PERFECT GRILLED TOFU
This recipe is very easy to double, though you don't need quite double the marinade: About 1 1/2 times the marinade is perfect for four packages of tofu.

Steps:
- Wrap tofu in a clean dish towel and weight it with something heavy such as a large can; leave it to drain for 30 minutes.
- Meanwhile, mix together remaining ingredients in a bowl.
- Cut each piece of tofu crosswise into 6 thick slices and put it all in a baking dish. Pour marinade over tofu, turning to coat, and chill, covered, turning occasionally, at least 30 minutes or up to 48 hours. Longer is better, but shorter is totally fine.
- Preheat a gas grill on high heat (450 degrees F to 650 degrees F) 10 minutes, then reduce heat to medium (325 degrees F to 375 degrees F)--or do whatever the equivalent is if you're using charcoal. Oil grate.
- Transfer tofu from marinade (letting excess drip off and reserving marinade) to grill with a spatula. Cover grill and cook tofu, turning once, until well browned but before grill marks get black, 10 to 15 minutes total. Transfer tofu to a platter and cover with foil to keep warm.
- Bring reserved marinade to a boil in a saucepan and boil until it reduces to about 1 cup, about 2 minutes. Pour over tofu and serve hot, warm, or at room temperature.

Steps:
- Heat a grill to medium-high heat or have a ridged grill pan ready. For vinaigrette, whisk together oil, vinegar, mustard, salt and pepper in a small bowl. Transfer 3 tablespoons of the mixture to a pie plate or shallow plate. Stir pepper flakes and garlic into oil mixture on plate.
- (Sneak a quick dip of artisan bread into the mixture - so good!)
- Add shrimp to plate; toss with oil mixture. Thread shrimp onto metal skewers or soaked bamboo skewers. Brush oil mixture from plate over skewers. Transfer skewers to grill; discard marinade on plate. Add pineapple to grill. Grill shrimp and pineapple (or cook shrimp in a heated ridged grill pan over medium heat and grill pineapple in pan after shrimp is removed) 4 minutes. Turn skewers and pineapple over; continue grilling 4 to 5 minutes or until shrimp are opaque.
- Meanwhile, toss mixed greens with remaining vinaigrette; arrange on four large serving plates. Carve pineapple crosswise into 1/2 inch thick slices; arrange over salads. Remove shrimp from skewers; arrange over salads. Top with basil.

- Step 1: Combine the shrimp and salt in a mixing bowl and toss to mix. Let marinate for 30 minutes. ShareTweetPin326 Shares Step 2: Meanwhile, heat the oil to medium-high in a small saucepan on your grill's side burner or stovetop. Add the garlic and shallots and fry until lightly browned and crisp, 1 to 2 minutes. Do not let the ingredients burn, or they'll taste bitter. With a slotted spoon, transfer to a plate lined with paper towels to drain. Let the oil cool to room temperature and reserve. ShareTweetPin326 Shares Step 3: Make the dressing: In a large serving bowl, place the lime juice, fish sauce, and 1/4 cup sugar. Whisk until the sugar dissolves. ShareTweetPin326 Shares Step 4: Set up your grill for direct grilling and heat to high. Brush and oil the grill grate. ShareTweetPin326 Shares Step 5: Brush the pineapple slices on both sides with some of the reserved garlic-shallot oil. Dredge in sugar on both sides, shaking off the excess. Arrange the pineapple on the grate and grill until browned on both sides, but still raw in the center, 1 to 2 minutes per side, turning with tongs. Transfer the pineapple to a wire rack to cool, then cut into 1-inch chunks. Add them with any pineapple juices to the bowl with the dressing. ShareTweetPin326 Shares Step 6: Add the cilantro, mint, basil, and chiles to the pineapple, but do not toss. ShareTweetPin326 Shares Step 7: Right before serving, blot the shrimp dry with paper towels. Brush the shrimp on both sides with some more of the garlic-shallot oil and season with salt and pepper. Grill the shrimp until browned and cooked through, 1 to 2 minutes per side, turning with tongs. Add the shrimp and any remaining garlic-shallot oil to salad and gently toss to mix. Steps:
- Make the salad: Place tofu slices on a rimmed baking sheet between layers of paper towels. Place a baking sheet weighted with heavy cans on top of the tofu. Let stand for 30 minutes. Pat tofu until completely dry.
- Place shrimp in a bowl. Puree vinegar, honey, sambal oelek, garlic, and ginger in a food processor until smooth, and pour over shrimp. Turn shrimp until well coated. Cover and refrigerate, turning once, for 1 hour.
- Preheat grill to medium. Cut pineapple lengthwise along sides of core into 2 large pieces, then slice each piece lengthwise into thirds. Reserve remaining center piece for another use. Grill pineapple, turning frequently, until brown, 4 to 5 minutes per side. Brush tofu with oil, sprinkle with the salt and pepper, and grill, turning once, until brown, 2 to 3 minutes per side. Grill shrimp, turning once, until opaque, 2 to 3 minutes per side.
- Cut pineapple crosswise into 1/4-inch-thick slices. Cut tofu into 1/2-inch cubes. Peel shrimp, and combine with pineapple, tofu, carrots, cucumber, jicama, and mint in a salad bowl.

