Steps:
- In a medium sauce pan over medium heat, combine all ingredients for the bbq sauce. Bring to a boil, reduce to low and simmer for 5 minutes, stirring throughout. Reduce from heat and set aside.
- Preheat grill to medium and oil the grates.
- Season pork chops generously with salt and pepper on both sides.
- Place pork chops on the grill, cook for 2-3 minutes, then turn over and brush bbq sauce all over the tops and sides of the pork chops. Cook another 5-7 minutes, then turn and brush bbq sauce all over the tops and sides again.
- Cook 5-7 minutes longer until internal temperature reaches 140 degrees F or there is no longer any pink in the center. Allow to rest on a plate or cutting board - covered - for at least 5 minutes before serving - this is KEY to keeping the pork chops nice and juicy.
- Serve with remaining bbq sauce. Enjoy!

BASIC GRILLED RIBEYE STEAK
While not nearly as numerous as cuts of beefsteak, grills have a decent amount of variety to their design. The point of a grill is to generated enough heat to cook food. There are three main types of grill, charcoal-fueled, gas-powered, which includes infrared models; and electrical. It is also worth mentioning that hybrid grills, those that can use either charcoal or gas, also exist.

Steps:
- Preheat the grill to high, feel free to start up your sear station/burner if you have one. In instances where your sear kit is over 1", get one side going at medium-high as a precaution.
- Give your steaks some love with a massage of olive oil and a liberal coating of salt and pepper.
- The olive oil will give you just enough fat that the reaction of heat, salt and pepper will yield a spectacular crust.
- Give your grill grates a cleaning, followed by lubricating them with a paper towel soaked in olive oil.
- Place the steaks on the hottest area of the grill, or the sear burner.
- Keep your tongs handy and watch for flare-ups as a result of the steaks' fat dripping down into heat.
- If you experience a lingering flare-up, one lasting more than a handful of seconds, use the tongs to move the steaks away from the flames until they die down, then return them to where they were.
- Continue grilling with the lid up for around 4-6 minutes.
- Turn the steaks over to their other side, keeping them in the same spot on your grill.
- Continue grilling with the lid up for around 4-6 minutes.
- Remove the steaks from the grill and give them 5 minutes for the juices to settle and cool a bit.
- Serve.

- Stir the brine ingredients until the salt and sugar dissolve, then pour over the ribeye pork chops. Refrigerate the chops for one to four hours.
- Prepare the grill for two-zone high heat (450°F): Prepare the grill for cooking with two zones – one on high heat, the other with no heat, then clean with a grill brush. For my Weber summit, I preheat the grill with all burners on high for 15 minutes, then turn half the burners off and brush the grill grate clean.
- While the grill is heating, mix the spice rub ingredients in a small bowl. Remove the ribeye pork chops from the brine and pat dry with paper towels, then sprinkle the chops with a heavy coating of spice rub.
- Put the pork chops on the grill over direct high heat. Cook until the chops are starting to brown on the bottom, about 2 minutes, then flip the chops, and cook until brown on the other side, about 2 more minutes. Flip the chops again and rotate 90 degrees to get a crosshatch of grill marks, another 2 minutes. Flip and get a crosshatch of grill marks on the other side, 2 more minutes. Move the chops to the indirect heat side of the grill with the bones facing the fire, and cook with the lid closed until the chops reach 145°F in their thickest part, about 4 more minutes.

- In a gallon-size freezer bag, mix salt with warm water until the salt dissolves. Whisk in apple cider vinegar, brown sugar and ice. Add the pork and seal (make sure all the chops are submerged).
- Brine for 20-30 minutes at room temperature or up to 4 hours in the refrigerator. Don’t brine any longer or the pork can become mushy. If making homemade barbecue sauce, you can make it while the pork chops are brining. Remove pork from brine and thoroughly rinse in cool water. Pat dry.
- Lightly drizzle and rub the top side of the pork chops with olive oil then season and rub with half of the spice rub; repeat with the other side. Let pork chops sit at room temperature for 30 minutes if they have been refrigerated in the brine, otherwise, if you have brine at room temperature, you can grill right away.
