- In a small skillet, cook and stir garlic in oil over medium-high heat until tender. Cool., Stir garlic into mayonnaise; spread over bread slices. Layer 4 slices of bread with turkey, ham, cheese, pickles and spinach; close sandwiches., Cook on a panini maker or indoor grill until browned and cheese is melted, 2-3 minutes.

HAM-AND-CHEESE PANINI
This ham-and-cheese panini is a delicious and filling sandwich sure to please the whole family.

- Melt butter in a medium skillet over medium-low heat; add shallots. Cover and cook, stirring occasionally, until softened, about 10 minutes. Add thyme and continue cooking until onions are caramelized, about 5 minutes. Remove from heat and set aside.
- Spread 1 1/2 teaspoons mustard on one side of a slice of bread. Top with a slice of cheese, 2 ounces ham, 1/4 of the shallot mixture, and another slice of cheese. Spread 1 1/2 teaspoons mustard on a second slice of bread and place mustard side down on top of cheese to form a sandwich. Repeat process three times with remaining mustard, bread, cheese, ham, and shallots.
- Brush top and bottom of each sandwich with olive oil. Place in a panini grill and press until bread is crisp and brown, and cheese has melted slightly, 9 to 10 minutes. If using a grill pan, preheat over medium-high heat. Place a heavy pan on top of sandwiches and press down. Cook, turning once, 2 to 3 minutes per side. Cut sandwiches in half and serve immediately.
GRILLED HAM AND SWISS SANDWICH WITH GRILLED ONIONS ON TOAST
This is a favorite I made up while working in my family's restaurant in New Orleans. I got tired of the same ole' stuff on the menu so had fun with making this. I even served it to my favorite customers if they asked real nice!

- First, grill your onions to your liking in a pan with a small amount of oil. Put aside.
- Wash lettuce and have your sandwich fillings ready for assembly.
- On a hot plate, skillet, etc., place one slice of ham down, followed by swiss cheese, then the other slice of ham (if you use the long slices of ham, they will wrap around the cheese quite nicely). The cheese should be as protected from the pan as much as possible. You want to heat on a medium/high heat and flip this after a minute or two so the top side gets a turn down on the pan. But don't cook this too long as it will make the meat tough and the cheese will melt and leak out all over the place. Just heat until meat is slightly brown on top and bottom and the cheese has mostly melted.
- While meat and cheese are cooking, place 2 slices of bread in toaster. When done, add mayo and/or mustard to toast and place ham/cheese on bottom slice of toast. Top with grilled onions, lettuce, tomato, pickle, and sprinkle with salt and pepper. Add top piece of toast, slice sandwich on the diagonal, throw on a plate with some potato chips and get busy (all the while wondering why you didn't go ahead and make that second one while you were at it!) -- back to the kitchen. These things ARE addictive. You've been warned!

- Preheat panini press (alternatively, you can use a grill pan or skillet if you don't have one).
- Spread 1/2 tablespoon of butter on each slice of bread. Flip bread over.
- In a small bowl, mix mayonnaise (2 tablespoons) and dijon mustard (2 tablespoons) together. On the non-buttered side of the bread, spread 1/2 tablespoon of mixture on each slice.
- On four slices of bread, stack the ham, apple slices, and swiss cheese evenly in that order. Flip the remaining slices of bread butter side up on top to complete the four sandwiches.
- Add the sandwiches one or two at a time (depending on how big your panini press is) to the press, pressing down firmly for 5 seconds and leaving it to cook for approximately 3 minutes, or until golden brown on the outside and the cheese is melted on the inside.
- Serve hot off the press!

- To assemble the sandwiches, butter both sides of each bread slice. Lay ham and cheese on one slice and cover with the another slice. Trim the crusts off the sides.
- Heat a saute pan over medium-low heat, then fry the sandwiches until the cheese starts to melt and the sandwiches are golden brown, about 3 minutes on each side. You may need to add more butter to the pan.
- Remove the sandwiches to paper towels to drain, let them cool for 1 minute, then cut into quarters diagonally and serve 3 quarters each per serving.

- Begin by getting your fry pan ready on the counter. Butter one side of the bread with 1/2 tbsp of butter. Place the bread butter side down in the fry pan.
- Take half of the broken up peices of cheese and place them on top of the bread, trying to cover all the available places on the bread.
- Take the ham and twist each peice loosely so it folds in a small mound. Continue to do this with each piece, stacking them next to each other to cover the top of the cheese.
- Take the remaining cheese pieces and top the ham with the cheese.
- Butter the top piece of bread with another 1/2 tbsp of butter and place it, butter side out, on top of the cheese.
- Place the fry pan onto the stove over medium heat/low heat.Take your time grilling the bread as if you brown the bread too quickly, the cheese will not be melted. Keep an eye on the bottom piece and when it's nicely toasted, carefully flip the sandwich to the other side.
- Placing a lid on the fry pan helps with melting the cheese slightly faster.
- When the other side is nicely grilled to golden brown, remove the sandwich onto a plate. Let it rest for a few minutes as the cheese will be LAVA hot!! Cut in half after the wait time is done, and enjoy!
