GRILLED PIZZA

Time 10h

Yield 2 (10-inch) pizzas; dough for 3 pizzas

Number Of Ingredients 22

4 1/2 cups unbleached all-purpose flour, plus more for dusting the work surface
1 tablespoon salt
1 tablespoon sugar
2 teaspoons instant yeast
3 tablespoons olive oil
15 ounces lukewarm water
Nonstick cooking spray
Semolina flour, for dusting the pizza peel
1/2 cup ricotta cheese
1/2 cup grated fontina cheese
1 teaspoon fresh thyme leaves
1 teaspoon minced rosemary
2 tablespoons honey
Salt and pepper
Extra-virgin olive oil, for brushing the crust
4 thin slices prosciutto
2 cups baby arugula
Extra-virgin olive oil, for brushing the crust
1/4 cup marinara or pizza sauce
6 ounces fresh mozzarella, sliced into 1/4-inch-thick rounds and torn
2 tablespoons grated Parmigiano-Reggiano
Fresh basil leaves, torn, for garnish

Steps:

  • For the pizza dough: Place the all-purpose flour, salt, sugar and yeast in the bowl of a food processor and pulse to combine. With the motor running, slowly add the olive oil and water; once added, continue mixing for 1 minute.
  • Transfer the dough to a work surface and knead until smooth.
  • Divide the dough into 3 even pieces and form into balls. Spray with cooking oil and then place in a large resealable plastic bag. Refrigerate overnight or up to 4 days for best flavor. (See Cook's Note.)
  • When ready to bake, transfer each dough ball to a lightly oiled bowl, cover and set aside until doubled in size, about 1 hour.
  • Make the pizza pies: Preheat a gas grill to 500 degrees F or get a charcoal grill as hot as you can. Lightly dust a work surface with all-purpose flour.
  • For each pizza: Gently flatten a piece of dough with the palm of your hand and then roll it into a 10- to 11-inch round, about 1/8 to 1/4 inch thick. Don't worry if it's not perfectly or even barely round; just make sure it's of uniform thickness (even if it's the shape of a beaver tail!).
  • Sprinkle a pizza peel with semolina flour and transfer the stretched dough to the peel. (If you don't have a peel, use the back of an upturned sheet pan instead.) Slide the dough directly onto the grill. Cook until golden grill marks appear, about 1 minute per side; use tongs to flip.
  • For the white pizza: In a small bowl, mix together the ricotta and fontina cheeses along with the thyme, rosemary, honey and some salt and pepper. Brush a grilled crust with olive oil. Spread with the cheese mixture in an even layer. Use the peel to return the pizza to the grill. Cover and cook for about 3 minutes, until the cheese is completely melted and the crust is fully browned. Remove from the grill and top with the prosciutto and arugula.
  • For the margherita pizza: Brush a grilled crust with olive oil and spread evenly with the marinara sauce. Top with the torn mozzarella and sprinkle with the Parmigiano-Reggiano. Use the peel to transfer the pizza to the grill. Cover and cook until the cheese is melted and the crust is golden brown. Remove from grill and top with torn basil.

PIZZA ON THE GRILL I

Pizza On The Grill I image

Even with a baking stone, a conventional oven is no match for a professional oven when it comes to making pizza. At home, or rather in your backyard, the grill is the way to go. The heat of a hot grill is perfect, and makes it possible to make incredible pizza at home. Use your favorite toppings, but keep in mind not to overload the pizza. Keep it light. Time 3h

Yield 16

Number Of Ingredients 16

1 (.25 ounce) package active dry yeast
1 cup warm water
1 pinch white sugar
2 teaspoons kosher salt
1 tablespoon olive oil
3 ⅓ cups all-purpose flour
2 cloves garlic, minced
1 tablespoon chopped fresh basil
½ cup olive oil
1 teaspoon minced garlic
¼ cup tomato sauce
1 cup chopped tomatoes
¼ cup sliced black olives
¼ cup roasted red peppers
2 cups shredded mozzarella cheese
4 tablespoons chopped fresh basil

Steps:

