GRILLED CORN SALAD WITH FETA DRESSING
This Grilled Corn Salad recipe is fresh and easy! It's made with roasted corn, avocado, tomatoes and tossed in a lemon feta cheese dressing.

Steps:
- Heat charcoal or gas grill to 400 degrees Fahrenheit.
- Remove any residue from the grates of your grill with a brush so that the grate is clean before use.
- Remove the first outer dry layer of the husks (leaving most of the husk intact) and trim the dry silk from the ends with a scissors. Discard any dry outer husks and silk.
- Place 4 cobs of sweet corn directly over the heat, cover the grill, and cook for 10 minutes on the first side. Flip, cover, and cook for 10 minutes on the second side. Turn the corn ¼ of the way over and cook for 5 minutes. Flip the corn over to the uncooked final quarter and cook for another 5 minutes.
- Remove the corn from the grill and allow to rest until cool enough to handle. Once the corn has cooled and is cool to the touch remove the charred husks and silk and discard.
- After the husks are removed, place the corn on a cutting board, stand one of the cobs on its end and tilt it toward you (it's important to stand the corn up so that you're cutting on its flat surface and not allowing it to roll around as you cut it with your knife).
- Slowly slice the kernels off the cob with a knife and place the corn in a large mixing bowl. Repeat with the remainder of the cobs.
- Cut 1 pint of cherry tomatoes into halves or quarters, depending on your preference.
- Cut 2 ripe avocadoes in half, remove the pit, and dice the avocadoes into pieces.
- Mince 2 cloves of garlic.
- Add ¼ cup of olive oil, 1 Tbsp. Dijon mustard, 2 Tbsp. lemon juice, and ⅛ tsp. each of kosher salt and pepper to a small bowl. Stir until combined with a fork or small whisk.
- Add the minced garlic and ½ cup of crumbled feta cheese. Stir until combined. Mince 1 Tbsp. of fresh herbs such as chives and add it to the vinaigrette (optional).
- Add the chopped tomatoes to a large mixing bowl along with the sliced, grilled corn. Drizzle the feta dressing over the corn and tomatoes and toss until coated.
- Add the diced avocadoes and gently stir them into the salad with a spatula or large spoon (this will prevent them from getting mushy when combined with the other ingredients).
- Garnish with more minced fresh herbs (optional). Serve immediately.

This wonderful summer salad that is a meal all in one with grilled chicken, strawberries, avocado, spinach, and romaine lettuce topped with a sweet poppy seed dressing.

Steps:
- Combine olive oil, vinegar, honey, sugar, poppy seeds, salt, mustard, and grated onion in a blender. Transfer dressing to a bowl or jar and refrigerate at least 1 hour before serving.
- Combine Italian dressing and teriyaki sauce in a sealable container and add chicken. Seal and marinate at least 30 minutes to 1 hour before grilling.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Remove chicken from marinade and grill until juices run clear, 5 to 8 minutes per side. Remove from heat, let cool about 10 minutes, and cut into bite-sized pieces.
- Toss grilled chicken, spinach, and romaine lettuce together in a large serving bowl. Gently stir in strawberries and avocado. Refrigerate until ready to serve.
- Top salad with dressing and pecans when serving.

CREAMY AVOCADO DRESSING
Recipe video above. This is a dressing that uses avocado to make it creamy, rather than mayonnaise or loads of oil. It doesn't taste very avocado-ey because avocados are dense so it needs to be thinned out to make it pourable as a dressing. Rather, think of the avocado as the better-for-you means to get a creamy dressing fix!Excellent use for avocados that are a bit overripe or with brown spotty bits. Use as dressing for all your favourite salads. - For the grilled seasonal salad: Prepare a grill for high heat.
- Brush the corn, cabbage and green onions with vegetable oil and season with salt and pepper. Grill the corn, cabbage, green onions and poblanos until charred and blistering, 4 to 5 minutes a side for the corn and onions, 10 minutes for the poblanos (turning throughout) and 10 to 15 minutes a side for the cabbage. Using a grill basket or by skewering, grill the strawberries for 1 to 2 minutes per side. Set the vegetables and strawberries aside to cool.
- For the avocado dressing: In the meantime, scoop the avocado flesh into the bowl of a food processor. Add the olive oil, vinegar, cilantro, lime zest and juice, garlic and some salt and pepper and process until smooth. Adjust the seasoning if necessary.
- When cool, rough-chop the cabbage. Remove the skins, seeds and ribs from the poblanos and cut into thin strips. Slice the green onions. Next, cut the corn kernels from the cobs over a towel to capture the kernels easily. Place all the veggies and the strawberries into a large bowl. Pour the avocado dressing over top and toss to coat. Season again with salt and pepper if necessary.
CHEF'S SALAD WITH GRILLED CHICKEN AND BLACK PEPPER RANCH
I thoroughly enjoyed eating this salad for dinner, but my favorite bites were the chunks of sharp Cheddar, lettuce, dressing, cucumber, and chicken. This is a classic ranch dressing ratio, so it hits your taste buds the way it should. The black pepper is not oppressive as it's balanced out by the tangy buttermilk and creamy mayo. - Preheat a gas grill to medium heat (400 to 450 degrees F, or 200 to 230 degrees C) or a grill pan over medium-high heat; oil the grates. Pat chicken dry and sprinkle evenly with 3/4 teaspoon salt.
- Place chicken on the preheated grill and cook, turning occasionally, until a thermometer inserted into the thickest part registers 165 degrees F (74 degrees C), about 15 minutes. Transfer to a cutting board and let rest for 10 minutes before chopping.

AVOCADO DRESSING

- In a large bowl mash the avocados with the lemon juice. In a blender combine the avocado and all of the remaining ingredients. Blend until smooth. Pour the dressing into an airtight container and allow to mellow in the refrigerator for one day.
