GRILLED STEAK AND VIDALIA ONIONS WITH MUSTARD-WORCESTERSHIRE VINAIGRETTE
Steps:
- Whisk together the Worcestershire sauce, mustard, thyme and salt and pepper, to taste, in a medium bowl until combined. Slowly whisk in the olive oil until emulsified. Let sit at room temperature while you prepare the steak and onions.
- Remove the steaks from the refrigerator 20 minutes before grilling. Heat the grill pan over high heat until it begins to smoke. Pat the steaks dry with paper towels. Brush both sides of the steaks with canola oil and season well with salt and pepper. Arrange the steaks on the grill pan and let cook until golden brown and charred, about 5 minutes. Flip the steaks, lower the heat to medium and continue cooking to medium-rare doneness (130 degrees F internal temperature on an instant-read thermometer), about 4 minutes longer. Remove from the heat and arrange on a serving platter. Loosely tent with foil and let rest while you grill the onions.
- Brush the onions on both sides with canola oil and season with salt and pepper, to taste. Grill until golden brown and slightly charred on both sides and just cooked through, about 2 minutes per side. Separate the slices into rings and add to a small bowl. Add half of the vinaigrette to the onions and gently toss to coat. Serve the steaks topped with the onions and drizzled with the remaining vinaigrette.

GRILLED SIRLOIN STEAK
Once you taste this delectable steak - a cookout favorite for my family - you'll think of it time and time again. The marinade gives it savory seasoning, plus it tenderizes the meat. -Diann Mallehan, Grand Rapids, Michigan

GRILLED BONELESS SIRLOIN AND VIDALIA ONION SKEWERS
A recipe that I saw on "Paula's Best Dishes", which I can't wait to try, looks so good. I am now making it for the 4th time, we love it!! I don't make kabobs out of the steak, just marinate it whole, then I baste it with the butter/beef bouillon mixture as well as the onions.

Steps:
- In a shallow dish, whisk together the vinegar, garlic, Parmesan, lemon juice, paprika, sugar, House Seasoning, and oregano. Add the beef cubes and marinate, covered, for 1 hour.
- Light the grill or preheat the broiler. In a bowl, add the melted butter and bouillon and stir until the bouillon is completely dissolved.
- Skewer the beef and onion cubes separately. Brush the onions with the butter mixture. Put the skewers on the grill, or if broiling, transfer the skewers to a foil-lined baking sheet and broil. Turn once, until the onion is tender and the beef is cooked to the desired doneness, 3 to 5 minutes per side. Arrange on a serving platter and serve.
- Note: House seasoning is 1/4 cup salt (I use sea salt), 1 tbsp black pepper and 1 tbsp garlic powder.
GRILLED TOP SIRLOIN RECIPE
Top sirloin is a tasty, versatile and affordable cut of beef. It can round out your menu with a smoky dry rub, a grilled sirloin steak marinade or nothing but a little garlic butter and salt and pepper.

Steps:
- Top sirloin grill temperature is a little nuanced.
- The best way to do it is to have two levels of heat: You want one side of the grill to be at around medium-high for searing and browning and the other at a medium-low level for cooking the meat through.
- If you're using propane, simply light two sections, one for each of the temperatures.
- If you're using charcoal, you can accomplish this by putting most of your coals on one side of the grill and leaving a few on the other side.
- Start by putting your steak over the medium-high heat and searing it for a good three to four minutes on each side.
- After that, you can move it over to the medium-low side until it reaches your desired doneness.
- Be sure to use thongs as using a fork will cause all the delicious juices to run out of your steak.
- The best way to check for doneness is to go by firmness.
- A good trick for this is to place your index finger to the tip of your thumb, forming a circle with your thumb and finger.
- Now use your other hand to feel the base of your thumb.
- This is what a rare cut would feel like.
- Now use your middle finger and thumb to form the circle.
- This is what medium-rare would feel like.
- Moving down your fingers, your pinky and thumb would be a well-done steak.
- It takes a bit of practice but using this method, you'll soon be able to tell the doneness of a steak by simply feeling it directly.

- Heat oil in a medium sauce pan over medium heart until shimmering. Add the onions and a pinch of salt. Cook onions until deep brown and syrupy, about 1 hour, stirring occasionally and scrapping up browned bits from the bottom of the pan. Remove onions to a small bowl, leaving as much oil in the pan as possible.
- Salt and pepper both sides of the steaks and allow to sit out to rise to room temperature while preparing the grill. Light 1 chimney of charcoal, and when lit, dump out on the charcoal grate. Grill steaks directly over the coals until desired doneness. Remove steaks to a plate and cover with foil and allow to rest 10-15 minutes.
- Heat oil remaining in the saucepan over medium-high heat until shimmering. Add the shallot and cook until softened, about 2 minutes. Stir in the broth, wine, and brown sugar, scraping up any browned bits, and simmer until thickened, about 15 minutes.
- Stir in accumulated meat juice. Turn the heat to low and whisk in the butter, one piece at a time. Off the heat, stir in the thyme and season with salt and pepper to taste. Spoon onions and sauce over the steaks before serving.

- Slice the onion in large rings (about 1/2″) trying to be as straight as possible. (I got 4 ringlets from 1 onion).
- Run the skewer parallel through each onion and break off the end. Putting only 1 onion on a skewer makes them easier to flip on the grill. Repeat with the remaining rings. In my case I used 4 skewers for 4 onion rings.
