CHURRASCO (ARGENTINE GRILLED MEAT MARINADE )

Churrasco (Argentine Grilled Meat Marinade ) image

This is a marinade for the churrasco dish. In Argentina, where this style of cooking developed, "churrasco" actually refers to many types of meats prepared on the grill. It's also popular with Nicaraguans. The churrasco cut steak is a long flat cut of skirt steak, cut from the "plate" of the cow. You might find it sold at some butcher shops as a "plate" steak. Don't confuse it with the flank steak, a similar cut, but NOT the same! The churrasco steak is typically marinated to make it tender and full of flavour. Serve topped with Recipe #456210. I did not include marinating time. Enjoy!

Time 10m

Number Of Ingredients 10

3 heads garlic (about 30 to 40 cloves)
2 teaspoons salt
1 teaspoon black peppercorns

  • Preparing the Meat: Preparing the meat is very easy. Place the meat in a large bowl or pan. Add enough marinade to cover the meat. Place a cover over the bowl or pan and place in the refrigerator a minimum of five hours, but preferably overnight.

CHURRASCO CON CHIMICHURRI - GRILLED SKIRT STEAK

Churrasco con Chimichurri - Grilled Skirt Steak image

Grilled Skirt Steak with Chimichurri Sauce In Argentina, "asados," or grilled meats, are often enjoyed with a fresh tasting, flavor-packed sauce called chimichurri. It's a classic for good reason! Made with freshly chopped herbs, fruity GOYA® Extra-Virgin Olive Oil and a dash of lemon and vinegar, this tart, vibrant topping turns plain grilled poultry, meat and seafood into something super special. This churrasco con chimichurri recipe pairs chimichurri with tender, grilled skirt steak. Serve the sauce on the side as you'd find it in Argentina, in a small bowl or jar.

Time 30m

Yield 4

Number Of Ingredients 13

½ cup packed fresh cilantro, finely chopped
½ cup packed fresh parsley, finely chopped
2 tbsp. packed fresh oregano, finely chopped
¼ red onion, finely chopped (about 3 tbsp.)
1 tbsp. GOYA® Minced Garlic
⅛ tsp. GOYA® Hot Pepper Flakes (optional)
2 tbsp. GOYA® Lemon Juice
2 tbsp. GOYA® Red Wine Vinegar
½ cup GOYA® Extra Virgin Olive Oil
GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
1 lb. skirt steak, cut into four 4-oz. pieces
2 packets Sazón GOYA® without Annatto
GOYA® Adobo All-Purpose Seasoning, to taste

Steps:

  • Step 1 In a small bowl, combine cilantro, parsley, oregano, onion, garlic and hot pepper flakes, if desired. Stir in lemon juice and vinegar. Slowly drizzle in olive oil, stirring constantly until combined. Season with adobo. Cover and refrigerate until ready to use (can be kept in refrigerator for up to 3 days). Step 2 Prepare grill to medium-high heat, or heat grill pan over medium-high heat. Sprinkle steak on both sides with sazon and adobo. Cook steak, flipping, until golden brown, about 6 minutes for medium rare. Step 3 Transfer steak to serving plates; top with chimichurri sauce. More Cooking Tips

GRILLED SIRLOIN STEAK (COLOMBIAN CHURRASCO)

Grilled Sirloin Steak (Colombian Churrasco) image

In some countries Churrasco is made from filet mignon, skirt steak, or beef tenderloin and pounded thin. In Colombia is made from sirloin (my grocery calls it London Broil cut) and is about 1 to 1 1/2 inch thick. It's marinated in chimichurri sauce then grilled or broiled.

Provided by threeovens

Categories     Steak

Time 50m

Yield 4 , 4-6 serving(s)

Number Of Ingredients 8

2 lbs top sirloin steaks
1 bunch fresh parsley, about 2 cups leaves
4 garlic cloves, minced
1 cup olive oil
1/4 cup red wine vinegar (to taste)
3 tablespoons water
1 1/2 teaspoons salt (to taste)
1 teaspoon black pepper (to taste)

Steps:

  • Prepare the chimichurri. Combine the parsley and garlic in a food processor and process until finely chopped. Add the oil, 1/4 cup vinegar, water, 1 1/2 teaspoons salt, and 1 teaspoon pepper and process to make a thick sauce. Correct the seasoning, adding salt, pepper, or vinegar as necessary; the mixture should be highly seasoned. Place half the chimichurri in a bowl or crock for serving; pour the remainder over the meat. Cover and let marinate in the refrigerator, 30 minutes, turning several times.
  • Preheat the grill to high (or broiler).
  • When ready to cook, oil the grill grate. Drain the beef and place it on the hot grate. Grill, turning with tongs, until cooked to taste, about 10 minutes per side for medium-rare. Serve with the remaining chimichurri sauce.
  • it is normally served on a wooden cutting board. I cut it like london broil in thin slices across the grain.

HOW TO GRILL SKIRT STEAK

How to Grill Skirt Steak image

Skirt steak is a flavorful cut of beef perfect for the grill, but you can get the most from it with this technique.

