This is another great recipe from earthnvine.com. When, I saw this recipe I just had to try it. I love turkey sandwiches and this was so delicious with the fig orange jam that they sell. My husband really loved it too. Let me know what you think.

Number Of Ingredients 7

2 slice thick sliced sourdough bread or any bread of your choice
3-4 slice generous slices of cooked turkey breast
2 slice mahon cheese (our grocery store didn't have this type, so i used a white sharp cheddar
2 Tbsp earth & vine provisions fig orange jam
1 small amount of argula leaves
3-4 slice onion
1 - 2 tsp olive oil

Steps:

  • 1. Heat skillet with a little olive oil and grill onion slices until browned and tender.
  • 2. Layer one side of bread with sliced cheese, layer with turkey, arugula, and grilled onions.
  • 3. Spread other side of bread with Fig Orange Jam. Brush outside of bread slices with olive oil and grill in a pre-heated skillet until golden brown and crusty starting with chees side down.

4 slices white bread
1 tablespoon mayonnaise
1/3 pound thinly sliced deli turkey
4 slices tomato
2 slices provolone cheese (1 ounce each)
1 tablespoon butter, softened

Steps:

  • Spread two slices of bread with mayonnaise. Layer with turkey, tomato and cheese; top with remaining bread. Spread outsides of sandwiches with butter. On a hot griddle, grill sandwiches until golden brown, 3-4 minutes on each side.

1 crusty rustic roll
2 tablespoons top-quality fig jam, preferably Mitica (see Note)
2 teaspoons fragrant extra-virgin olive oil
Flaky sea salt
3 ounces (85 g) artisan American Cheddar, preferably Prairie Breeze (see Note), cut into 3 thick slices

Steps:

  • 1. Heat a panini press according to the manufacturer's instructions. Alternatively, heat a ridged grill pan or large skillet over medium heat.
  • 2. Using a serrated knife, cut the roll in half horizontally. Spread each cut side of the roll with 1 tablespoon of the fig jam, drizzle the jam with 1 teaspoon of the oil, and season it with the salt. Arrange the Cheddar pieces closely on the bottom roll half, being sure that the cheese does not hang over the sides of the roll. Cover it with the remaining roll half, jam-side down.
  • 3. Place the sandwich in the panini press and cook it until the roll is toasted and golden brown and the cheese is desirably melty, about 4 minutes, depending on the press. If using a ridged grill pan or skillet, place the sandwich in the pan and top it with a cast-iron skillet or heavy saucepan. Cook until the underside is toasted, about 2 minutes. Flip the sandwich over, top it with the cast-iron skillet again, and cook until the other side is toasted and the cheese is melty, about 2 minutes more.
  • 4. Cut the sandwich in half and serve it hot.

This recipe might sound strange... who ever thought of using mayo on a grilled cheese instead of butter?? Try it, you'll see. It makes a great crunch on the bread. And you can use fat free mayo... I don't think fat free butter exists. I haven't found a cheese I don't like with this sanwich. You can also switch up the meat.

2 slices provolone cheese
2 slices turkey, buffalo style from the deli
2 teaspoons fat-free mayonnaise

Steps:

  • Heat a non stick pan over medium high heat.
  • spread one side of each slice of bread with a tsp of mayo, coating it evenly.
  • place one slice in the pan, mayo side down.
  • arrange meat an cheese on the bread with the meat between the slices of cheese.
  • place the other slice of bread on top with mayo side up.
  • cover and cook to desired toasting level.
  • Flip and repeat.
