PERFECT GRILLED TOFU

Perfect Grilled Tofu image

This recipe is very easy to double, though you don't need quite double the marinade: About 1 1/2 times the marinade is perfect for four packages of tofu.

Provided by benandbirdy

Categories     100+ Everyday Cooking Recipes     Vegetarian     Protein     Tofu

Time 1h25m

Yield 6

Number Of Ingredients 9

2 (14 ounce) packages extra-firm tofu, drained
½ cup sherry vinegar
½ cup low-sodium soy sauce
⅓ cup olive oil
1 teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon cayenne pepper
½ teaspoon dried marjoram or thyme
¼ teaspoon black pepper

Steps:

  • Wrap tofu in a clean dish towel and weight it with something heavy such as a large can; leave it to drain for 30 minutes.
  • Meanwhile, mix together remaining ingredients in a bowl.
  • Cut each piece of tofu crosswise into 6 thick slices and put it all in a baking dish. Pour marinade over tofu, turning to coat, and chill, covered, turning occasionally, at least 30 minutes or up to 48 hours. Longer is better, but shorter is totally fine.
  • Preheat a gas grill on high heat (450 degrees F to 650 degrees F) 10 minutes, then reduce heat to medium (325 degrees F to 375 degrees F)--or do whatever the equivalent is if you're using charcoal. Oil grate.
  • Transfer tofu from marinade (letting excess drip off and reserving marinade) to grill with a spatula. Cover grill and cook tofu, turning once, until well browned but before grill marks get black, 10 to 15 minutes total. Transfer tofu to a platter and cover with foil to keep warm.
  • Bring reserved marinade to a boil in a saucepan and boil until it reduces to about 1 cup, about 2 minutes. Pour over tofu and serve hot, warm, or at room temperature.

Provided by Carapelli® Olive Oil

Categories     Trusted Brands: Recipes and Tips     Carapelli® Olive Oil

Time 30m

Yield 4

Number Of Ingredients 11

¼ cup Carapelli Premium 100% Italian Extra Virgin Olive Oil
2 tablespoons Champagne vinegar or sherry vinegar
2 teaspoons Dijon mustard
¼ teaspoon coarse sea salt or kosher salt
⅛ teaspoon freshly ground black pepper
¼ teaspoon crushed red pepper flakes
2 cloves garlic, minced
1 pound uncooked large shrimp, peeled and deveined
½ fresh pineapple, peeled and cored, cut lengthwise into 4 slabs
8 cups mixed field greens or baby greens
3 tablespoons chopped fresh basil or tarragon leaves

Steps:

  • Heat a grill to medium-high heat or have a ridged grill pan ready. For vinaigrette, whisk together oil, vinegar, mustard, salt and pepper in a small bowl. Transfer 3 tablespoons of the mixture to a pie plate or shallow plate. Stir pepper flakes and garlic into oil mixture on plate.
  • (Sneak a quick dip of artisan bread into the mixture - so good!)
  • Add shrimp to plate; toss with oil mixture. Thread shrimp onto metal skewers or soaked bamboo skewers. Brush oil mixture from plate over skewers. Transfer skewers to grill; discard marinade on plate. Add pineapple to grill. Grill shrimp and pineapple (or cook shrimp in a heated ridged grill pan over medium heat and grill pineapple in pan after shrimp is removed) 4 minutes. Turn skewers and pineapple over; continue grilling 4 to 5 minutes or until shrimp are opaque.
  • Meanwhile, toss mixed greens with remaining vinaigrette; arrange on four large serving plates. Carve pineapple crosswise into 1/2 inch thick slices; arrange over salads. Remove shrimp from skewers; arrange over salads. Top with basil.

GRILLED SHRIMP, TOFU, AND PINEAPPLE SALAD

Grilled Shrimp, Tofu, and Pineapple Salad image

In this dish, tofu shows its smoky side and grilled shrimp takes on the spicy and sweet flavors of honey, sambal oelek, garlic, and ginger. Serve with juicy fruit, jicama, cucumbers, and carrots for a light and fragrant salad.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Shrimp Recipes

Number Of Ingredients 19

1 package (14 ounces) firm tofu, quartered lengthwise
1 pound medium shrimp, shells intact, deveined
1/4 cup unseasoned rice-wine vinegar
2 tablespoons honey
2 tablespoons sambal oelek
2 garlic cloves, coarsely chopped
1 tablespoon coarsely chopped fresh ginger
1 medium pineapple, peeled
2 teaspoons extra-virgin olive oil
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
3 medium carrots, julienned (3 ounces)
1/2 English cucumber, quartered lengthwise and sliced 1/4 inch thick crosswise
1 medium jicama, peeled and julienned
3 tablespoons sliced fresh mint
1/4 cup unseasoned rice-wine vinegar
2 tablespoons sugar
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper

Steps:

  • Make the salad: Place tofu slices on a rimmed baking sheet between layers of paper towels. Place a baking sheet weighted with heavy cans on top of the tofu. Let stand for 30 minutes. Pat tofu until completely dry.
  • Place shrimp in a bowl. Puree vinegar, honey, sambal oelek, garlic, and ginger in a food processor until smooth, and pour over shrimp. Turn shrimp until well coated. Cover and refrigerate, turning once, for 1 hour.
  • Preheat grill to medium. Cut pineapple lengthwise along sides of core into 2 large pieces, then slice each piece lengthwise into thirds. Reserve remaining center piece for another use. Grill pineapple, turning frequently, until brown, 4 to 5 minutes per side. Brush tofu with oil, sprinkle with the salt and pepper, and grill, turning once, until brown, 2 to 3 minutes per side. Grill shrimp, turning once, until opaque, 2 to 3 minutes per side.
  • Cut pineapple crosswise into 1/4-inch-thick slices. Cut tofu into 1/2-inch cubes. Peel shrimp, and combine with pineapple, tofu, carrots, cucumber, jicama, and mint in a salad bowl.
  • Make the dressing: Whisk together ingredients in a small bowl. Pour over salad, and toss until well combined.