Provided by Molly Watson

Categories     Dinner     Entree

Time 38m

Number Of Ingredients 4

1 (1-pound) skirt steak
1/2 teaspoon salt
Optional: 1/4 teaspoon freshly ground black pepper
Optional: 1/8 teaspoon cayenne

Steps:

  • Gather the ingredients.
  • While technically optional, the first step for the best-tasting grilled steak is to salt it. Put the salt in a small bowl or ramekin. If using the pepper and/or cayenne, add them to the salt and mix. Let it sit for at least 30 minutes at room temperature or up to overnight in the fridge. In any case, bring the meat to about room temperature, or at least let it sit out to take the chill off before cooking it to help ensure even cooking.
  • While the meat sits, make sure the cooking grate on your charcoal or gas grill is cleaned and well oiled, then heat the grill to high heat. You should be able to hold your hand about an inch over the grill grate for 1 second before it feels too hot. If using a charcoal grill, build the fire to one side so you'll also have a cooler area where you can move the steak(s) if it's seared and browned on the outside but not quite ready to take off the grill completely (if you're using a gas grill , you'll be able to turn off a burner if need be).
  • Set the steak(s) on the grill and cook, without moving, until that side is seared and releases from the grill of its own accord, about 3 minutes for medium-rare, 4 minutes for medium.
  • Turn and cook on the other side to the same effect, about 3 to 4 more minutes. You can use a meat thermometer to get an accurate temperature if you like. For rare, remove the steak(s) at 120 F to 125 F; medium-rare 125 F to 130 F; and medium 130 F to 135 F.
  • Remove the steak(s) from the grill, cover loosely with foil, and let sit at least 10 minutes. This resting time allows the meat to finish cooking and the juices to redistribute evenly throughout the steak. It is extremely important to achieving a properly cooked steak when everything is said and done, so despite the temptation, don't skip this step.
  • Use a sharp knife to slice the steak against the grain and serve hot, warm, or at room temperature. Skirt steak is particularly flavorful, so any cold leftovers are more than usually delicious.

Categories     main-dish

Time 1h5m

Yield 4 to 6 servings

Number Of Ingredients 13

2 skirt steaks (about 1 pound each), trimmed of fat and cut in 1/2 crosswise
Sea salt and fresh ground black pepper
1 teaspoon onion powder
1 tablespoon white wine vinegar
1 tablespoon extra-virgin olive oil
Vegetable oil cooking spray
Chimichurri, recipe follows
4 cups flat-leaf parsley (from about 1 large bunch)
6 cloves garlic
1/2 to 3/4 cup extra-virgin olive oil
1/4 cup red wine vinegar
Salt and freshly ground black pepper
1 heaping teaspoon red pepper flakes, optional

Steps:

  • Rub a generous amount of salt and pepper into both sides of the steaks. Rub the onion powder into the steaks, dividing it evenly. Put the steaks into a baking dish or container that holds them comfortably. Sprinkle the vinegar over the steaks and brush them with the olive oil. Marinate the steaks at room temperature for up to 30 minutes or refrigerate for up to 2 days. Heat a gas grill to medium-high or heat a large grill pan over medium-high heat. Grill the steaks, turning only once, to desired doneness. Remove from the grill and let rest 5 minutes. If desired, slice the steaks thinly against the grain before serving. Drizzle some of the chimichurri over the steaks and pass the rest separately. ;
  • In a food processor, pulse the parsley and garlic until finely chopped. Scrape into a bowl and stir in the olive oil and vinegar. Season with salt and pepper, to taste. Add the red pepper flakes, if using, for a spicy chimichurri.

CHURRASCO SKIRT STEAK CUBAN-STYLE WITH MARINADE RECIPE RECIPE - (5/5)

Churrasco Skirt Steak Cuban-Style with Marinade Recipe Recipe - (5/5) image

Provided by kbartell

Number Of Ingredients 19

Beef skirt steak cut in long steaks (about 3/4 pound per person or more)
Cuban Churrasco (Mojo) Marinade
3 heads garlic -- about 30 to 40 cloves
2 teaspoons salt
1 teaspoon black peppercorns
1 and 1/2 cups sour orange juice
(If you can't get sour orange juice in your area, use two parts orange to one part lemon and one part lime)
1 cup minced onion
2 teaspoons oregano
1 cup Spanish olive oil
Cuban Chimichurri Sauce
1 large bunch of cilantro leaves
8 cloves garlic
1/4 cup vinegar
Juice of one lime
2/3 cup olive oil
1/2 cup onion
Dash or two of red pepper flakes
Salt and Pepper to taste

Steps:

  • Mojo Marinade To make the marinade: Mash garlic, salt, and peppercorns into a paste, using a mortar and pestle. Stir in sour orange juice, onion, and oregano. Let sit at room temperature for 30 minutes or longer. Whisk the garlic-orange juice mixture with the olive oil until well blended. Preparing the Meat Preparing the meat is very easy. Place the meat in a large bowl or pan. Add enough mojo marinade to cover the meat. Place a cover over the bowl or pan and place in the refrigerator a minimum of five hours, but preferably overnight. Chimichurri Sauce While your meat is marinating, make the sauce. We like to make it the easy way. Put everything except the olive oil in a blender and using the "chop" setting, click on and off until you have a thick mixture. Do not over process! This is the kind of dish you need to taste and adjust so that you get just the right flavor! So taste it! (The best way to taste it is with a piece of bread.) Whisk in the olive oil. (If you use the blender to incorporate the oil, the oil and liquids will emulsify, giving your chimichurri a white, paste-like texture.) Add salt, pepper, more vinegar and lime juice as needed. The flavor should be very intense with garlic and cilantro. Don't be stingy with the salt either! Grilling the Meat Grill the marinated steaks outdoors on the barbecue. (Make sure your coals are hot and white!) You can cook them however you like your steak -- from rare to well done. However, the rarer the meat, the more tender and flavorful! Serve the meat with the chimichurri sauce -- it tastes great!
