3/4 lb salmon
2 tablespoons balsamic vinegar
3/4 cup diced strawberry
2 tablespoons cilantro
1 1/2 teaspoons diced jalapenos
1 tablespoon diced green onion
1 teaspoon lime juice

Steps:

  • 1. Place salmon fillet on a baking sheet and use a pastry brush to brush it with a few coats of balsamic vinegar. Reserve the rest of the balsamic for later. Season salmon with a dash of salt and pepper.
  • 2. Bake salmon for 15-20 minutes until cooked to your desired level of doneness. For well done fish, you may need to add a couple of extra minutes in the oven.
  • 3. When salmon is cooked, brush a bit of the remaining balsamic vinegar over the top. Top salmon with strawberry salsa and serve immediately.
  • 4. Combine strawberries, cilantro, jalapeño, green onion, lime juice in a medium bowl.
  • 5. Add salt and pepper to taste.
  • 6. Store salsa in the fridge until you're ready to serve.

4 (6-ounce) salmon fillets, skin-on
2 teaspoons Essence, recipe follows
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 recipe Fruit Salsa, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
3/4 cup small diced pineapple
3/4 cup small diced mango
1/2 cup small diced strawberries
1/4 cup small diced red onion
1 jalapeno, stemmed, seeded and finely chopped
2 tablespoons chopped fresh mint leaves
2 tablespoons freshly squeezed orange juice
1 tablespoon freshly squeezed lime juice
1/4 teaspoon salt

Steps:

  • Preheat a grill to medium.
  • Brush both sides of the salmon with the olive oil. Season the salmon on both sides with the Essence, salt and pepper. Place the fish on the grill, skin side down and cook for about 3 minutes then turn the fish 45 degrees and cook for an additional 3 minutes. Turn the fish over and cook for an additional 2 minutes, or until cooked through to the desired degree of doneness.
  • Remove the fish from the grill and serve with the fruit salsa spooned over the fish. Serve immediately.
  • Combine all ingredients thoroughly.
  • In a medium non-reactive bowl, combine all of the ingredients and stir to blend. Cover with plastic wrap and allow the salsa to macerate for 20 to 30 minutes before serving.

Fresh Salmon is just the best. I go fishing in Alaska once a year and bring home a fair amount. Testing different peoples recipes is great. This one is from EMERIL. I keep some of his Essence on hand at all times. The fruit salsa is so refreshing and a great summer time addition to the fish. I have not tried it on other fish but I am sure it would be great.

2 (8 ounce) salmon fillets (rinsed and patted dry)
1/2 cup strawberry juice, from concentrate
1 garlic clove, crushed
1/4 cup red wine vinegar
2 teaspoons brown sugar
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/2 tablespoon fresh ginger, chopped
2 tablespoons lime juice
1/2 cup fresh strawberries, cleaned, hulled and diced small
1 medium sized avocado, peeled, seeded and diced
1 tablespoon chopped mint
1/4 cup red Spanish onion, finely diced
1/2 tablespoon fresh cilantro or 1/2 tablespoon parsley, roughly chopped
1 tablespoon jalapeno, seeded and minced
1/2 teaspoon fresh ginger, finely minced
1 tablespoon virgin olive oil
1 teaspoon raspberry vinegar (or red-wine vinegar)
2 tablespoons honey
2 tablespoons lime juice
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • In a Large bowl whisk together all marinade ingredients and add salmon fillets. Refrigerate for 2 or more hours.
  • In a medium mixing bowl, combine all pico de gallo (salsa) ingredients EXCEPT the strawberries. Blend by gently stirring the ingredients with a rubber spatula. Cover and refrigerate for at least 1 hour, stirring once or twice. (Just before serving, add the strawberries to the pico de gallo mixture; give another gentle stir with a rubber spatula.).
  • When ready, preheat the gas grill or charcoal BBQ to 325°F/162°C Prepare the grill for indirect cooking.
  • Remove salmon fillets and discard marinade. Place marinated salmon fillets on a well-oiled fish grilling rack. Grill the fillets over briquettes (about 4 inches from fire) or over a gas flame for 9 to 10 minutes per side -- Grill until the salmon is nicely browned. Gently flip the fish and continue to grill for another 9 to 10 minutes. Transfer to a warm serving platter; let stand for 3 minutes. Top with salsa and serve immediately.
  • Serve with a salad of fresh greens lightly tossed with olive oil and balsamic vinegar, toasted sourdough bread and a light and fruity Rose' wine -- Enjoy!
  • Cook's Tips: (1) Ocean Trout steaks, Swordfish, Cod or even grilled chicken are delicious alternatives to Salmon. (2) This strawberry pico de gallo is equally delicious served as bruschetta (on lightly oiled and grilled sliced focaccia).
