Steps:
- Spray the grill rack with nonstick spray and prepare the barbecue (medium-high heat). Thread 1 piece of each fruit on each of 6 skewers so that the cut sides line up and lay flat. Sprinkle the sugar over the cut sides of the fruit. Let stand until the sugar dissolves, about 10 minutes.
- Place the fruit skewers on the grill cut side down. Grill the fruit until it is heated through and caramelized, about 5 minutes. Transfer 1 fruit skewer to each plate and serve.
- *Other fruit substitutions can be apricots and peaches.

- Preheat grill for medium heat.
- Place banana, coffee-flavored liqueur, butter, brown sugar, and ground cinnamon on a large section of heavy aluminum foil. Bring up 2 sides of foil to touch and fold down twice to seal. Double fold ends of packet to securely seal.
- Place packet on preheated grill and cook until heated through, about 5 minutes.

GRILLED MIXED FRUIT

- Place a grill pan over medium-high heat.
- In a medium bowl, toss the fruit in the sugar to coat. Grill over medium heat, until a golden crust begins to form on the fruit, about 3 to 4 minutes per side.
- In another medium bowl, mix together the mint, lemon juice, and simple syrup. Arrange the fruit on a serving platter, drizzle the mint syrup over top, and serve.
- In a saucepan, combine water and sugar over medium heat. Bring to a boil, then reduce heat and simmer for 5 minutes, or until the sugar has dissolved. Take pan off heat and cool the syrup before using. Any extra cooled syrup can be refrigerated in an airtight container for up to 2 weeks.
- Yield: 1/2 cup

- Trim ends and cut unpeeled bananas lengthwise; place on oiled grill rack over medium heat. Grill, covered, until peel is dark brown and bananas are softened, 3-4 minutes on each side. Cool slightly., Meanwhile, in a small cast-iron skillet or 9-in. disposable foil pie pan, combine butter, syrup and caramel topping; place on grill rack. Cook, uncovered, over medium heat until heated through, 4-5 minutes, stirring frequently. Remove from heat., Remove peel from bananas; cut each half crosswise. To serve, place ice cream in dessert dishes; top with bananas. Drizzle with sauce; sprinkle with crushed wafers.

FRUIT SALAD - AMBROSIA STYLE
My Mother made this salad for every Thanksgiving and Christmas Dinners. I remember looking forward to this the most, as a kid, as I loved the marshmallows and the fruit. My Mom made a big bowl of this and added shredded coconut to half of it and left the other without for those of us non-coconut lovers. This is so quick and easy yet so tasty and refreshing, especially with a big heavy holiday meal. I also found out that this is a common Hawaiian Luau side dish. Time does not include chilling time.

- Drain all cans of fruit.
- In a large bowl add drained fruit, marshmallows, sour cream and coconut if using. Mix well to combine.
- Refrigerate for at least 6 hours, overnight if possible. This allows the juices to blend with the marshmallows and sour cream.
- One hour before serving, slice bananas and add to rest of the fruit, stir to combine.
- If it seems to dry add a little more sour cream.
- Enjoy!
GRILLED TAHITIAN FRUIT FOSTER

- 1. Cut pineapple and papaya into roughly 1" by 1" strips.
- 2. Remove pit from mango and, leaving the skin on, cut just the fruit in 1" crosshatch pattern then flip inside out. Halve and peel bananas.
- 3. Brush pound cake with butter. Place fruit and pound cake onto a very hot, well oiled grill, starting and ending with the pineapple (pineapple takes the longest to cook)
- 4. Remove fruit when it develops grill marks and pound cake when it has grill marks and is lightly toasted. Place on counter to cool slightly then cut fruit into 1" pieces.
- 5. Melt butter in pan. Using a wooden spoon, add brown sugar and passion fruit syrup and stir together. When the mixture begins to bubble and thicken a bit add the fruit and coat well. Cook until the fruit is slightly softened, watch carefully as this won't take long. Move pan off heat, add the rum and return to the stove to catch a flame from the gas stove or a long lighter. Stand back when ignited and flambe the fruit. Be careful a flame will shoot up above the pan. Let flame die down and the alcohol cook out.
- 6. Place pound cake on a plate. Top with ice cream. Scoop fruit liberally on the top and garnish with toasted coconut.
