2 tablespoons gingerroot, Freshly Grated
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/2 teaspoon cayenne pepper
2 tablespoons olive oil
1 tablespoon lime juice
salt
4 tuna fillets (about 2.5cm/1-inch thick) or 4 tuna steaks (about 2.5cm/1-inch thick)

Steps:

  • Preheat the grill to hot.
  • Line the grill pan with aluminium foil if desired.
  • Place the cumin, coriander, cayenne, oil, lime, ginger and salt in a shallow dish and mix well.
  • Add the fish and turn to coat on all sides. Grill for 3-5 minutes on each side or to your liking.
  • Serve immediately.

Grilled Spiced Tuna Steaks with Red Peppers and Jicama image

2 tablespoons Yucatán Dry Spice Rub
4 (6-ounce) tuna steaks, each about 3/4-inch thick
1 tablespoon olive oil
1/2 teaspoon salt, or to taste

Steps:

  • 1. Prepare the spice rub and measure out 2 tablespoons. (The remaining spice rub keeps indefinitely in a covered container stored with other spices.) Brush the tuna on both sides with the oil. Season lightly with salt. Put the tuna steaks on a large plate. Season each steak evenly with the spice rub and press to rub it in. Let the tuna stand for about 10 minutes. 2. Meanwhile, prepare the peppers and jicama. Keep warm. Heat a stovetop grill pan over medium-high heat until hot. Put the fish on the pan and cook about 3 minutes per side, or until it is lightly browned on the outside and still pink inside. (If you prefer tuna to be opaque inside, cook the first side 4 minutes, and the second side 3 minutes, or until barely opaque inside.) Transfer the fish to serving plates. 1/4 cup vegetable oil
6 garlic cloves, minced
3 tablespoons soy sauce
1/4 teaspoon dry mustard
3 tablespoons fresh lemon juice
1/2 teaspoon fresh ground pepper
2 lbs tuna steaks
1 lemon, cut in wedges

Steps:

  • In medium bowl, combine oil, garlic, soy sauce, mustard, lemon juice and pepper.
  • Rinse fish under cold water and pat dry.
  • Place fish in a shallow bowl and cover with marinade; refrigerate for 1 hour.
  • Place tuna on non-stick grilling rack and grill 5-7 minutes on each side or until opaque; apply marinade while cooking to keep moist.
  • Serve with lemon wedges.

6 large cloves of garlic unpeeled
3 jalapeño chiles, stemmed
1/4 cup fresh lime juice
1 teaspoon salt, divided
4 tuna steaks (5 ounces each, about 3/4 inch thick)
2 cups diced heirloom tomatoes
1/4 cup diced red onion
1 tablespoon fresh cilantro, finely chopped
1 tablespoon fresh mint, finely chopped
1 tablespoon fresh basil, finely chopped
Vegetable oil cooking spray

Steps:

  • Roast garlic and jalapeños in a small, dry skillet over medium heat, turning occasionally, until soft (both will blacken in spots), 5 to 10 minutes for jalapeños, 15 minutes for garlic. Cool, then peel garlic. Puree garlic, jalapeños, lime juice and 1/2 teaspoon salt in a blender until smooth. Scoop 1/2 cup puree into a 13" x 9" glass baking dish. Place fish on puree, flipping once to coat both sides. Cover dish; refrigerate 10 to 20 minutes to marinate. Transfer remaining puree into another bowl for salsa. Mix in tomatoes. Rinse onion in a small strainer under cold water; drain. Add to tomato mixture. Stir in cilantro, mint and basil. Season with remaining 1/2 teaspoon salt. Coat grill with cooking spray; heat to medium-high (about 375°F). Remove fish from marinade; place on grill. Cover grill and cook 3 minutes. Uncover, flip fish, cover again and cook until fish is done, about 2 minutes more for medium-rare. Transfer fish to plates; spoon salsa on top.

1 teaspoon salt
2 teaspoons cayenne pepper
1/3 cup lemon juice
3 large cloves garlic, minced
3 large shallots, minced
2 teaspoons ground cumin
1 bunch cilantro, leaves only, finely chopped
6 (6 ounce) pieces of tuna fillet
Vegetable oil, for greasing the grill
Lemon wedges, for garnish

Steps:

  • In a small mixing bowl, combine the olive oil, salt, cayenne pepper, lemon juice, garlic, shallots, cumin, and about 3/4 of the cilantro (reserve the remaining cilantro for garnish).
  • Place the tuna fillet in a large glass or ceramic dish. Rub your fingers over the fish to check for and remove any remaining bones, and pour the marinade over the tuna. Make sure the fish are evenly coated on both sides and marinate for 1 hour in the refrigerator, turning once.
  • Brush a grill or broiler pan with vegetable oil and heat it to high heat. Grill the fillets for 4 to 5 minutes on each side, until done to your liking. Garnish with the remaining cilantro and the lemon wedges.

3 teaspoons curry powder
2 teaspoons freshly ground black pepper
1/4 teaspoon anise seeds
4 tablespoons sesame seeds
4 tuna steaks, about 1 1/2 pounds total, each about 1 inch thick
3 tablespoons vegetable oil
Mixed green salad (see recipe)

Steps:

  • Preheat a charcoal grill or the oven broiler.
  • In a small bowl blend the salt, curry powder, black pepper, and anise and sesame seeds.
  • Sprinkle the tuna steaks on both sides with the mixture. Coat evenly and press down so that the mixture adheres well to the steaks. Brush both sides with the oil. Cover with plastic and let stand for 15 minutes at room temperature.
  • If the tuna is to be grilled make sure the grill is very clean and hot before cooking. Place the steaks on the hot grill. For rare, cook for about 1 1/2 minutes, turn them, and cook for 1 1/2 minutes more. For greater doneness, cook a little longer on each side. If oven-broiled, arrange the steaks on a rack and place under the broiler about 4 inches from the heat. Broil for 2 minutes with the door partly open. Turn the steaks and continue broiling, leaving the door open for rare. Remove, and let stand before serving.
  • To serve, place the mixed green salad in the center of the plate. Cut the tuna into thin slices on the bias and place the slices around the salad.

two 6-ounce tuna steaks, each 1 inch thick
1 1/2 tablespoons olive oil plus additional oil for brushing
1 tablespoon fennel seeds
1 1/2 teaspoons black peppercorns
1 medium fennel bulb (sometimes called anise, about 1 pound), trimmed and cut into 1/4-inch crosswise slices
1 medium red bell pepper, quartered and cut into 1/4-inch slices
2 large garlic cloves, sliced thin
1/2 cup water
1 tablespoon fresh lemon juice

Steps:

  • Lightly brush tuna steaks with some additional oil and season with salt. Crush fennel seeds and peppercorns coarse in a mortar with a pestle and press onto both sides of tuna steaks. Let tuna steaks stand on a plate 10 minutes.
  • In a heavy non-stick skillet sauté fennel bulb in 1 1/2 tablespoons oil over moderately high heat, stirring, until golden. Add bell pepper and garlic and sauté 1 minute. Add water and simmer vegetables, covered, 10 minutes, or until fennel is tender. Remove lid and, if necessary, boil mixture until liquid is nearly evaporated. Add lemon juice and salt and pepper to taste and keep warm.
  • While fennel mixture is cooking, brush a heavy skillet, preferably cast-iron, with some additional oil and heat over moderately high heat until hot but not smoking. Sauté tuna steaks 2 minutes on each side, or until barely pink in center, for medium meat. Transfer tuna steaks to plates and spoon fennel-pepper mixture over and around them.
