TOMATO AND BLUE CHEESE SALSA
Another of my favorites, also out of a newspaper years ago. This is fantastic on steaks cooked on the grill, and as a dressing on baked potatoes. Use your imagination!!! I'm sure this would be just as good with other vegies, and chicken or fish.

Steps:
- Combine all the above ingredients in a medium bowl with a fork until ingredients are evenly coated with olive oil.
- Use to top steak, baked potatoes, whatever!
- Roquefort cheese is also a fine choice for this salsa.
- Cooking time is the time it takes to toast the walnuts in the oven. Very quick to put together.

STEAK WITH BLISTERED TOMATOES AND BLUE CHEESE
A quick dip in a simple marinade spiked with garlic and cayenne makes for grilled skirt steak that's tender and flavorful. While the steak rests, grill cherry tomatoes and toss with blue cheese for a warm side salad.

- In a large bowl whisk the olive oil, garlic, cayenne, salt, and pepper. Add the steak and toss it a few times to make sure it is coated in the marinade. Cover with a kitchen towel and let it marinate for about 20 minutes while you light the grill.
- Bring a grill to medium flame and lightly oil the grate. Grill the steak for about 4 minutes per side, or until it reaches your desired doneness. Remove to a platter and cover with aluminum foil to rest. Place the tomatoes directly on the grill grate and use tongs to gently roll them back and forth for about 1 minute, or until the skins blacken and blister.
- Carefully remove them to a bowl and sprinkle in the blue cheese. The cheese will start to melt a little and make a chunky sauce.
- Divide the steak amongst four plates and serve each piece with a scoop of tomatoes and blue cheese on top.

- 1. Preheat oven to 425 degrees. Place tomatoes onto a large, rimmed baking sheet. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper; drizzle with olive oil, toss to coat.
- 2. Place into the preheated oven and bake until tomatoes are softened approximately 12 - 15 minutes.
- 3. Using a slotted spoon, remove 3/4 of the tomatoes to a mesh strainer and place over a bowl to drain. Set remaining 1/4 of the tomatoes on the side for garnish.
- 4. In a medium bowl, whisk together the vinegar, garlic, lime zest, and lime juice.
- 5. While whisking, stream in the extra virgin olive oil. Add in the bleu cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper, whisk to combine. Add in the drained roasted tomatoes, whisk together; set aside.
- 6. Meanwhile, place a small skillet over medium-low heat. Add in the butter and allow it to melt.
- 7. Add in the Panko and cook until it begins to brown, approximately 3 - 4 minutes, stirring occasionally (be sure to watch carefully as once they brown they can burn quickly).
- 8. Transfer to a paper towel-lined plate. Allow to cool for a few minutes, toss in the minced chives, set aside.
- 9. In a small bowl, mix together the chili powder, paprika, garlic powder, remaining 1 teaspoon salt, and remaining 1/2 teaspoon black pepper.
- 10. Season both sides of the steaks with the seasoning blend.
- 11. Heat a grill pan over medium-high heat. Place the steaks onto the grill pan and cook, turning once, to desired doneness (160 degrees for medium).
- 12. Place cooked steaks onto a large plate, cover with aluminum foil and allow to rest for 5 minutes. Slice steaks into 1/4-inch slices.
- 13. To serve, stagger steak slices onto serving plates. Top with the vinaigrette and the Panko crumbs. To garnish, place the reserved 1/4 of the roasted tomatoes onto plates, top tomatoes, and steak with bleu cheese crumbles and chives.
GRILLED STEAK WITH GARLIC AND HOT PEPPER MARINADE WITH ROASTED TOMATOES WITH CABRALES BLUE CHEESE
Steps:
- For the Marinade:
- Combine all ingredients in a mixing bowl.
- For the steaks:
- Place the steaks in a large shallow baking dish. Pour 1/2 of the marinade over the steaks and turn to coat. Cover and let marinate in the refrigerator at least 4 hours or overnight. Cover the remaining marinade and place in the refrigerator. One hour before cooking the steaks, remove marinade from the refrigerator and allow it to come to room temperature. Heat a grill pan over high heat until smoking or heat up an outdoor grill Remove steaks from the marinade, discard marinade, and season with salt and pepper, to taste. Grill for 4 minutes on each side for medium rare doneness. Use the other 1/2 of the marinade to serve with the steaks.
- For the Roasted Tomatoes:
- Preheat oven to 400 degrees F. Place tomatoes in a baking dish, drizzle with olive oil and season with salt and pepper to taste. Roast until soft, about 15 to 20 minutes. During last 5 minutes of cooking sprinkle the blue cheese over the tomatoes.
