1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1 lime (zested and sliced)

Steps:

  • Preheat oven to 400°F Line a baking sheet with foil for easy cleanup.
  • Mix together olive oil, chili powder, paprika, garlic powder and lime zest.
  • Season the salmon filet with salt. Brush with chili lime sauce, then scatter lime slices on top.
  • Bake for 15-20 minutes until the internal temperature reaches 145°F or the salmon flakes easily with a fork. Squeeze fresh lime juice over just before serving.

I came up with this marinade after tasting something similar at a friend's house and it is now one of our favorite ways to do fish. You may also use other firm fish steaks instead of salmon; halibut, tuna and swordfish all work well.

¼ cup fresh lime juice
1 tablespoon olive oil
2 teaspoons Dijon mustard

6 (6-oz) pieces center-cut salmon fillet (about 1 inch thick) with skin
1 1/2 teaspoons finely grated fresh lime zest
6 tablespoons lime butter sauce

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).
  • Season salmon all over with salt and pepper, then grill, flesh sides down, on lightly oiled grill rack (covered only if using gas grill) 4 minutes. Turn fillets over and grill (covered only if using gas grill) until just cooked through, 4 to 6 minutes more. Sprinkle fillets with zest and top each with 1 tablespoon lime butter sauce.

4 salmon fillets
knob of butter
6 spring onions , finely sliced
1 large red chilli , halved, deseeded and finely chopped
zest and juice 1 lime
small bunch coriander , chopped

Steps:

  • Heat the oil in a large frying pan and cook the salmon, skin side down, for about 5-6 mins until the skin is crispy and golden. Turn the salmon fillets carefully, then cook for a further 2 mins. Remove from the pan and set aside.
  • Tip the butter in the pan and, when melted, add the spring onions, chilli and lime zest to sizzle in the butter for 2 mins, then add the lime juice. Spoon the chilli and lime butter over the salmon. Scatter with the coriander and serve with boiled rice.

lemon pepper to taste
garlic powder to taste

⅓ cup soy sauce
⅓ cup brown sugar

3 pounds whole salmon, cleaned
¼ cup soy sauce
1 tablespoon chile sauce
1 tablespoon chopped fresh ginger root
1 clove garlic, chopped
1 lime, juiced
1 lime, zested
1 tablespoon brown sugar
3 green onions, chopped

Steps:

  • Prepare outdoor grill for high heat.
  • Trim the tail and fins off of the salmon. Make several shallow cuts across the salmon's skin. Place salmon on 3 large, slightly overlapping sheets of aluminum foil.
  • In a bowl, stir together soy sauce, chile sauce, ginger, and garlic. Mix in lime juice, lime zest, and brown sugar. Spoon sauce over the salmon.
  • Fold the foil over the salmon, and crimp the edges to seal.
  • If using hot coals, move them to one side of the grill. Place the fish on the side of the grill that does not have coals directly underneath it, and close the lid. If using a gas grill, place the fish on one side, and turn off the flames directly underneath it; close the lid. Cook for 25 to 30 minutes. Remove to a serving platter, and pour any juices that may have collected in the foil over the top of the fish. Sprinkle with green onions.

6 garlic cloves , unpeeled
1 small onion , cut into thick slices
1 ancho chilli or large red dried chilli, deseeded and trimmed
4 tbsp soft brown sugar
4 tbsp cider vinegar
4 x 150g skinless salmon fillets
1 lime , zested, then cut into wedges
200g crème fraîche or soured cream
chopped coriander , to serve (optional)

Steps:

  • Blacken the whole garlic and the onion slices on all sides in a large, dry non-stick frying pan. Remove, cool briefly, then peel the garlic cloves. Soak the ancho chilli in boiling water for 15 mins, drain, then place in a blender with the sugar, cider vinegar, garlic, onion and some salt and pepper. Whizz to a smooth sauce.
  • Heat the grill. Brush each salmon fillet liberally with the sauce and save any remaining. Grill for 8 mins. Meanwhile, mix the lime zest with the crème fraîche. Serve the fish with extra chilli sauce, a dollop of the crème fraîche and lime wedges for squeezing over. Sprinkle with coriander, if you like, and serve with green beans or rice and a salad.

