Grilled Tuna Salad Sandwiches with Lemon-Habanero Mayonnaise and Watercress image

3 cups fresh lemon juice
1/2 to 1 whole habanero chile, chopped (only use the whole if you like it hot)
1 teaspoon grated lemon zest
1 cup best-quality mayonnaise
Salt and freshly ground pepper
1 small red onion, finely diced
1 large stalk celery, finely diced
2 tablespoons chopped fresh flat-leaf parsley
4 (8-ounce) tuna steaks
Olive oil
8 slices hearty bread (Italian, French, ciabatta, or country white)
Watercress

Steps:

  • Heat grill to high. Place lemon juice in a small saucepan and bring to boil on the grates of the grill. Cook until reduced to 1/2 cup. Remove from the grill and let cool slightly. Leave grill on high heat.
  • Place lemon syrup, habanero, lemon zest, and mayonnaise in a blender and blend until smooth. Season with salt and pepper, to taste, and transfer to a large bowl. Add the onions, celery, and parsley and set aside.
  • Brush tuna with oil and season with salt and pepper on both sides. Grill for 3 minutes per side or until slightly charred and cooked to medium doneness. Remove from the grill and let rest 5 minutes before cutting into small dice or flaking with a fork. Add the flaked tuna to the mayonnaise mixture and gently mix until combined. Divide the tuna salad among 4 slices of bread. Top the salad with a few sprigs of watercress and top with the remaining bread.

One 1 1/2 pound fresh tuna steak
2 teaspoons ground fennel
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Canola oil, for brushing
3 tablespoons fresh lemon juice, plus 1 to 2 tablespoons for serving
3 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1 teaspoon finely chopped fresh rosemary
2 anchovy fillets, patted dry and finely chopped
1 clove garlic, smashed to a paste
Kosher salt and freshly ground black pepper

1/2 cup extra virgin Tuscan olive oil
Honey, if needed
One 15-ounce can cannellini beans, drained, rinsed well and drained again
1 cup Gaeta olives, pitted
1/2 bulb fresh fennel, thinly sliced
1/2 red onion, thinly sliced
4 ounces mixed baby greens
1/4 cup chopped fresh basil
1/4 cup chopped fresh-flat leaf parsley

Steps:

  • For the tuna: Remove the tuna from the refrigerator 20 minutes before grilling. Heat a charcoal or gas grill to high for direct grilling. Mix together the fennel, salt and pepper in a small bowl.
  • Brush the tuna with canola oil on both sides and sprinkle with the spice mixture. Grill until charred on both sides and cooked to medium doneness, about 5 minutes per side. Remove and let rest for 5 minutes. Cut into medium dice.
  • For the salad dressing: Whisk together the lemon juice, vinegar, mustard, rosemary, anchovies and garlic in a small bowl and season with salt and pepper. Slowly pour in the olive oil while whisking, until it all emulsifies. For a sweeter and thicker texture, whisk in a teaspoon of honey at a time, until desired taste and consistency is reached.
  • For the salad: Combine the beans, olives, fennel, onion and tuna in a large bowl. Add the dressing and gently toss to coat. Add the greens, basil and parsley , season with salt and pepper, and toss again.
  • For serving: Mound the salad on a platter and sprinkle the remaining lemon juice over the top.

4 medium waxy potatoes, like Yellow Finn, Yukon gold, or Bintje
1 1/2 pounds fresh tuna steak, cut at least 1 inch thick
2 red or yellow bell peppers (or 1 of each), roasted, skinned and seeded
1/2 cup extra-virgin olive oil, or more as needed
Kosher salt and freshly ground pepper to taste
3 shallots, peeled and finely chopped
2 tablespoons finely chopped Italian parsley
1/4 cup sherry vinegar or white-wine vinegar, or more as needed
4 large handfuls of mixed greens, like basil, arugula, radicchio, bibb lettuce, chicory, dandelion and endive
2 tomatoes, peeled, cut into 6 wedges and seeded

Steps:

