SWEET POTATO CASSEROLE RECIPE

Steps:
- Prepare Big Green Egg or other smoker for indirect cooking at 400⁰.
- Place Sweet Potatoes on Big Green Egg and cook for 1:30 hours or until soft. Skewer should go into the potato with no resistance. Remove the sweet potatoes from the smoker and adjust vents so temperature drops to 350⁰.
- Peel sweet potatoes and place in a large bowl. Add remaining ingredients and stir to combine. Spoon into cast iron skillet.
- In a separate bowl add the pecans, brown sugar, flour, and melted butter. Stir to combine and sprinkle over potato mixture.
- Place iron skillet on smoker and cook for 1 hour or until topping browns. Remove from smoker and serve.
GRILLED UP SWEET POTATO CASSEROLE
I absolutely love sweet potato casserole and can hardly wait until the holidays to begin baking it. This version can be done on the grill in less than 30 minutes! - Peel and cut potatoes into 1/2-in. slices; transfer each potato to individual pieces of heavy-duty foil (12-in. square). Cut butter into thin slices; place between potato slices. Sprinkle with cinnamon, brown sugar and pecans. Fold foil around potatoes, sealing tightly. Grill, covered, over medium heat or broil 4 in. from heat until potatoes are tender, 18-22 minutes, turning occasionally., Remove potatoes from grill; carefully open tops of foil. Sprinkle marshmallows over potatoes (do not seal foil). Return potatoes to grill rack. Grill until marshmallows are softened, 3-4 minutes longer.

I don't really like the traditional sweet potato casserole, but my son loves sweet potatoes, so I try to come up with different ways to cook them. This spring I tried grilling them. These are now a favorite of mine and my sons.

- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Divide the sweet potato cubes in half, and place each half in the center of a rectangle of aluminum foil. Top each portion with about half of the butter. Sprinkle about half of the brown sugar, cumin, and cayenne pepper over each portion. Season with salt and pepper. Fold the corners of the aluminum foil together and seal to form a pouch around each portion.
- Cook on the preheated grill, turning pouches every 10 minutes, until the potatoes are tender and cooked through, 20 to 30 minutes.

- Scrub sweet potatoes thoroughly under cold running water. Cut each potato lengthwise into 8 wedges. Place wedges in a bowl and toss with 2 tablespoons of oil. Combine remaining olive oil, paprika, salt, garlic powder, cinnamon, and cayenne in a separate small bowl.

- Heat grill to 350-375 degrees over indirect heat.
- Combine the brown sugar, cinnamon, salt, cloves, nutmeg and orange juice into a bowl and stir. Combine that mixture with the mashed sweet potatoes and eggs and stir well.
- Pour the sweet potato mixture into an aluminum pan that is sprayed with non stick spray. Sprinkle with the Great Grains Cereal and pecans, if choosing to do so.

This recipe originally came from Quick Cooking. The time it takes to cook can vary a lot depending upon the heat of the fire, the size of the potato, or how you package it up. When we are in a hurry, I have even cut the potato into chunks and divided it up between four pieces of foil. It is super easy, healthy, and goes well with pork chops or Recipe#267975. When we go camping this is often on our menu. Sometimes I have put the honey on before grilling, and I think that is okay, too.

This is a very easy grilling recipe with easy tinfoil cleanup. I tried this on my family this weekend and they loved it. I think it may be a new Thanksgiving classic.

- Slice and split your sweet potatoes and apple between two tinfoil packages (two strips of tinfoil folded together).
- Top each with half the butter and brown sugar and a few dashes of cinnamon (optional).
- Close the tinfoil packages and put on the grill on medium/low heat for approximately 40 minutes, turning half way through.
- Make sure you don't burn, brown sugar doesn't taste good burnt.
