4 (8-ounce) red snapper fillets
2 limes, juiced
1 teaspoon minced fresh ginger
1 teaspoon coarse ground black pepper
3 tablespoons extra-virgin olive oil
1 1/4 cups tropical fruit salsa

Steps:

  • Preheat a grill.
  • Place the red snapper fillets in a shallow dish and reserve. In a small bowl, combine lime juice, ginger, pepper, and olive oil. Pour the mixture over the fish and let sit for 15 minutes.
  • Grill the fish over medium heat until the flesh is cooked through and opaque, about 4 minutes per side, depending on the size of the fish. Top with tropical fruit salsa and serve.

You?ll definitely feel like you're on a tropical vacation with the flavours in this dish! Vary the fruit to your liking - try star fruit or melon. You can also chop the fruit into cubes and thread on skewers and then grill.

1 can coconut milk, full fat (14-ounce can/398 ml)
2 tsp brown sugar, packed (10 ml)
1 to 2 tbsp. dark rum (15 to 30 ml)
1 tsp vanilla (5 ml)
pinch of freshly ground nutmeg
Slivers of coconut, toasted (optional)
4 baby bananas or 2 regular bananas, peeled
2 mangoes, peeled and cut in large spears, preferably Altaufo mangoes
½ pineapple, peeled and cored and cut in spears
lime wedges, for garnish, to sprinkle of over fruit

Steps:

  • Add coconut milk and brown sugar to a medium saucepan over medium high heat. Bring to a boil. Reduce heat to medium and let hard simmer, stirring occasionally until reduces by half, about 15 minutes. Sprinkle with nutmeg and stir in rum and vanilla. Let sit until cooled to room temperature and then refrigerate until thoroughly chilled, about 2 hours. Mixture will thicken as it chills. Sprinkle with toasted coconut if desired and serve with Grilled Tropical Fruit.
  • Preheat grill to high. Clean the grill well with brush. Oil the grill with a little vegetable oil so fruit doesn't stick.
  • Reduce heat to medium. Grill bananas, mangoes and pineapples until nice grill marks and fruit softens slightly, about 3 minutes per side. If using regular bananas, cut them in smaller pieces. Serve warm with Coconut Sauce and lime wedges.

7 pounds chicken pieces, excluding wings, washed and dried
1/2 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice
1/4 cup freshly squeezed lemon juice
1/2 cup dark rum
6 garlic cloves, chopped
3 tablespoons brown sugar
3 Chipotle chiles, canned or rehydrated in vinegar
3 red peppers, seeded and chopped
1 medium red onion, thinly sliced
3 tablespoons cider vinegar
1/4 cup olive oil
2 large mangos, peeled, pitted and cut into 1-inch pieces
3 ripe bananas, peeled and cut on the bias into thick slices
1 pineapple, peeled and sliced
Juice of 1 lime
Vegetable oil, for the grill
Salt and freshly ground pepper
2 tablespoons butter, melted

Steps:

  • Place the chicken pieces in a baking dish. In a blender, combine the citrus juices, rum, garlic, sugar, chipotles, red peppers, onion, vinegar and olive oil. Pulse gently. Pour marinade over the chicken pieces, cover and refrigerate for 2 hours or overnight. Turn the chicken once. Remove the chicken from the refrigerator 30 minutes before cooking.
  • Preheat the grill.
  • Place the mango pieces, banana slices and pineapple on a sheet of foil and brush with lime juice. Set aside.
  • When the grill is ready, brush with vegetable oil. Season the chicken with salt and pepper. Place the chicken pieces, cavity sides down, on the grill and cook for 10 minutes. Turn and baste with the marinade and continue cooking for another 10 minutes. Baste and turn chicken every 5 minutes for an additional 15 to 20 minutes, or until chicken is tender.
  • Lightly brush the fruits with melted butter. Set the foil on the grill during the last 10 minutes of cooking time. Perforate the foil to allow the heat to reach the fruit, then fold the foil into a packet and cook until the fruit is slightly limp and lightly charred.
  • Place the chicken on a platter and arrange the fruit along the edges.

4 garlic cloves, minced
4 tablespoons olive oil
1/2 lime, juice of, plus
1 lime, juice of
1 1/2 tablespoons soy sauce
1 green onion, choopped
1/2 mango, chopped
1/4 teaspoon salt
1/2 red peppers or 1/2 green pepper, chopped
1/4 red onion, chopped
1 -2 teaspoon fresh parsley, minced

Steps:

  • Rub fish with garlic and leave garlic on fish. In pan or large ziploc, combine olive oil, juice of 1/2 lime, soy sauce, and green onion. Add fish and marinate about 1 hour.
  • In medium bowl, combine juice of 1 lime, mango, onion, salt, sweet pepper, and parsley. Chill while fish is marinating.
  • Grill marlin over medium heat about 7-8 minutes per side. Top with fruit salsa and serve.
