MARINATED GRILLED SALMON

Steps:
- Place marinade in a ziplock bag and mix to combine.
- Add salmon and massage to coat. Marinate for 3 - 24 hours (1 hr minimum).
- Take out of fridge 30 minutes prior to cooking.
- Remove salmon onto plate, allowing excess marinade to drain off.
- Pour remaining marinade into a small saucepan and simmer over medium high for 3 to 5 minutes until syrupy.
- Pour into bowl/jug (some used for basting, some for serving).
- Brush BBQ grills with oil. Then preheat to medium (or medium low for strong BBQ's).
- Drizzle salmon with oil, the place onto the BBQ flesh side down (skin side up).
- Cook for 3 minutes or until golden, then use tongs to carefully turn.
- Brush the flesh with Sauce, then close BBQ lid.
- Cook for 3 - 4 minutes, basting one more time halfway through, or until the internal temperature is 50C/120F(medium rare) or 55C/130F (medium).
- Transfer salmon to plate and serve with remaining Sauce.

GRILLED SALMON, NORTHWEST STYLE
This is an original recipe of mine. The smoke flavor is delicate, the fish is moist, and it is great served hot or at room temperature - marvelous for entertaining. Leftovers are delicious as part of a main dish salad, and are equally good in a sandwich with lettuce, tomato, and country bread spread with a basil and lemon-seasoned mayo/sour cream mixture. Directions are for charcoal grilling because I like the flavor, but this can be prepared on a gas grill as well.

Steps:
- In a bowl, cover wood chips with water.
- Ignite charcoal (25 per side for 22" Webber Grill) for indirect cooking.
- Let coals burn down until completely covered with gray ash.
- Using a double thickness of heavy-duty foil, make a boat big enough to hold the fish.
- Poke holes in the bottom of the foil so barbeque flavors can penetrate bottom of the fish.
- Lay salmon on foil, flesh side up.
- Drizzle filet (s) with melted butter, using all of it.
- When coals are ready, scatter drained wood chips on top of them.
- Place salmon on grill.
- Cover barbeque; close top dampers halfway, leave bottom dampers open.
- Cook for 20-25 minutes, until fish is done to your liking.

- While the grill preheats, in a shallow dish mix together 4 cups room temperature water and 3 tablespoons kosher salt. Place the salmon in the water and wait for 15 minutes (this should be about the time it takes to preheat).
- Pat the salmon dry with a clean towel. Rub it generously with oil and sprinkle it with the kosher salt and seasoning blend (or simply salt and pepper).

- Rub each piece of salmon with olive oil and sprinkle with house seasoning, to taste (I use about 1 teaspoon of olive oil and ¼ teaspoon of seasoning per piece).
- Heat coals, gas grill, or grill pan to medium heat. Place salmon on the grill. Cover and grill over medium heat for about 5 minutes per side (maybe a few more minutes, depending on the thickness of your fish). The salmon is done when it flakes easily with a fork.
