2 ounces salad oil
2 tablespoons lemongrass, minced (lower part of inner stem)
1 1/2 teaspoons fresh grated ginger
1 tablespoons minced garlic
2 tablespoons fresh squeezed lime juice
2 teaspoons patis (fish sauce)
4 tablespoons sweet chili sauce
1 Hawaiian or Thai chile pepper, finely minced
2 tablespoons soy sauce
2 teaspoons sambal (chili paste)
8 ounces flank steak
1 green papaya, skinned, seeded and julienned
1 Maui onion, julienned
1 red bell pepper, seeded and julienned
Hawaiian sea salt
Freshly ground black pepper
Mixed greens, for garnish
10 to 15 fresh mint leaves
1/8 cup fresh cilantro leaves

Steps:

  • For the marinade: Place all dressing ingredients in blender and puree until smooth. Divide in half.
  • For the steak: Marinate the steak covered and refrigerated overnight in half of the marinade/dressing. Remove steak and discard the marinade. Season with salt and pepper. Grill to medium rare and let rest 15 minutes. When slightly cooled, thinly slice across the grain.
  • For the papaya salad: In a mixing bowl, toss the sliced steak, green papaya, onion, red pepper, and remaining dressing. Season with salt and pepper, to taste. Serve on a platter or over mixed greens.

1/2 cup lime juice
1/4 cup fish sauce
4 teaspoons palm sugar
2 Thai chiles, thinly sliced
2 cloves garlic, grated
One 3-ounce package dried shrimp
Kosher salt
4 Chinese long beans, cut into 2-inch pieces
One 1 1/2- to 2-pound green (unripe) papaya, peeled and seeded
1 cup shredded carrots
1/2 cup roasted peanuts, chopped, plus more for garnish
6 cherry tomatoes, quartered
3 scallions, thinly sliced
1/4 cup fresh cilantro leaves, plus more for garnish

Steps:

  • Add the lime juice, fish sauce, palm sugar, chiles and garlic to a small bowl and whisk to combine. Add the dried shrimp and set aside for at least 15 minutes.
  • Meanwhile, bring a medium pot of salted water to a boil and set up a bowl of ice water. Add the long beans to the boiling water and cook until just tender, about 5 minutes. Drain and cool in the ice water. Drain and set aside.
  • Julienne the papaya with a mandoline and put in a large bowl. Add the carrots, peanuts, tomatoes, scallions and long beans and toss to combine.
  • Add the dressing with the shrimp to the salad, then add the cilantro leaves and toss to combine. Transfer to a large serving dish and top with additional peanuts and cilantro leaves.

10 stalks celery (about 1 bunch), cut into 1-inch pieces
4 teaspoons extra-virgin olive oil
Kosher salt and freshly ground pepper
2 tablespoons light mayonnaise
Juice of 2 limes
2 tablespoons honey
1 tablespoon green hot sauce
1 small head iceberg lettuce, shredded
1 bunch watercress, torn (3 to 4 cups)
1 1/4 pounds blade steak, about 3/4 inch thick (4 to 6 steaks)
2 bunches scallions, cut into 2-inch pieces
1 cup grape or cherry tomatoes, halved

Steps:

  • Preheat the oven to 450 degrees F. Toss the celery, 1 teaspoon olive oil, and salt and pepper to taste on a foil-lined rimmed baking sheet; roast until tender, about 20 minutes.
  • Whisk the mayonnaise, 2 teaspoons olive oil, the lime juice, honey, hot sauce and 1 tablespoon water in a large bowl. Add the roasted celery and toss. Add the lettuce and watercress but don't toss.
  • Heat a large grill pan or cast-iron skillet over high heat. Rub the steak with the remaining 1 teaspoon olive oil and season with salt and pepper. When the pan is very hot, add the steak and cook, undisturbed, about 3 to 4 minutes per side for medium rare. Transfer to a cutting board. Add the scallions to the pan and cook until charred, about 2 minutes per side.
  • Slice the steak against the grain, discarding the tough membrane that runs through the center. Add the steak and tomatoes to the bowl with the salad and toss to coat. Divide among plates.

For the steak:
1 1/4 cups extra-virgin olive oil
3 sprigs rosemary
1 12-ounce New York strip steak
Kosher salt and freshly ground black pepper
For the dressing:
1/2 pound blue cheese, crumbled
1/3 cup sour cream
1 tablespoon fresh lemon juice
1 tablespoon red wine vinegar
Pinch of cayenne pepper
2 teaspoons minced fresh chives
For the salad:
2 peaches, halved and pitted
4 cups mesclun greens (about 3 ounces)
2 tablespoons chopped fresh chives
3 tablespoons thinly sliced fresh basil
1 tablespoon chopped fresh tarragon
Freshly ground black pepper

Steps:

