ANNE'S FABULOUS GRILLED SALMON

Anne's Fabulous Grilled Salmon image

This is a grilled salmon recipe that is used at the Saint Matthew Parish picnic every year in Seattle, Washington. It works well with any cut of salmon for grilling, however we typically use salmon fillets. Use wild sockeye or king salmon.

Provided by Esmee Williams

Categories     Main Dish Recipes     Seafood Main Dish Recipes     Salmon     Salmon Fillet Recipes

Time 1h5m

Yield 6

Number Of Ingredients 9

1 tablespoon vegetable oil
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
1 lemon, juiced
½ teaspoon grated fresh ginger root
2 tablespoons honey
⅓ cup chopped fresh basil leaves
1 tablespoon finely chopped shallots
1 (3 pound) salmon fillet, with skin

Steps:

  • Make a pan out of aluminum foil by doubling up layers of foil large enough to hold your fillet. Place the foil onto a cookie sheet. Lay the fillet onto the foil with the skin side down. In a small bowl, stir together the oil, soy sauce, Worcestershire sauce, lemon juice, ginger, honey, basil and shallots. Pour over the salmon and let it marinate while you preheat the grill, about 20 minutes.
  • Preheat a grill for medium-low heat. Slide the foil with the salmon off of the cookie sheet and onto the grill. Cover with the lid and grill the fillet for 10 minutes per inch of thickness, about 20 minutes. Salmon should be able to flake with a fork, but not be too dry. When you serve the salmon, the skin will stick to the foil and your grill will remain clean. Simply slice and use a spatula to scoop the fillet off of the skin to serve.

GRILLED SALMON TERIYAKI WITH CUCUMBER SALAD

Grilled salmon teriyaki with cucumber salad image

Salmon fillets are cooked straight from frozen for convenience - the sticky glaze helps to keep the fish moist while it cooks

Provided by Barney Desmazery

Categories     Dinner

Time 30m

Number Of Ingredients 12

1 tbsp sunflower oil
5 tbsp soy sauce
5 tbsp mirin or dry sherry
1 tbsp golden caster sugar
1 piece fresh root ginger , peeled and finely grated
2 garlic cloves , crushed to a paste
4 frozen boneless, skinless salmon fillets
1 small cucumber
1 tbsp rice wine vinegar
1 tbsp soy sauce
½ tsp golden caster sugar
1 tbsp toasted sesame seeds

Steps:

  • Heat the grill to high and brush a sturdy baking tray with oil. In a large bowl, mix the soy, mirin, sugar, ginger and garlic together until the sugar has dissolved, then toss the frozen salmon in the soy mix until coated. Tip the remaining marinade into a small saucepan and bring to a simmer.
  • Place the tray about 4in away from the heat, then grill for 20 mins. Brush the fish every few mins with the simmering marinade until cooked through and glazed. If the fillets are thick, you may need to turn them on their sides so they cook evenly. Remove from the grill. Simmer the marinade until sticky, then pour it over the cooked salmon.
  • For the cucumber salad, use a swivel blade peeler to peel the cucumber into slices. Make the dressing by mixing the vinegar with the soy sauce, sugar and sesame seeds. Toss the cucumber with the dressing and serve with the salmon and boiled rice.

  • Whisk together the marinade ingredients (soy sauce, oyster sauce, and honey) in a 9x12 baking pan or other pan appropriate for marinating the salmon. Clean the salmon, dry with paper towels, sprinkle with kosher salt, and cut the fillet into 4-6 equal servings. Place the pieces skin side up in the marinade. Do not submerge the skin in the marinade, but dip the other two sides in so all the non skin sides are covered in marinade. Refrigerate for 20 minutes or more.
  • Turn the grill burners to high, cover, and heat grill until hot, about 5-10 minutes depending on your grill. Clean cooking grate, then oil it well with spray oil or with oil on a paper towel. Remove salmon from marinade and season with black pepper. Place fish flesh side down on the grill with fillets diagonal to grate. Cover the grill and cook until grill marks form, about 2 minutes.
  • Carefully flip fish so skin side is down, reduce heat to Medium-high, brush with glaze, and cook another 5 minutes with grill covered.
