GRILLED SWEET POTATOES WITH BBQ BAKED BEANS AND CILANTRO CREAM
Veggie lovers delight in these sweet potatoes from Jodi Moreno of What's Cooking Good Looking. Baked using Reynolds Wrap® Aluminum Foil, stuffed with simmering BBQ black beans and finished with a crisp yogurt-based cilantro cream, you won't be able to resist this flavorful dish.

- Preheat the grill to medium heat.
- Wrap the sweet potatoes in Reynolds Wrap® Aluminum Foil individually so they are completely covered. Place them onto the grill, cover and cook for 45 minutes to 1 hour. You want the potatoes to feel very soft inside the foil. When they are done, remove them from the grill and keep them in the foil until ready to assemble and serve.
- Make the beans while the potatoes are baking. Heat oil in a medium-sized pan over medium heat. Add the onions and cook for 7 to 10 minutes until soft and starting to brown. Add the garlic and cook for another 2 minutes. Then add the beans and BBQ sauce. Stir to combine the ingredients, bring the heat to low and continue cooking for another couple of minutes to heat all of the ingredients.
- Make the cilantro cream. Place the yogurt, shallots, salt and lemon juice into a food processor and pulse several times until smooth. Add in the cilantro leaves and pulse a couple of times just until they are chopped and incorporated.
- Assemble the potatoes. Cut a slit down the center lengthwise of the potato and gently pull the sides apart just enough to create a well for the beans. Then add a couple spoonfuls of the BBQ beans and finish with a drizzle of the cilantro cream. Garnish with some roughly chopped cilantro leaves.

I don't really like the traditional sweet potato casserole, but my son loves sweet potatoes, so I try to come up with different ways to cook them. This spring I tried grilling them. These are now a favorite of mine and my sons.

- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Divide the sweet potato cubes in half, and place each half in the center of a rectangle of aluminum foil. Top each portion with about half of the butter. Sprinkle about half of the brown sugar, cumin, and cayenne pepper over each portion. Season with salt and pepper. Fold the corners of the aluminum foil together and seal to form a pouch around each portion.
- Cook on the preheated grill, turning pouches every 10 minutes, until the potatoes are tender and cooked through, 20 to 30 minutes.

- Preheat grill to 450°F or medium low.
- Rinse and scrub potatoes. Pat dry.
- Cut 4 sheets of aluminum foil. Place each potato on a piece of foil and brush with oil and top with sea salt (optional). Wrap and repeat.
- Using tongs, place potatoes on the shelf of the grill or away from direct heat evenly spaced so they are not touching. Close the lid and grill 30 minutes. Rotate with tongs and grill an additional 30 minutes.
- Using tongs, remove aluminum foil and place potatoes over direct heat for 1 minute per side. Rotate and repeat. Use a thermometer to ensure they are done. Internal temperature should reach around 210°F. Remove from heat.

- Gather the ingredients.
- Cut sweet potatoes into 3/4-inch slices.
- Bring 3 quarts of water to a boil. Add salt and potatoes. Boil until potatoes are just starting to soften, about 8 to 10 minutes.
- Combine butter, brown sugar and cinnamon in a small bowl, set aside.
- Brush potatoes on both sides with vegetable oil and also oil the grill grates well. This creates a nice nonstick surface so the potatoes don't get stuck and fall apart.
- Place sweet potato slices on preheated grill over a medium-low heat and cook for about 10 to 15 minutes, turning a few times during cooking process. During the last 5 minutes, begin basting with butter-sugar mixture. Keep an eye on the potatoes as this both butter and sugar can cause flare-ups on the grill. So keep the lid open for this part of the cooking.
- When the sweet potatoes as soft through the middle and browned on the surface they are ready. Remove, brush once more with remaining butter mixture and serve.
