Smoked Mexican Street Corn as a yummy side dish

Steps:
- Brush the corn with olive oil and sprinkle with kosher salt.
- Place the corn on the Traeger set to 350 degrees for 25 minutes, turn it a few times as it cooks.
- While the corn cooks mix together the mayo, sour cream, garlic, chili powder, and a pinch of ground red pepper. Stir until evenly combined.
- When the corn is cooked remove and place on a tray or large plate. Let it cool slightly. Brush the corn with the mayo mixture on all sides, then sprinkle with the crumbled cotija cheese.
- Sprinkle more chili powder and cilantro over top and serve with fresh lime wedges.

- When ready to cook, set the Traeger temperature to 325°F and preheat with the lid closed for 15 minutes.
- Arrange the corn and green onions directly on the grill grates. Close the lid and cook the green onions until lightly charred, about 15 minutes. Remove from grill and set aside. Continue cooking the corn, rotating occasionally, until the husks are blackened and the kernels are tender with some browned and charred spots, 10-20 minutes more.
- Chop the charred green onions, then transfer to a small bowl with the butter, chile powder, and sesame seeds. Mash to combine.
- Let corn cool slightly, then remove the husks and silk. Serve with the sesame-chile butter. Enjoy!

- Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Rewrap corn in husks; secure with kitchen string. Rinse corn under water, moistening husks. Grill corn, covered, over medium heat 20-25 minutes or until tender, turning often., In a small bowl, mix remaining ingredients until blended. Cut string from corn and peel back husks. Spread corn with sour cream mixture.

- When ready to cook, set Traeger temperature to 450°F and preheat, lid closed for 15 minutes.
- Brush corn with oil and place on grill, turning occasionally.
- While corn is on the grill, mix mayonnaise with chile powder, cilantro, lime juice and zest in a bowl. Season with salt.
- After about 10 minutes corn should be cooked through and slightly charred on the outside. Remove from grill.
- Top corn with chile mayonnaise then sprinkle on the Cotija cheese and chopped cilantro. Enjoy!