MANGO PINEAPPLE SHRIMP SALAD

Mango Pineapple Shrimp Salad image

With tropical fruit, avocado, red onion, lime juice, cilantro, and plump JUICY shrimp, this EASY 15-minute recipe will become a new FAVORITE!! Healthy and light with an assortment of wonderful flavors in every bite!!

Provided by Averie Sunshine

Categories     Sides, Salads & Vegetables

Time 17m

Number Of Ingredients 11

1 pound U20 fresh shrimp, or your favorite sized shrimp, cleaned with shells removed and de-veined (previously cooked frozen shrimp that you thaw may be substituted)
1 1/2 cups small-diced fresh mango (frozen may be substituted that you thaw and drain well)
1 1/2 cups small-disced fresh pineapple (frozen may be substituted that you thaw and drain well)
1/4 cup red onion, diced small, or to taste
1 serrano chile or jalapeno pepper, seeded and diced very small (serrano is much hotter than jalapeno)
1 ripe Hass avocado, diced into small pieces
1/3 cup fresh cilantro, finely minced, or to taste
1+ teaspoon cumin, or to taste (I used 2 teaspoons)
3 to 4 tablespoons lime juice
1 teaspoon kosher salt, or to taste
1 teaspoon freshly ground black pepper, or to taste

Steps:

  • Bring salted water to a boil in a small kettle, add the shrimp, and cook for 90 seconds to 3 minutes, immediately remove the shrimp and submerge in an ice bath. Do not overcook the shrimp or they will taste rubbery. Cooking time will depend on the exact size of the shrimp but unless you are using truly jumbo shrimp such as U12 (expensive and not easy to always find) 3 minutes is the maximum boiling time I recommend; I cooked mine for 2 minutes.
  • While the shrimp are resting and cooling in an ice bath, chop all remaining ingredients and add them to a medium bowl.
  • Add the shrimp, stir well, and taste for seasoning balance, making adjustments as necessary. I recommend serving with tortilla chips or seasoned tortilla chips.

GRILLED PINEAPPLE & SHRIMP SALAD WITH CITRUS DRESSING

Grilled Pineapple & Shrimp Salad with Citrus Dressing image

An easy, delicious and light salad. Perfect for summertime entertaining!

Provided by Nicole Coudal, My Delicious Blog

Categories     Salad

Time 22m

Number Of Ingredients 23

1/4 c. extra virgin olive oil
1 lemon, juiced
1 tsp. Dijon mustard
2 tsp. honey
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1 lb. jumbo shrimp (16/20), peeled & deveined ((keep the tails on))
4+ c. mixed greens (baby greens, kale, arugula, lettuce)
2-3 fresh pineapple rings OR planks of freshly cut pineapple, cored
Handful sliced cucumbers, blanched asparagus or other veggie ((optional))
Handful toasted, slivered almonds ((optional))
1 Tb. granulated sugar
1 Tb. vegetable oil
1 orange, zested & juiced
1 lemon, zested & juiced
1 clove garlic, peeled & minced
1 Tb. honey
1 tsp. Dijon mustard
1 Tb. fresh thyme leaves, minced
1 Tb fresh parsley, minced
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/2 c. extra virgin olive oil

Steps:

  • Add marinade ingredients to a large ziplock bag and mix together by scrunching the bag. Reserve 2 Tb. for brushing on shrimp while cooking. Add shrimp to bag, seal and refrigerate 20 minutes.
  • Combine Dressing ingredients in a blender (for best emulsion) OR add ingredients to a small bowl and whisk until combined; set aside until ready to use. (Note: when ready to use, taste & adjust for seasoning).
  • When ready to prepare salad, heat grill to high.
  • Remove shrimp from marinade, place on skewers (about 3-4 each) and discard marinade.
  • Lightly brush pineapple with vegetable oil and sprinkle with sugar. Then place shrimp skewers and pineapple onto hot grill.
  • For shrimp, cook 1.5 - 2 minutes then flip and brush with reserved marinade and cook another 1.5 - 2 minutes then remove from heat. Allow the pineapple to lightly brown/caramelize for about the same time on the first side, then flip and cook 2-3 minutes so the pieces get warmed through and juicy (this takes a bit longer than the shrimp). Remove from heat.
  • Place mixed greens (and any other veggies) in serving bowl. Cut pineapple into chunks and add to bowl. Remove shrimp from skewers and add to bowl. Add as much dressing as desired then toss to combine. Serve with crusty bread, or top with a little salty parmesan or feta.

  • Now slice the tofu into triangle filets. Cut the tofu in half diagonally then slice 3 even filets from each half. Place the filets between 2 tea towels or paper towels and gently press out any extra moisture with your hands.
  • Position the filets single layer in the marinade. Spoon marinate over the top of each piece of tofu. Set aside to marinate for at least 1 hour, but overnight will definitely yield more flavor.