  • Prepare the steak: Heat the olive oil and rosemary in a small saucepan over low heat, 8 minutes. Remove from the heat and let cool to room temperature. Pat the steak dry, season with salt and black pepper and place in a shallow glass pan. Pour 1 cup of the infused oil over the steak; cover and refrigerate 3 hours, turning the steak occasionally. Remove from the refrigerator about 45 minutes before cooking.
  • Heat a grill pan over medium-high heat until very hot. Season the steak with salt and black pepper and grill 5 minutes per side for medium rare. Remove to a cutting board and let rest 10 minutes before slicing.
  • Make the dressing: Whisk half of the blue cheese with the sour cream, lemon juice, vinegar and cayenne in a bowl until smooth. Fold in the chives; cover and chill until ready to serve.
  • Make the salad: Brush the cut side of the peaches with the remaining 1/4 cup infused oil. Heat the grill pan over medium-high heat. Grill the peaches, cut-side down, 3 minutes. Flip and grill the other side 1 minute to soften. Remove and slice into wedges. Toss the greens and herbs in a large bowl and divide among plates. Top with the steak and peaches; drizzle with the dressing and top with the remaining blue cheese. Season with black pepper.

300g sirloin beef steaks, fat removed
vegetable oil , for greasing
100g bag baby spinach leaves
2 ripe but firm papayas , peeled, deseeded and sliced
1 small pack coriander , leaves picked
1 small pack mint , leaves picked
½ large cucumber , sliced
4 spring onions , thinly sliced
1 red chilli , thinly sliced
3 tbsp crispy onion
2 tbsp tamarind purée
1 tsp grated garlic
juice 2 limes
3 tbsp soft brown sugar
1 ½ tbsp fish sauce
large pinch chilli flakes

Steps:

  • Season the steak well. Heat a lightly oiled griddle or frying pan. Sear the steaks for 2 mins each side, then remove and leave to rest for 5 mins. When rested, thinly slice.
  • Mix the dressing ingredients together with 1 tbsp water until the sugar is dissolved. Arrange the spinach, beef, papaya, herbs, cucumber, spring onions and chilli on a platter. Pour the dressing over half the salad and sprinkle with the crispy onions. Serve the remaining dressing on the side or save for making another salad.

This is a halibut, mango, and papaya salad recipe that is fresh and light, especially for the spring season which will soon be upon us. Doesn't take a lot of prep time with exception of marinating the fish. Can be done ahead and kept in the fridge for at least 2 days. Salad dressing as you will see is very easy and is so delicious and light. Add fresh garlic bread or breadsticks and a glass of wine (Chardonnay, Sauvignon Blanc). The combination of the citrus dressing and the fruit and dill proves to be a delicious marriage of fruit and herbs. Enjoy.

Steps:

  • Pat halibut dry and season with salt and pepper. Combine oil, orange juice, lemon juice, honey, Italian seasoning, garlic, and red pepper flakes in a glass or ceramic bowl for marinade with a whisk to make sure it is well blended. Add halibut and let marinate for 45 minutes to 1 hour.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove fish from marinade and shake off excess. Discard the remaining marinade.
  • Cook halibut on the preheated grill horizontally for 5 to 7 minutes. Flip and cook vertically for perfect grill marks until it springs back with a mild resistance and flakes easily with a fork, 5 to 7 minutes more; be careful not to overcook. Remove from grill and sprinkle with fresh dill.
  • Combine salad greens, mushrooms, mango, papaya, onion, bacon, and feta cheese in a bowl.
  • Whisk salad dressing, orange juice, and honey for dressing together in another bowl. Pour over salad and toss to coat. Serve with grilled halibut.

Flank steak is not one of the most tender cuts of meat. I've tossed enough of the away! The papaya itself not only lends it's flavor to the meat, it actually has an enzyme that tenderizes the meat. Give it a try. You will need to marinate the flank over-night, so make your plans a little ahead for this reason. This is great with a crisp romaine and cherry tomato salad with chunky bleu cheese, and a great wine. If you leave the meat on the cutting board,ve sure to thoroughly wash the board. Another option, which I do, is to have a hard plastic cutting board, which can be sanitized. The marinating time varies, as you may not want to choose the overnight method. I have not included the overnight method.

1 papaya, very ripe
1/2 cup soy sauce
3 large garlic cloves, minced
2 lbs flank steaks

Steps:

  • In a large bowl, combine the papayas, soy sauce, and garlic.
  • Using the back of a fork, smash the papaya until it forms a chunky paste.
  • Remove 1/2 cup of the marinade and refrigerate.
  • Add the flank steak and a generous amount of salt and pepper to the remaining marinade and refrigerate overnight, turning once.
  • Heat a grill or grill pan to medium-high. Remove any excess marinade from the steak and discard. Grill each side of the steak for 5-7 minutes for medium rare. Allow to sit for 10 minutes on a cutting board, then slice against the grain into 1/2-inch slices.
  • Serve with the reserved marinade.