Steps:
- Bring salted water to a boil in a small kettle, add the shrimp, and cook for 90 seconds to 3 minutes, immediately remove the shrimp and submerge in an ice bath. Do not overcook the shrimp or they will taste rubbery. Cooking time will depend on the exact size of the shrimp but unless you are using truly jumbo shrimp such as U12 (expensive and not easy to always find) 3 minutes is the maximum boiling time I recommend; I cooked mine for 2 minutes.
- While the shrimp are resting and cooling in an ice bath, chop all remaining ingredients and add them to a medium bowl.
- Add the shrimp, stir well, and taste for seasoning balance, making adjustments as necessary. I recommend serving with tortilla chips or seasoned tortilla chips.

Steps:
- Add marinade ingredients to a large ziplock bag and mix together by scrunching the bag. Reserve 2 Tb. for brushing on shrimp while cooking. Add shrimp to bag, seal and refrigerate 20 minutes.
- Combine Dressing ingredients in a blender (for best emulsion) OR add ingredients to a small bowl and whisk until combined; set aside until ready to use. (Note: when ready to use, taste & adjust for seasoning).
- When ready to prepare salad, heat grill to high.
- Remove shrimp from marinade, place on skewers (about 3-4 each) and discard marinade.
- Lightly brush pineapple with vegetable oil and sprinkle with sugar. Then place shrimp skewers and pineapple onto hot grill.
- For shrimp, cook 1.5 - 2 minutes then flip and brush with reserved marinade and cook another 1.5 - 2 minutes then remove from heat. Allow the pineapple to lightly brown/caramelize for about the same time on the first side, then flip and cook 2-3 minutes so the pieces get warmed through and juicy (this takes a bit longer than the shrimp). Remove from heat.
- Place mixed greens (and any other veggies) in serving bowl. Cut pineapple into chunks and add to bowl. Remove shrimp from skewers and add to bowl. Add as much dressing as desired then toss to combine. Serve with crusty bread, or top with a little salty parmesan or feta.

- Press tofu to remove excess moisture. (I love my tofu press.) If you don't have a press, sandwich the tofu between 2 plates and place a semi-heavy object on top. Make sure not to crush the tofu.
- While the tofu is being pressed, prep the marinade. In a 9x13 inch glass dish, whisk together the marinade ingredients: lemon juice, pineapple juice, tamari, sugar, turmeric and cilantro.
- Now slice the tofu into triangle filets. Cut the tofu in half diagonally then slice 3 even filets from each half. Place the filets between 2 tea towels or paper towels and gently press out any extra moisture with your hands.
- Position the filets single layer in the marinade. Spoon marinate over the top of each piece of tofu. Set aside to marinate for at least 1 hour, but overnight will definitely yield more flavor.
