This salmon is marinated in a bright, fresh lemon garlic herb marinade then grilled to perfection. It's such a delicious and refreshing salmon recipe and it's perfect for summer!

4 (6 - 7 oz) skinless salmon fillets (*)
1/4 cup fresh lemon juice
1/4 cup olive oil, (plus more for brushing grill)
2 TBSP finely minced fresh parsley, (plus more for garnish)
4 tsp finely minced fresh rosemary
2 tsp finely minced fresh thyme
2 tsp minced garlic ((2 cloves))
2 tsp fresh lemon zest
1 tsp dijon mustard
1 tsp honey
Salt and freshly ground black pepper

Steps:

  • Place salmon in an 11 by 7-inch dish.
  • In a small mixing bowl whisk together lemon juice, olive oil, parsley, rosemary, thyme, garlic, lemon zest, dijon mustard, honey, 1 tsp salt and 1/2 tsp pepper until well combined.
  • Pour mixture over salmon (lift fillets to help marinade run under) then cover and let marinate in refrigerator 30 minutes, turning once halfway through.
  • Preheat grill to medium-high heat during last 10 minutes of salmon marinating.
  • Brush grill grates with oil, spoon some of the herbs onto salmon (or just use your hands to spread them over), remove salmon from marinade and place on grill.
  • Grill about 3 - 5 minutes per side to cook through.
  • Serve warm garnished with more parsley if desired.

1 1/2 pound side of salmon (skin off or on)
1 small bunch of fresh dill (divided)
1 medium lemon (plus additional for serving)
2 tablespoons melted unsalted butter (or canola oil or olive oil)
3 cloves minced garlic
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Remove the salmon from the refrigerator and let stand at room temperature for 10 minutes while you prepare the other ingredients. Preheat an outdoor grill to medium (about 375 degrees F). Line a rimmed baking sheet (large enough to hold your piece of salmon) with a large piece of aluminum foil. If you prefer your food not to touch the foil directly, lay a piece of parchment paper on top (be sure none of it pokes out when the packet is sealed).
  • Lightly coat the foil with baking spray. Then, arrange a few sprigs of dill down the middle. Cut the lemons into thin slices and arrange half of the slices down the middle with the dill. Place the salmon on top.
  • Drizzle the salmon with the melted butter. Sprinkle with the salt and pepper. Scatter the garlic over the top, then lay a few more springs of dill and the remaining lemon slices on top of the salmon. Chop a tablespoon or so of the remaining dill and reserve for serving.
  • Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed. If your piece of foil is not large enough, place a second piece on top and fold the edges under so that it forms a sealed packet. Leave a little room inside the foil for air to circulate.
  • Carefully slide the wrapped salmon onto the grill. Close the grill and grill the salmon for 14-18 minutes, until the salmon is almost completely cooked through at the thickest part. The cooking time will vary based on the thickness of your salmon side. If your piece is thinner (around 1-inch thick) check several minutes early to ensure your salmon does not overcook. If your piece is very thick (1 1/2 inches or more), it may need longer.
  • Open the grill, and carefully open the foil so that the top of the fish is completely uncovered (be careful of hot steam). Close the grill, and continue grilling until the fish is cooked through completely, about 3 minutes more. Watch the salmon closely to make sure it doesn't overcook. Remove the salmon from the grill (I like to use the foil to lift it right back on top of the baking sheet). If it still appears a bit underdone, you can wrap the foil back over the top, and let it rest for a few minutes. Do not let it sit too long-salmon can progress from "not done" to "over done" very quickly. As soon as it flakes easily with a fork, it's ready.
  • To serve, cut the salmon into portions. Remove the topmost sprigs of dill and discard. Sprinkle with freshly chopped dill and top with an extra squeeze of lemon as desired.

2 tablespoons finely chopped shallots
1/4 cup dry white wine
3 tablespoons fresh lemon juice
6 tablespoons cold butter
1 tablespoon chopped fresh dill

1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 lb. salmon fillets, cut into 4 pieces
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat gas or charcoal grill. In small saucepan, combine shallots, wine and 3 tablespoons lemon juice. Bring to a boil over medium-high heat. Reduce heat to medium; cook 5 to 7 minutes or until mixture is reduced to about 2 to 3 tablespoons, stirring occasionally.
  • Remove from heat. Stir in cold butter 1 tablespoon at a time until each is well blended. Stir in dill, chives and 1/8 teaspoon pepper. Cover to keep warm.
  • In small bowl, combine oil and 1 tablespoon lemon juice; mix well. Brush over salmon fillets. Sprinkle with salt and 1/4 teaspoon pepper.
  • When grill is heated, place salmon, skin side up, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 10 minutes or until fish flakes easily with fork, turning once and brushing occasionally with any remaining oil mixture. If necessary, reheat butter sauce over very low heat, stirring constantly. Serve salmon with butter sauce.