Chili Lime Salmon baked in foil on a one sheet pan is fresh, flavorful and super delicious! This low carb, paleo & keto friendly recipe is made with tangy lime, chili powder, and fresh parsley.

1 large 1-1/2 - 2 pound salmon fillet (or 4 salmon (4-6 ounce) fillets, skin on)
1/2 Tablespoon olive oil
1/2 teaspoon sea salt (or to taste)
1/4 teaspoon freshly cracked black pepper (or to taste)
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika
1/4 teaspoon cumin
2 Tablespoons low sodium soy sauce* (can substitute with gluten free tamari or coconut aminos for paleo-friendly version)
3 tablespoons fresh lime juice
2-3 tablespoons honey
2-3 tablespoons fresh chopped cilantro (or parsley, divided)
lime slices (for garnish)
1 large bunch of asparagus (ends trimmed)
1 cup broccoli florets
1 Tablespoon olive oil
salt and black pepper (to taste)

Steps:

  • Preheat oven to 400 degrees F (see below for grilling**). Line a baking sheet with a large sheet of parchment paper or heavy-duty aluminum foil. Lay salmon on top and drizzle with oil. Season with salt and pepper. Rub chili powder, smoked paprika and cumin on salmon and slide lime slices halfway underneath the salmon, as pictured.
  • In a medium bowl, whisk together soy sauce, lime juice, and honey and drizzle evenly over salmon. Sprinkle with half of the cilantro, fold parchment paper or foil sides up to prevent juices from leaking through (does not have to cover salmon). (Let the salmon marinate for at least 15 minutes if you have time.)
  • For a complete meal with vegetables (omit this step if not making vegetables) - spread sheet pan with asparagus and broccoli florets and drizzle with 1 tablespoon of olive oil, salt, and pepper, to taste. Bake in preheated oven for 10 minutes. Remove from oven and move the vegetables to the side, making room for the salmon. Place the salmon in the middle of the sheet pan and slide lime slices underneath the salmon. Place another sheet of foil loosely over the salmon
  • Bake for 12-16 minutes (depending on how large your fish is), or until the salmon is flaky to your desired doneness but try not overcook. Open the foil and turn oven to broil - cooking for an additional 2-4 minutes, or until caramelized and slightly charred.
  • Cut into sections and discard skin and serve immediately with more chopped parsley, season with more salt (if needed) and a splash of lime

2 tablespoons coarsely chopped fresh ginger
1 tablespoon chopped garlic

1 1/4 lbs salmon fillets
1/4 cup fish sauce
3 tablespoons freshly-squeezed lime juice
2 tablespoons water
2 tablespoons sugar
1/4 teaspoon chili-garlic sauce
1 tablespoon thinly sliced green onion

Steps:

  • To marinate the fish, combine the oil, ginger, garlic, shallots, fish sauce, soy sauce, and sugar in a medium bowl; stir until sugar is dissolved and everything is mixed well.
  • Place the salmon fillets in the bowl and turn to coat with the marinade (or put the salmon in a zip lock bag, add the marinade, squeeze out air, and seal).
  • Cover and set aside for 20 to 30 minutes, or cover and refrigerate for up to 1 day.
  • To prepare the sauce, combine all ingredients listed for the sauce in a small bowl; stir to dissolve the sugar and mix everything well.
  • To cook the fish, build a hot charcoal fire or preheat a gas grill.
  • Place the fish carefully on the grill for about 5 minutes on each side, depending on the thickness of the fish and how well you like it done.
  • Transfer to a serving platter alongside the Chili-Lime Sauce and serve hot or warm.
  • Note: To bake in the oven, preheat oven to 375F and bake for about 15 minutes.
