GRILLED SCALLOPS WRAPPED IN PROSCIUTTO
With just a few ingredients, these quick-cooking skewers become an elegant starter to stave off hunger or an easy addition to any grilled menu.

Steps:
- Preheat grill to high. (If using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for 2 seconds.)
- Halve 1 slice prosciutto lengthwise. Fold in half lengthwise, and wrap around sides of 1 scallop, overlapping prosciutto ends. Repeat with remaining prosciutto and scallops. Thread several scallops on each skewer.
- Drizzle scallops lightly with oil, squeeze lemons over skewers, and season with pepper. Grill scallops, turning once, until just opaque, about 3 minutes per side. Serve with lemon.

- Preheat oven to 425°F. Line a large rimmed baking sheet with foil.
- Combine cream cheese and rosemary in a small bowl. Fill each pepper half with some of the cream cheese mixture and wrap a strip of prosciutto around it. Arrange on the prepared baking sheet and bake until heated through, about 10 minutes.

GRILLED PROSCIUTTO WRAPPED PEPPERS
I like this way better than with bacon. Infact I entered this in our local contest for appetizers and it won.

Steps:
- Cut peppers, lengthwise, and remove seeds.(Wear gloves).
- Cook and drain the sausage, til there is no longer any pink.
- Combine the cream cheese and Parmesan cheese, real good.
- Fold in the sausage.
- Place mixture of the sausage into each halve of the peppers. (about a teaspoon full-use your own judgement).
- Wrap the Prosciutto around each pepper, and secure with a tooth pick.
- Prepare your grill for indirect heat, using a drip pan.
- Place jalepnos over pan, and grill covered over indirect heat for about 10 minutes.
- (If you like the Prosciutto more crunchier cook longer.)
- Serve with spicy ranch dressing if you would like.

GRILLED PROSCIUTTO-WRAPPED CANTALOUPE
This brings the typical Prosciutto-Wrapped Cantaloupe to the next level!!! Crisping the prosciutto and juicy tender warm cantaloupe. Almost as easy as none cooked version. This is wonderful along or add finely minced mint or basil No need to oil or skewer.

GRILLED PROSCIUTTO WRAPPED VEAL
I saw this on Licence to Grill on Food Network Canada. We love veal and are always looking for new ways to cook it. I have not yet tried this recipe but if you do please let me know.

Steps:
- Marinade.
- Combine marinade ingredients in blender, pour in oil as blending and puree until smooth. In a large sealable bag, add marinade and veal. Refrigerate 12-24 hours.
- Veal.
- Remove veal from marinade, lay flat and pat dry. Place the veal on a large piece of plastic wrap, cover with another piece of plastic wrap. Lightly tenderize the veal.
- On a large piece of plastic wrap place slices of proscuitto. Place the unwrapped piece of veal in centre of proscuitto, drizzle with oil and season with pepper. While lifting the plastic wrap gently, encase the veal. Wrap again tightly with more plastic and let it set up in the fridge for 15 minutes.
- Bring veal to room temperature before grilling. Remove the plastic wrap.
- Place a drip pan under the grill rack and add rosemary and white wine. Prepare grill for indirect heat by heating only one side of the grill to high and close lid.
- Preheat grill to 350ºF/175ºC.
- Place veal on the grill side with no direct heat and grill for one hour, until the internal temperature reads 150ºF on a meat thermometer. Remove from grill and cover with foil. Let rest for 15 minutes before slicing.

- Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Place wood chunk directly on coals. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place stuffed peppers on cool side of grill, cover, and cook until prosciutto has browned and pepper has softened slightly, 20-30 minutes. Transfer peppers to serving tray, let cool for 5 minutes, then serve.