4 pieces salmon fish
20 asparagus 6-8" spears (trimmed pieces)
1 zucchini (cut into ribbons)
1 tablespoon BBQ Grill Dry Rub
1 tablespoon olive oil
1 fresh lemon (cut into 1/4" half-round slices )
1/2 cup butter softened (salted or unsalted butter)
2 tablespoons fresh dill chopped
1/2 teaspoon salt (kosher sea salt)
1 lemon fresh lemon juice and zest

Steps:

  • In a small bowl, place the room temperature soft butter, zest of one fresh lemon, one squeeze of lemon juice, and a pinch of salt. Mix until combined using a small spatula, place on a piece of plastic wrap or parchment paper.
  • Push the lemon dill butter into a long roll shape using the plastic wrap or paper to get it about an inch wide in a long roll. Twist the ends closed. Place in fridge to firm up and use that day. Slice into coins, and serve over grilled fish, potatoes, or asparagus. Will keep in the freezer for up to two months. Wrap well and store in a freezer zip top bag.
  • Soak cedar wraps/butcher string or cedar planks for 20 minutes in cool water. This prevents them from catching on fire while grilling. Slice lemons in 1/4" half rounds. Peel the zucchini using a potato peeler then cut wide ribbons down the full length of the zucchini using a potato peeler.
  • On a plate, drizzle a little olive oil on cleaned asparagus and microwave for 15-30 seconds. This pre-cooks the asparagus perfectly.
  • In cedar wraps: on the diagonal, lay a piece of salmon skin side down, sprinkle on spice rub, and layer with asparagus, zucchini ribbons, and lemon slices. Tie with butcher string that was soaked in cold water.
  • On the cedar plank: place cedar plank down, then lay a piece of salmon skin side down, sprinkle spice rub, and layer with asparagus, zucchini ribbons, and lemon slices.
  • Heat the grill to medium heat, so the temperature of your gas grill reaches 450 degrees.
  • Cook for 7-8 minutes grill time until salmon is cooked through. It will turn to a lighter color and 145 degrees internal temperature on a meat thermometer. Salmon cooks very fast on an outdoor grill, so keep an eye on it. You can also add a few wood chips to add additional smoke flavor.
  • Serve this easy grilled salmon warm with lemon butter.

  • Set up grill for indirect cooking and heat to medium-high. Clean and lightly oil hot grill. Season fish with salt and pepper. 1 lemon, juice of

  • Soften one stick of butter and mix with garlic.
  • Either process in blender or food processor; or if doing by hand use garlic press and whisk really well with fork.
  • Gradually add as much lemon juice as butter will hold.
  • Quit adding when butter won't absorb any more.
  • Add salt and pepper to taste.

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).

  • Turn fillets over and grill (covered only if using gas grill) until just cooked through, 4 to 6 minutes more.

1 stick unsalted butter, at room temperature
2 teaspoons lemon zest
2 teaspoons lime zest
Four 6-ounce fillets center-cut salmon, skin removed
Kosher salt and freshly ground black pepper

Steps:

  • Add the softened butter to a mixing bowl and stir until smooth. Add the lemon and lime zest and sprinkle with salt and pepper. Blend all the ingredients until smooth and completely mixed.
  • Place a sheet of plastic wrap out on your workspace. Spread the butter across the plastic wrap and roll into a log, twisting the ends to seal. Place in the refrigerator for 30 minutes to chill. This will give you a nice clean round of butter to top the fish with. Alternatively, you can leave the butter in a small bowl and dollop the butter on top of the fish once it's grilled.
  • Preheat your grill to medium-high heat.
  • Sprinkle the salmon on both sides with salt and pepper. Oil the grill grates with a clean tea towel. Grill the salmon for 4 minutes, and then flip and cook the second side for another 4 to 5 minutes. Transfer to a platter. Top each fillet with a slice of the citrus butter while the fish is still hot so it melts right over the top.

2 Meyer lemons, zested
1/2 bunch dill, finely chopped
1/2 bunch thyme, picked and finely chopped (lemon thyme is even better)
1 small clove garlic, smashed and finely chopped

4 (6-ounce) salmon fillets, skin-on
Extra-virgin olive oil

Steps:

  • In a small bowl, combine the butter, zest, herbs and garlic. Mix until everything is well mixed. Season, to taste, with salt. If using right away, keep the butter at room temperature. If making ahead, reserve in the refrigerator and bring to room temperature before using.
  • Preheat grill to medium.
  • Remove the salmon from the refrigerator and let come to room temperature. Season with salt and coat with olive oil. Brush and oil the grill. Place the salmon, skin side down, on the clean, preheated grill. After 2 to 3 minutes, rotate the salmon 90 degrees to create cross-hatch grill marks on the salmon skin. Cook the salmon for another 3 to 4 minutes. As the salmon cooks it will turn from translucent orange to opaque pink.
  • Turn the salmon over and cook for another 2 to 3 minutes. If the salmon starts to burn, or the flames flare up move the fish to a cooler part of the grill.* Remove from the grill and top with the room temperature compound butter. The butter should act as a sauce and melt over and coat the grilled salmon.
  • What a delish fish!
  • *Tip: It is a general rule to cook fish for 8 minutes per inch of thickness. I like salmon cooked to about medium, so I cook mine for a little less.