  • In a bowl, dissolve yeast in warm water, and mix in sugar. Proof for ten minutes, or until frothy. Mix in the salt, olive oil, and flour until dough pulls away from the sides of the bowl. Turn onto a lightly floured surface. Knead until smooth, about 8 minutes. Place dough in a well oiled bowl, and cover with a damp cloth. Set aside to rise until doubled, about 1 hour. Punch down, and knead in garlic and basil. Set aside to rise for 1 more hour, or until doubled again.
  • Preheat grill for high heat. Heat olive oil with garlic for 30 seconds in the microwave. Set aside. Punch down dough, and divide in half. Form each half into an oblong shape 3/8 to 1/2 inch thick.
  • Brush grill grate with garlic flavored olive oil. Carefully place one piece of dough on hot grill. The dough will begin to puff almost immediately. When the bottom crust has lightly browned, turn the dough over using two spatulas. Working quickly, brush oil over crust, and then brush with 2 tablespoons tomato sauce. Arrange 1/2 cup chopped tomatoes, 1/8 cup sliced black olives, and 1/8 cup roasted red peppers over crust. Sprinkle with 1 cup cheese and 2 tablespoons basil. Close the lid, and cook until the cheese melts. Remove from grill, and set aside to cool for a few minutes while you prepare the second pizza.

ROSEMARY CHICKEN & POTATO PIZZA

Rosemary Chicken & Potato Pizza image

Don't let the long list of ingredients scare you off. Most people have all of these items in their cupboard, and the various steps can be accomplished far ahead and the pizza can be assembled right before dinner. I usually make the toppings the morning I'm making this. If you love roast chicken and potatoes, try this - you'll love it.

Categories     Chicken

Time 1h20m

Yield 1 large pizza

Number Of Ingredients 25

5 tablespoons unsalted butter
1/4 cup minced shallots or 1/4 cup onion
4 minced garlic cloves
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme
1/4 teaspoon salt
1 pinch fresh ground pepper
1/3 cup chicken stock
1 tablespoon lemon juice (fresh)
3/4 lb small small red potato, sliced in 1/8 inch slices
2 garlic cloves, minced
1 teaspoon choplped fresh oregano or 1/2 teaspoon dried oregano
2 teaspoons chopped fresh rosemary or 1 teaspoon dried rosemary, crushed
1/4 teaspoon fresh ground pepper
1 teaspoon kosher salt
2 tablespoons olive oil
1 garlic clove, minced
1 teaspoon soy sauce
1/2 teaspoon kosher salt
2 tablespoons olive oil
3/4 lb boneless skinless chicken breast
1 pizza dough
1 1/2 cups shredded mozzarella cheese
2 teaspoons chopped fresh rosemary
3 teaspoons chopped fresh oregano
4 teaspoons chopped fresh parsley

Steps:

  • To make Garlic-Shallot Butter: Melt 1 tablespoon butter in a non-stick saucepan over medium-high heat.
  • Add the shallot, garlic and thyme and cook, stirring occasionally, until the shallot softens and begins to turn golden brown.
  • Add the salt and pepper, the stock and lemon juice.
  • Cook until the mixture is reduced to 1/2 cup (toward the end of the reduction reduce the heat to low and stir frequently to prevent scorching).
  • Remove the pan from the heat.
  • Quickly whisk in the remaining butter.
  • Set aside.
  • To make the potatoes: Preheat the oven to 325°F.
  • Combien the potatoes with the remaining ingredients and toss to coat thoroughly.
  • Transfer the slices to a sheet pan and spread them out in a single layer- do not overlap.
  • Discard the leftover marinade- do not pour over the potatoes.
  • Bake the potatoes for about 45 minutes.
  • Some of the slices may need to be flipped over to promote even browning.
  • Remove the potatoes from the oven when they begin to brown.
  • Use a steel spatula to remove the potatoes from the pan (so they don't stick) and let them cool to room temperature.
  • Do not refrigerate.
  • To make the chicken: Combine the garlic, soy, salt and olive oil.
  • Marinate the chicken in this mixture for about 15 minutes.
  • Grill (or cook on the stovetop) until done, about 5 to 7 minutes per side.
  • Remove the chicken, let rest 10 minutes, then cut into cubes and set aside.
  • To make the pizza: Preheat the oven to 500°F If using a pizza stone or tiles put them in the oven now.
  • Spread 2 tablespoons of the garlic shallot butter over the surface.
  • Cover the butter with the mozzerella, then the chicken; sprinkle with the rosemary, then the oregano, then layer the potatoes on top.
  • Bake the pizza until crisp and golden and the cheese at the center is bubbly, about 8 to 10 minutes.
  • When done, sprinkle the parsley over top, slice and serve.

