfway through grilling time.
  • During the last 20 minutes of grilling time, baste with the small bowl of sauce.
  • Serve warm with the remaining sauce on the side.

2 tablespoons vegetable oil
1 tablespoon chopped fresh rosemary leaves or 1 teaspoon dried rosemary leaves, crumbled
1 garlic clove, finely chopped
1/2 cup dry red wine or grape juice
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
3 pounds pork country-style ribs, cut into serving pieces

Steps:

  • Heat oil in 1 1/2-quart saucepan over medium heat. Cook, rosemary and garlic in oil, stirring frequently, until garlic is golden; remove from heat. Stir in wine, sugar, salt and pepper.
  • Place pork in shallow glass or plastic dish. Pour wine mixture over pork; turn to coat with marinade. Cover and refrigerate, turning pork occasionally, at least 4 hours but no longer than 24 hours.
  • Place drip pan directly under grilling area, and arrange coals around firebox. Heat coals or gas grill for direct heat.
  • Remove pork from marinade; reserve marinade. Cover and grill pork over drip pan and 4 to 5 inches from medium heat 1 hour to 1 hour 10 minutes, turning occasionally and brushing with marinade, until pork is tender and slightly pink when cut near bone. Discard any remaining marinade.
