SCOTT'S GRILLED SALMON
This is my favorite salmon recipe that I put together in college. This can be done on the grill or in the oven. By pairing salmon with rich/tangy lemon, rosemary and garlic sauce, this is a great summertime meal. Serve with grilled/baked veggies (I prefer broccoli, Brussels sprouts or green beans). Enjoy!

- Preheat an outdoor grill for high heat, and lightly oil the grate.
- Season salmon with seafood seasoning, salt, and black pepper. Arrange salmon in the center of a large piece of aluminum foil; add lemon juice, 4 teaspoons olive oil, and white wine. Top each fillet with 2 lemon slices, capers, and a fresh rosemary sprig. Fold three of the sides of the foil toward the middle, creating a foil bag.
- Whisk mayonnaise, mustard, 2 tablespoons olive oil, lemon zest, chopped rosemary, garlic, 1/4 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl until sauce is smooth.
- Cook salmon on the preheated grill until fish flakes easily with a fork, 5 to 10 minutes. Serve sauce alongside cooked salmon.

- Prepare a grill for high heat.
- Season the salmon fillets with salt and pepper and drizzle with olive oil.

- Place the olive oil, brown sugar, soy sauce, lemon zest, Dijon mustard, parsley, thyme, salt and pepper in a bowl. Whisk to combine.
- Reserve 1 tablespoon of the marinade in the refrigerator for later use. Add the garlic to the bowl.
- Add the salmon to the bowl of marinade. Spoon the marinade over the salmon and cover the bowl.
- Marinate in the refrigerator for at least 1 hour, or up to 8 hours.
- Remove the salmon from the marinade and scrape off any excess bits of herbs or garlic (otherwise they could burn on the grill!).
- Preheat an outdoor grill or indoor grill pan over medium high heat. If you're using an outdoor grill, be sure to thoroughly coat your grill grates with vegetable oil.
- Add the salmon fillets and cook for 5-6 minutes on each side or until salmon is opaque throughout.
- Brush the reserved marinade over the salmon fillets, then serve.

- Mix all the Marinade ingredients in a bowl, stir to mix well.
- Marinate the salmon with the Marinade for 20 minutes.
- Heat up a gas grill to medium heat, at 350°F (176°C). Remove the marinated salmon from the Marinade and place it on top of the gas grill. Place the salmon, skin side down at a 45 degree angle to form beautiful char marks. Grill the salmon for 4 minutes, uninterrupted. Turn the salmon over and grill for another 4 minutes, uninterrupted. - Place salmon filet on a sheet of aluminium foil, or baking tray, flesh-side up.
- Season salmon filet with salt and pepper (to taste) and set aside.
- Chop garlic finely and mix into the cup of mayonnaise, stirring if necessary.
- Using a butter knife or a spoon, spread the garlic-mayo mixture evenly on top of the filet, the spread should be about a 1/2cm thick throughout.
- Preheat the oven to 450 degrees, and place the filet on the top rack, for 8-10 minutes, taking care not to overcook.
- Turn the oven setting to "Broil" and keep a close eye on the garlic mayo spread; turn off the oven once the garlic and mayo start to brown evenly.
- Season further with salt to taste.
- Serve with potatoes, or steamed rice.
GRILLED SALMON FILETS WITH GARLIC AND HERB AIOLI
Steps:
- For the Salmon Heat grill to medium. Combine the butter, 1/4 cup parsley and salt and pepper well. Shape into a log, wrap in platic and refrigerate while preparing the other ingredients. Make the aioli by combining all the ingredients except salt and pepper in a blender or food processor until mixture is smooth. Check and season with salt and pepper to taste. Prepare the salmon. with a carving knife, make a two-inch pocket slit in the center of the flesh of each salmon filet, carefully cutting at a slight downward angle and not completely slicing through. Stuff each pocket with 1 tbs of the herbed butter and press pocket to close. Drizzle each salmon filet with olive oil and season with salt and pepper. (Save remaining butter to use on pasta and and other roasted vegetables - will keep for about a week.) Place the salmon on a hot, oiled grill and grill skin-side down for about 10 minutes. Gently turn over and continue grilling for an additional 10 minutes or until salmon is still slightly medium doneness. Place each grilled salmon in the center of a plate and drizzle aioli on top and around sides. Garnish with a sprig of parsley and a basil leaf and serve.
LEMON MAYONAISE GRILLED SALMON
Steps:
- wash salmon and remove any skin if you don't like it. Lay the salmon on a suqare piece of aluminum foil with enough excess on each side to be able to fold as a handle. mix Hellman's Mayonaise and the juice of one lemon in a small bowl salt and pepper the salmon then with a spoon, dab the mayonaise and lemon mixture on the salmon and spread it until the fish is completely covered. (You will enjoy it if it is liberally spread on the fish) fold the foil into a package with the excess as a handle. Place on the grill (white hot coals) for 5 minutes, the set aside, open package, turn salmon over and pour remaining mayonaise and lemon juice on the uncooked side. Return to grill for another 3-4 minutes or until fish is flakey. It will be tender, tasty and MOIST!

- Place garlic, paprika, red pepper and salt in blender or processor. Add 1/4 cup mayonnaise. Process until garlic is minced and mixed into sauce. Add remaining mayonnaise and process until smooth.