  • Put the potatoes in a 4-quart pot and cover with cold water. Simmer gently until tender, about 25 minutes, being careful not to overcook them.
  • Meanwhile, prepare the grill, adjusting the rack 2 inches above the coals. Trim the tuna, discarding the skin and any dark purple flesh. Refrigerate.
  • Cut the roasted peppers lengthwise into 1/4-inch-wide strips. Put in a bowl and toss with 1 tablespoon of the olive oil. Season with salt and pepper and set aside.
  • Drain the potatoes and peel while still hot. Slice into 1/4-inch rounds and arrange 1/4 of them in a pie plate or casserole. Sprinkle with 1/4 of the shallots, 1/4 of the parsley and salt and pepper. Repeat the layers until all the potatoes are used. Whisk 2 teaspoons of the vinegar with 1 tablespoon of the oil and pour over the top.
  • Lightly rub the tuna steaks with 1 tablespoon of the olive oil and season with salt and pepper. Grill until charred on the outside and rare in the center, about 2 minutes per side.
  • Place the greens in a large salad bowl and top with the potato mixture, the peppers and the tomatoes. Slice the tuna into 1/4-inch strips and arrange on top of the salad. Just before serving, make a vinaigrette from the remaining vinegar and oil and pour over the salad. Season with salt and pepper. Taste and toss with more vinegar or oil if needed. Serve immediately.

2 1/2 tablespoons minced shallot
2 teaspoons Dijon mustard
1 large garlic clove, minced and mashed to a paste with 1/2 teaspoon salt
Rounded 1/2 teaspoon anchovy paste
1 cup extra-virgin olive oil
1 1/2 teaspoons minced fresh thyme
1 1/2 tablespoons finely chopped fresh basil
12 ounces green beans (preferably haricots verts), trimmed
1 1/2 pounds small (1- to 2-inch) potatoes, preferably Yukon Gold
1 1/2 pounds (1-inch-thick) tuna steaks
Vegetable oil, for brushing
1/4 cup drained bottled capers (1 1/2 ounces)
12 ounces Boston lettuce (2 heads), leaves separated and large ones torn into pieces
1 pint cherry or grape tomatoes
2/3 cup Niçoise or other small brine-cured black olives
4 hard-cooked large eggs, quartered
3 tablespoons finely chopped fresh parsley and/or basil
Special equipment: Gas or charcoal grill (see Note)

Steps:

  • Whisk together the vinegar, shallot, mustard, garlic paste, and anchovy paste in a small bowl until combined well, then add the oil in a slow stream, whisking until emulsified. Whisk in the thyme, basil, and salt and pepper to taste.
  • Cook the beans in a 4- to 6-quart pot of boiling salted water, uncovered, until crisp-tender, 3 to 4 minutes, then immediately transfer with a slotted spoon to a bowl of ice and cold water to stop the cooking. Add the potatoes to the boiling water and simmer, uncovered, until tender, 15 to 20 minutes, then drain in a colander. Halve the potatoes while still warm (peel, if desired) and toss with 2 tablespoons dressing in a bowl, then cool.
  • Prepare grill for cooking. If using a charcoal grill, open the vents on the bottom of the grill, then light the charcoal. The charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat to high, covered, 10 minutes, then reduce the heat to moderately high.
  • Brush the tuna with oil and season with salt and pepper, then grill on lightly oiled rack, uncovered, turning over once, until browned on outside but still pink in center, 6 to 8 minutes total. Let the tuna stand 3 minutes, then break into large (3-inch) pieces. Transfer the tuna to a large platter and drizzle with 2 to 3 tablespoons dressing and top with capers.
  • Transfer the potatoes to the platter with the tuna, reserving the bowl. Drain the beans and pat dry. Toss the beans in the bowl with 1 tablespoon dressing and salt and pepper to taste, then transfer to the platter. Toss the lettuce in the bowl with 2 tablespoons dressing and salt and pepper to taste, then transfer to the platter. Toss the tomatoes in the bowl with 1 tablespoon dressing and salt and pepper to taste, then transfer to the platter.
  • Arrange the olives and eggs on the platter and sprinkle the salad with parsley and/or basil. Serve the salad with the remaining dressing on the side.
  • The TUNA can also be cooked in a hot, lightly oiled ridged grill pan over moderately high heat.
