GRILLED GARLIC BUTTER PRAWNS

Grilled garlic butter prawns image

Juicy prawns (shrimp) cooked on the grill then coated in a spicy garlic lemon butter sauce. Served with rice or crusty bread, this is a showstopper meal.

Provided by Alida Ryder

Categories     Dinner

Time 40m

Number Of Ingredients 11

1.5 kg (3lbs) shrimp (deveined but shell and head on)
2 tbsp cajun spice
1 tbsp lemon pepper
2 tsp salt
3 tbsp olive oil
250 g (2 sticks) butter
10 garlic cloves (crushed )
3-4 tbsp fresh lemon juice
2 tsp cajun spice
1 tsp chilli flakes
½ cup cream ((heavy or whipping) )

Steps:

  • If your prawns haven't been deveined, use a sharp pair of kitchen scissors and make a long incision down the length of the back then remove the vein.
  • Place the prawns in a large bowl. Pour over the oil and season with the cajun spice, lemon pepper and salt. Mix well to ensure all the prawns are evenly coated.
  • To make the sauce, melt the butter in a large pot (the pot needs to be big enough to toss all the prawns in once they are cooked) and add the garlic, lemon juice and spices.
  • Allow to cook for a minute until fragrant then pour in the cream. Bring to a simmer and allow to cook for 5 minutes then remove from the heat.
  • Taste and adjust seasoning accordingly. The sauce needs to be a little too lemony and very well seasoned. Once the prawns are added, the sauce will mellow a bit.
  • Preheat the grill for 10-15 minutes. I prefer using an outdoor grill/braai/barbecue as the smoke adds incredible flavor to the shrimp once cooked but you can use a griddle pan too.
  • Add the prawns and cook for 2-3 minutes per side until they are coral/orange in color. As the prawns cook, add them to the pot with the sauce.
  • Once all the prawns have been added, toss to coat the prawns in the sauce.
  • Serve over rice or with crusty bread and extra lemon wedges.

GRILLED SHRIMP WITH HONEY-GINGER BARBECUE SAUCE

Grilled Shrimp With Honey-Ginger Barbecue Sauce image

Of all the ways to prepare shrimp, the grill delivers the best flavor. Although unadorned "shrimp on the barbie" are great, an easily assembled gingery barbecue sauce makes them that much better. You can save time by buying already shelled and deveined shrimp, but our recipe developer, Alexis Touchet, who grew up in shrimp country in southwest Louisiana, thinks shell-on shrimp are better quality. Depending on where you live and what's in your market, you may not have much choice. Freshness trumps all, so don't hesitate to use your nose in deciding which shrimp to buy.

Yield Makes 8 servings

Number Of Ingredients 8

Sauce:
Honey-Ginger Barbecue Sauce
Shrimp:
4 pounds jumbo (21-25 per pound) or extra-large (26-30 per pound) shrimp in shell, peeled, leaving tail and adjoining shell segment intact, and deveined (See Cooks' Notes)
4 tablespoons vegetable oil
1 teaspoon salt
Special Equipment
18 to 24 (12-inch) wooden skewers (depending on size of shrimp used), soaked in water for 30 minutes

Steps:

  • For the Shrimp:
  • If necessary, pat shrimp dry, then thread about 6 shrimp (through top and tail, leaving shrimp curled), onto each skewer, without leaving space between shrimp.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high for gas); see Grilling Procedure.
  • Meanwhile, brush shrimp with vegetable oil and sprinkle evenly with salt.
  • Lightly oil grill rack. Grill shrimp, covered only if using a gas grill, turning over once, 2 minutes. Brush shrimp with some sauce from the saucepan, then turn. Brush shrimp with additional sauce then grill until just cooked through, 1 to 2 minutes. Serve with reserved sauce.

GRILLED SHRIMP WITH TAMARIND SAUCE

Grilled Shrimp with Tamarind Sauce image

Categories     Shrimp     Summer     Grill/Barbecue     Tamarind     Gourmet

Yield Serves 4 as a main course

Number Of Ingredients 12

1 1/2 lb jumbo (8 to 12 per lb) shrimp
3 teaspoons sea salt dissolved in 11/2 cups water
For tamarind sauce
1 tablespoon tamarind from a pliable block
1/3 cup water
1 tablespoon peanut oil
1 tablespoon chopped cleaned fresh cilantro roots and/or stems, pounded to a paste
1 tablespoon minced garlic
1 tablespoon Sriracha or other Asian hot chile sauce
1 1/2 tablespoons palm sugar, or to taste
1 tablespoon Asian fish sauce (preferably Thai naam pla), or to taste
Garnish: 2 fresh serrano or jalapeño chiles, seeded, halved lengthwise, and finely julienned crosswise; and fresh cilantro sprigs

Steps:

  • Prepare grill for cooking.
  • Soak shrimp (still in shells) in salt water 5 minutes, then rinse well in a colander.
  • Make sauce:
  • Place tamarind in a bowl with water and rub with your fingers to dissolve pulp. Pour through a sieve into a bowl, pressing hard on solids, and discard solids.
  • Heat oil in a small heavy saucepan over moderate heat until hot but not smoking, then cook cilantro paste and garlic, stirring, until fragrant. Stir in hot sauce, 3 tablespoons tamarind juice, palm sugar, and fish sauce. Simmer until thickened to consistency of light syrup, about 3 minutes.
  • Grill shrimp:
  • Snip shells of shrimp with scissors down center of back, from wide end to second-to-last tail section. Butterfly shrimp in their shells, making a deep incision along length of back where shells are cut, and devein.
  • Grill shrimp on their sides on an oiled rack set 5 to 6 inches over glowing coals until shells are pink and slightly charred and shrimp are just cooked through, 3 to 4 minutes on each side. (Alternatively, grill shrimp in a hot well-seasoned ridged grill pan over moderate heat.)
  • Spoon tamarind sauce over shrimp (still in shells) in a serving dish.

GRILLED PRAWNS WITH ROMESCO SAUCE RECIPE

Grilled Prawns With Romesco Sauce Recipe image

Number Of Ingredients 15

25 raw king prawns, in shell
3 tbsp. olive oil
Parsley, to garnish
1 lemon, cut into wedges
2 vine tomatoes
4 tbsp. olive oil
1 onion, chopped
4 garlic cloves, minced
1 canned pimiento, finely chopped
1/2 tsp. chili powder
5 tbsp. fish stock
2 tbsp. white wine
10 almonds, blanched and toasted
1 tsp. red wine vinegar
Sea salt to taste

Steps:

  • Preheat grill to medium-low. In a large bowl, toss prawns in olive oil until evenly coated. Place the prawns on the grill, leaving space between them to prevent overlap. Grill for about 2 to 3 minutes on each side, or until they turn pink. Place on platter surrounded by lemon wedges and topped with parsley leaves for garnish. For Romesco sauce: Begin preparing the sauce by blanching the tomatoes. Boil a small saucepan of water and place the tomatoes in the water for about 30 seconds. Remove them and immediately run them under cold water. Peel and discard the skins; chop the tomatoes. In a medium saucepan over medium-high heat, sauté the onions and 3 of the garlic cloves in 2 tbsp. of the olive oil. Cook until translucent and tender, about 5 to 7 minutes. Add the pimiento, chili powder, stock and wine to the saucepan. Allow the mixture to simmer, covered for about 30 minutes, stirring just a few times. In a blender, combine the remaining olive oil, garlic and toasted almonds. Blend until smooth. Add the tomato mixture from the saucepan to the blender. Blend all the ingredients until a smooth sauce is formed. Add salt to taste. Serve sauce with prawns.