Yield Makes four 8-inch pizzas

Number Of Ingredients 8

Dough
1 cup warm water (105°F to 115°F)
1 tablespoon sugar
1 envelope dry yeast
3 tablespoons olive oil
3 cups (or more) all purpose flour
1 1/2 teaspoons salt
1 tablespoon chopped fresh rosemary

Steps:

  • Combine water and sugar in a food processor. Sprinkle yeast over; let stand until foamy, about 10 minutes. Add oil, then 3 cups flour and salt. Process until dough comes together, about 1 minute.
  • Turn dough out onto floured work surface. Sprinkle with rosemary. Knead until dough is smooth and elastic, adding more flour by tablespoonfuls if dough is sticky, about 5 minutes.Lightly oil large bowl. Add dough; turn to coat with oil. Cover bowl with plastic, then towel. Let stand in warm draft-free area until dough doubles, about 1 hour. To test that the dough has risen sufficiently, push two fingers into it. The depressions should remain.
  • Punch down dough. Knead dough in bowl until smooth, about 2 minutes. Divide dough into 4 equal pieces. Stretch out each piece on floured surface to 9-inch round. To prevent the dough from sticking as you stretch it, use flour sparingly; too much will result in a tough crust.
  • Toppings
  • 3/4 cup olive oil
  • 6 tablespoons balsamic vinegar
  • 3 tablespoons minced garlic
  • 2 tablespoons chopped fresh rosemary
  • 1 pound spicy Italian sausages
  • 2 yellow or red bell peppers, cored, lengthwise
  • 1 large red onion, peeled, cut through root end into 1/2-inch thick wedges
  • Whisk first 4 ingredients in medium bowl. Let vinaigrette stand 15 minutes at room temperature or refrigerate up to 2 hours.
  • Prepare barbecue (medium heat). Arrange sausages, peppers and onion on baking sheet. Brush with some of vinaigrette. Sprinkle with salt and pepper. Grill sausages until cooked through and peppers and onion until slightly charred and crisp-tender, turning and basting occasionally, about 12 minutes for sausages and 8 minutes for peppers and onion.
  • Transfer sausages and vegetables to cutting board. Cut sausages into 1/2-inch pieces and peppers into thin strips.
  • Final preparation
  • 2 cups grated mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups crumbled chilled soft fresh goat cheese (such as Montrachet)
  • 4 plum tomatoes, halved, seeded, chopped
  • 3/4 cup chopped green onion tops Add coals to barbecue if necessary. Place 2 dough rounds on grill. Grill over medium heat until top of dough puffs and underside is crisp, about 3 minutes. Turn rounds over. Grill 1 minute. Transfer to baking sheet with well-grilled side up. This side of the dough becomes the surface that will hold the toppings.
  • Repeat with the remaining 2 dough rounds. Sprinkle each with 1/4 of mozzarella and Parmesan. Top each with 1/4 of sausage, peppers and onion, then with 1/4 of goat cheese, tomatoes and green onions. Drizzle each with 1 1/2 teaspoons vinaigrette.
  • Using large metal spatula, return 2 pizzas to grill. Close grill or cover pizzas loosely with foil. Grill until cheeses melt and dough is cooked through and browned, using tongs to rotate pizzas for Transfer to plates. Repeat grilling for remaining 2 pizzas.

  • Preheat your grill to be about 500 degrees. I use a gas grill and pay attention to the thermometer on the lid of the grill. The grill itself will be hotter than 500 degrees, but that's a good benchmark to look for before adding your dough.
  • Stretch out your pizza dough into the shape and size you want and either place or slide* onto the grill, being sure to avoid known hot spots.
  • Cover and cook your crusts until they are puffed, bubbly and have grill marks and a few charred spots, about 2 minutes. It should release from the grill easily for flipping.
  • Flip your pizza and quickly add sauce, cheese and any desired toppings. Cover and cook another 2-3 minutes or until cheese has melted completely and bottom of crust has grill marks and a few charred spots.
