GRILLED SHRIMP SCAMPI
Shrimp marinated in lemon, garlic, and parsley for 30 minutes, then grilled. Can be used as an appetizer or main dish. This recipe also works well with scallops.

- In a large, non-reactive bowl, stir together the olive oil, lemon juice, parsley, garlic, and black pepper. Season with crushed red pepper, if desired. Add shrimp, and toss to coat. Marinate in the refrigerator for 30 minutes.
- Preheat grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard any remaining marinade.
- Lightly oil grill grate. Grill for 2 to 3 minutes per side, or until opaque.

Steps:
- Boil water for pasta and cook according to directions on the box.
- Dice the red onion and garlic.
- In a pan heat up 2 tablespoons of olive oil and add onion and garlic. Saute until translucent.
- In another pan heat up remaining 2 tablespoons of olive oil. Put the shrimp in the pan and cook for about 6 minutes on medium heat.
- Once the shrimp are cooked add the wine, lemon juice, and cooked onion and garlic.
- Reduce for about 15 minutes on low heat.
- Toss cooked pasta, shrimp, and sauce together and serve.

Steps:
- Combine butter, lemon juice, pepper flakes, garlic, and salt in pan. Cook over hot side of grill, stirring occasionally, unti butter melts, about 1 1/2 minutes, transfer to cooler side of grill and proceed to grill shrimp, adding parsley just before serving.
- Pat shrimp with paper towels. THread shrimp onto 3 skewers, alternating direction of head and tails. Brush both sides of shrimp with oil and season lighly with salt and pepper. Sprnkle one side of each skewer evenly with sugar.
- Place shrimp skewers, sugared sides down, on hot side of grill. Grill shrimp, uncovered, until lightly charred, 4-5 minutes. USing tongs, flip and grill until second side is pink and slighly translucent, 1-2 minutes.
- Using potholder or oven mitt, carefully lift each skewer from grill; use tongs to slide shrimp off skewers and into sauce. Toss shrimp and sauce to combine and transfer pan to hot side of grill; cook, stirring, until shrimp are opaque and fully cooked, about 30 seconds.

- Combine baking soda, salt, and sugar in a medium bowl. Place shrimp in bowl and toss to coat. Thread the shrimp onto skewers, alternating heads to tails and pushing the shrimp so that they are nestled snugly together; you should have about 6 shrimp on each skewer. Lay skewers on top of a baking dish so that the shrimp are suspended above the bottom of the dish. Transfer to refrigerator and allow to rest for 1 hour. Meanwhile, combine half of garlic and half of olive oil in a small bowl. Combine remaining garlic, olive oil, lemon zest and juice, and parsley leaves in a large bowl. Set aside.
- When shrimp are ready to grill, brush both sides with garlic/oil mixture. Light gas grill and allow to preheat covered for 10 minutes or for charcoal grill until the coals are gray -- cover and allow it to preheat for 5 minutes.Be sure the grilling grates are clean and oiled.
- Place shrimp directly over the heat and cook, turning occasionally, until shrimp are just cooked through and charred, 4 to 5 minutes total. Take off the heat.
- Carefully remove the skewers from the shrimp and transfer to the bowl with garlic/oil/lemon mixture. Toss to coat. Season with salt and pepper to taste and serve immediately.

- Trim the top of the garlic head to expose a bit of the cloves, but keep intact. Drizzle generously with olive oil and wrap in foil. Roast garlic head in heated oven for about 10-15 minutes or until slightly tender and fragrant. When ready, remove from the oven. Let cool briefly.
