This peach basil grilled cheese is an addictive combo that you won't want to stop eating, made with fresh seasonal produce.

1 Tbsp unsalted butter
2 pieces sourdough bread
1 peach, sliced thinly
2 oz gruyere, sliced
1 oz brie, sliced
2 tsp honey
4 leaves basil, chiffonade

Steps:

  • Butter the two slices of sourdough bread on one side.
  • Heat a medium skillet over medium heat. Once hot, add one slice of bread to the skillet, buttered side down.
  • Drizzle honey on top of the bread.
  • Top with brie slices, then gruyere slices.
  • Arrange peach slices on top of the cheese, then sprinkle with fresh basil. Top with the other slice of bread, buttered side up.
  • Once the bottom slice is golden brown, after approximately 2 to 3 minutes, carefully flip the sandwich.
  • Cook on the other side until toasted and golden brown, and the cheese is melted and gooey.
  • Slice in half, and serve immediately.

3/4 cup soft fresh goat cheese (plain, peppered, or herbed)
4 large plum tomatoes, thinly sliced into rounds
2 cups coarsely chopped pitted mediterranean olives

Steps:

  • Prepare barbecue (medium heat).
  • Cut baguette crosswise in half.
  • Cut each half lengthwise in half to form 4 pieces total.
  • Combine oil, garlic, and herbs in small bowl.
  • Brush all cut sides of bread with half of oil mixture.
  • Grill bread, cut sides down, until lightly toasted, about 1 minute.
  • Remove from grill.
  • Quickly spread cut sides of toast with goat cheese.
  • Top with tomatoes and olives, dividing equally.

2 tablespoons unsalted butter, room temperature
8 slices white bread
12 ounces Gouda or Swiss cheese
1 large ripe tomato, thinly sliced
1 handful fresh basil leaves

Steps:

  • Butter one side of each slice of bread. Arrange 4 slices, buttered side down, on clean work surface. Divide cheese evenly among 4 slices of bread. Arrange tomato slices over cheese, cutting slices in half to fit if necessary. Scatter basil leaves over tomatoes. Top with remaining slices of bread, buttered side up.
  • Place sandwiches on a medium-hot grill, off direct heat. Cook until bread is golden and cheese is beginning to melt, about 4 minutes depending on heat of grill.
  • Turn sandwiches over, and continue grilling until bread is golden and cheese is completely melted. Move to a slightly cooler part of the grill to melt if bread is darkening too much.

1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
1 tablespoon chopped green onion
1/2 cup fresh spinach leaves

Steps:

  • Spread one side of each bread slice with butter, ensuring you reach all the way to the edges. Set aside.
  • Lightly mash the avocado with the salt, garlic powder, and black pepper. In a separate bowl, combine the goat cheese and herbs.
  • For each sandwich, layer 1 bread slice (butter-side down), 1/4 of the goat cheese mixture, 1/2 of the avocado mixture, 1/2 of the spinach, another 1/4 of the goat cheese, then top with the remaining bread slice, butter-side up. Repeat for the second sandwich.
