2 - 3 libras of chicken wing drummettes and flats
2 tablespoons olive oil
1/2 cup Crystal's Hot Sauce
2 - 3 tablespoons Ted Readers Bone Dust BBQ rub (recipe found here) or your favorite rub
1/2 cup ranch dressing
1/2 cup mayonnaise
1/4 cup whipping cream
juice of 1 lemon
1 teaspoon fresh sage, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon tablespoons fresh thyme, chopped
1 tablespoon Worcestershire sauce
2 tablespoons Tabasco® sauce
4 cloves garlic, minced
1/4 cup Parmesan cheese, grated
salt to taste
fresh ground black pepper to taste

Steps:

  • Toss the wings together with the olive oil, Crystal's and bone dust in a large sealable container and allow to marinate in the fridge for at least 4 hours but better yet, over night.
  • Remove from fridge 30 minutes prior to grilling and rest at room temperature.
  • Preheat grill to medium heat. Grill the wings until done. this may take about an hour depending on your grill, wind conditions, etc. Just be careful of flare ups! The wings are fatty and can go u pin flames in no time.
  • Whisk the reaming ingredients together in a large bowl. Add the sauce to the wings in increments and toss just until coated.
  • You don't want to drench them in this sauce, just a nice coat.

Yield Serves 4 to 6 as an appetizer

Number Of Ingredients 7

3 large garlic cloves, chopped
8 tablespoons lemon juice (about 2 lemons)
2 tablespoons virgin olive oil
5 to 15 dashes of Tabasco sauce, depending on your taste
3 tablespoons chopped fresh herbs (whatever you've got: basil, parsley, sage, thyme, oregano, or rosemary)
20 chicken wings (you can usually get a pack of wings at the market very cheap)
Salt and freshly cracked black pepper to taste

Steps:

  • 1. In a large serving bowl, mix together all the ingredients except the chicken wings.
  • 2. You will notice that the wing has two joints. Cut through both joints, separating the wing into three pieces. The wing tip is not usable here, so either toss it out or freeze it and throw it into your next stock, a purpose for which it is excellent.
  • 3. Salt and pepper the wing pieces to taste and whip them onto a medium-hot grill. Turn them occasionally until golden brown, about 5 minutes. To see if they're done, take a big one off the grill and bite into it.
  • 4. When the wings are cooked through, add them to the bowl with the dressing and mix to thoroughly cover. Set them on a platter, open a cold beer, and enjoy yourself.
