GRILLED UP SWEET POTATO CASSEROLE
I absolutely love sweet potato casserole and can hardly wait until the holidays to begin baking it. This version can be done on the grill in less than 30 minutes! Large sweet potatoes may require more cinnamon-sugar topping ingredients. Add more mini marshmallows before serving if desired. -Norma Conley, Richmond, Kentucky

- Peel and cut potatoes into 1/2-in. slices; transfer each potato to individual pieces of heavy-duty foil (12-in. square). Cut butter into thin slices; place between potato slices. Sprinkle with cinnamon, brown sugar and pecans. Fold foil around potatoes, sealing tightly. Grill, covered, over medium heat or broil 4 in. from heat until potatoes are tender, 18-22 minutes, turning occasionally., Remove potatoes from grill; carefully open tops of foil. Sprinkle marshmallows over potatoes (do not seal foil). Return potatoes to grill rack. Grill until marshmallows are softened, 3-4 minutes longer.

GRILLED POTATO CASSEROLE
This is a great potato casserole for the grill. Clean up can't get any easier than just tossing the foil! These can also be baked in a 350 degree oven if space on the grill is at a premium. Don't be tempted to skip the celery seed, it's what makes these unique.

- Preheat an outdoor grill for medium-high heat.
- Melt the butter in a saucepan over medium-low heat. Whisk in the flour, salt, seasoned pepper, and celery seed; cook and stir for 1 minute. Gradually whisk the milk into the flour mixture, and bring to a simmer over medium heat. Cook and stir until the mixture is thick and bubbly, 5 to 10 minutes.
- Stir in the potatoes, onion, and green bell pepper. Pour the potato mixture onto a large sheet of heavy duty foil. Sprinkle with paprika. Fold the foil loosely around the potato mixture and seal tightly. Grill on covered grill, turning the packets every 15 minutes, until the potatoes are tender, about 45 to 50 minutes.

GRILLED SAUSAGE CASSEROLE
This is so easy to throw together and put on the grill or in the oven and forget about it. We use the grill as much as possible during the summer so the house doesn't get any hotter than necessary - This is the latest of many last minute, have to make dinner and didn't plan ahead - AGAIN, meals. I serve this with rice or pasta.

- This is soooo simple.
- Start the grill!
- While you are warming your coals or starting your gas grill, lightly coat the bottom of a metal 9x13 cake pan with shortening or pam to keep the potatoes from sticking.
- Scrub potatoes (or peel if you don't like the skin on your potatoes), clean zucchini, egg plant.
- Cut potatoes into bite size pieces and toss into bottom of pan.
- Cut the zucchini and eggplant just larger than bite size pieces and toss onto potatoes, next, cut the smoked sausage and brats into bite size pieces toss onto veggies-- (see, isn't this easy?).
- Sprinkle salt and pepper, parsley, and garlic powder on top of the pile, it will probably be stacked over the top of of the pan, don't worry-- Cover the pan with aluminum foil, poke a couple of holes in the top for ventilation.
- Toss on the grill for 20-30 minutes, until the potatoes are done.
- I usually make rice or pasta with it.

- Preheat and grease grill. Boil potatoes in water for 6 minutes, until slightly cooked but raw in center. Strain potatoes in a colander. Place potato slices on grill. Using a pastry brush, apply butter and sprinkle each slice with House Seasoning. Grill potatoes slices for 4 to 5 minutes and flip slices, repeating with butter and House Seasoning. Cook until grilled through.
