Grilled Tuna With Herbs and Olives image

Here, grilled tuna is smothered with a mixture of flavorful herbs, made more potent by the addition of chopped olives and a little raw garlic. A mix of parsley, basil, chives, chervil and marjoram, for example, would be splendid, as would one of cilantro, mint and basil. (I would rule out only thyme, tarragon and rosemary, unless you use them in minuscule quantities.) If you don't have a grill, many readers have baked it at 425 and been happy with the results.

1 1/2 to 2 pounds tuna, about 1 inch thick, 2 or 4 steaks
Extra-virgin olive oil as needed
Salt and pepper
1/4 cup pitted oil-cured olives, finely chopped
About 1 cup mixed tender fresh herbs
1 teaspoon minced garlic, optional
Lemon wedges

Steps:

  • Start a charcoal or gas grill; fire should be medium-high and rack about 4 inches from heat source.
  • When fire is ready, rub tuna lightly with olive oil, then sprinkle it with salt and pepper. Put it on grill and grill about 3 to 4 minutes a side for medium-rare, more or less according to your desired degree of doneness.
  • Meanwhile, combine olives, herbs, garlic if you are using it and just enough oil to moisten and bind the mixture, no more than a tablespoon.
  • When tuna is done, spread a portion of herb mixture on 1 side of each steak and serve with lemon wedges.

2 tablespoons fresh lemon juice
2 tablespoons oriental sesame oil
2 tablespoons soy sauce
1 teaspoon ground black pepper
6 5-ounceahi tuna steaks (about 1 inch to 1 1/4 inches thick)
Nonstick vegetable oil spray
Ginger, Miso and Cilantro Sauce
Fresh cilantro sprigs

Steps:

  • Whisk lemon juice, sesame oil, soy sauce and pepper in small bowl to blend. Place tuna steaks in 13 x 9 x 2-inch glass baking dish. Pour marinade over tuna steaks; turn to coat. Cover and refrigerate 3 hours, turning occasionally.
  • Remove tuna from marinade. Spray large nonstick skillet with vegetable oil spray. Heat skillet over high heat. Add 3 tuna steaks to skillet and cook about 3 minutes per side for medium-rare. Transfer tuna steaks to plate. Tent with aluminum foil to keep warm. Repeat with remaining 3 tuna steaks.
  • Transfer tuna steaks to plates. Spoon Ginger, Miso and Cilantro Sauce atop tuna. Garnish with cilantro and serve.

4 tablespoons extra-virgin olive oil
4 teaspoons finely chopped garlic
12 ounces Napa cabbage (half of a three-pound head), cut into strips
12 ounces baby bok choy, cut into 1/2-inch wedges
6 ounces mizuna
12 ounces tatsoi
1 tablespoon rice-wine vinegar
1 tablespoon tamari or soy sauce
1 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Heat a large skillet over medium-high heat, and add 1 tablespoon olive oil. Add 1 teaspoon garlic, and cook until fragrant.
  • Add cabbage; stir until it is just wilted, 2 to 3 minutes. Transfer to a large bowl. Repeat process with 1 tablespoon olive oil, 1 teaspoon garlic, and bok choy; cook 1 to 2 minutes. Add to cabbage mixture. Repeat process with 1 tablespoon olive oil, 1 teaspoon garlic, and mizuna; cook 1 to 2 minutes. Add to cabbage mixture. Repeat process with remaining tablespoon olive oil, teaspoon garlic, and the tatsoi; cook 1 to 2 minutes. Add to the cabbage mixture.
  • Combine vinegar, tamari, salt, and pepper. Pour over greens; toss, and serve.

2 medium eggplants (1 1/2 pounds total), stems trimmed, cut crosswise into 1-inch rounds (about 12 slices)
Kosher salt
2 tablespoons reduced-sodium soy sauce or tamari
2 tablespoons fresh lime juice
5 tablespoons unseasoned rice vinegar
1 tablespoon plus 1 teaspoon sugar
1 clove garlic, minced
1/4 cup extra-virgin olive oil
1 carrot, peeled and julienned
2 radishes, julienned
1 mini cucumber, thinly sliced
1 loaf soft French bread
1/4 cup mayonnaise
1 jalapeño, thinly sliced

Steps:

  • Sprinkle eggplant slices generously with salt; arrange on a wire rack set over a baking sheet. Let stand 30 minutes, then pat dry with paper towels. In a bowl, stir together soy sauce, lime juice, 1 tablespoon vinegar, 1 tablespoon sugar, and garlic.
  • Preheat oven to 425°F. Arrange eggplant in a single layer on a parchment-lined baking sheet. Brush both sides of eggplant with oil. Roast, flipping halfway, until golden brown and very tender, about 30 minutes. Brush both sides of eggplant with soy mixture; continue roasting until caramelized, 7 to 10 minutes more.
  • Meanwhile, toss together carrot, radishes, cucumber, 1/2 teaspoon salt, and remaining 4 tablespoons vinegar and 1 teaspoon sugar.
  • Slice bread into quarters and halve lengthwise. Spread mayonnaise on cut sides and top with roasted eggplant, pickled vegetables, jalapeño, and cilantro. Serve immediately.
