EASY GRILLED PORK CHOPS
Juicy grilled pork chops with the best, easy marinade is the perfect recipe to throw on the grill. Great served with simple sides for a delicious dinner.

Steps:
- Whisk together olive oil, lemon juice, garlic, spices and herbs.
- Place the pork chops in a suitable marinating dish or a large Ziploc bag. Pour over the marinade and make sure the pork chops are all covered in the the marinade. Cover and allow to marinate for at least 30 minutes but up to 24 hours in the fridge.
- Preheat an outdoor grill for at least 5 minutes on the highest setting. Add the pork chops then cook for 2-3 minutes per side, rotating, and turning to make sure the chops are evenly browned. If the fat cap is very big, stand the chops on the fat side and allow to cook and the fat to render for a few minutes.
- Take the chops off the heat when their internal temperature reaches 145ºF / 62ºC, cover with foil and allow to rest for at least 5 minutes.
- Serve with lemon wedges.

- For the pork chops: Season four 1-inch-thick boneless pork chops on both sides with salt, then rub all over with vegetable oil. Sprinkle with your choice of spice rub (recipes follow). Grill over medium-high heat until cooked through and a thermometer inserted into the centers registers 145˚ F, 4 to 5 minutes per side.
- To make Sichuan Peppercorn Rub: Pulse 2 tablespoons Sichuan peppercorns in a spice grinder with 4 teaspoons cumin seeds, 2 teaspoons sesame seeds and 1 teaspoon red pepper flakes until cracked. Transfer to a small bowl and mix in 1 teaspoon each Chinese five-spice powder and light brown sugar and 1/2 teaspoon garlic powder.
- To make Barbecue Rub: Mix 1 tablespoon each paprika and light brown sugar in a small bowl with 2 teaspoons ancho chile powder, 1 teaspoon ground cumin and 1/2 teaspoon each mustard powder, garlic powder, onion powder and pepper.
- To make Fennel-Coriander Rub: Pulse 1 tablespoon each fennel seeds and coriander seeds in a spice grinder until roughly ground. Transfer to a small bowl and mix in 1 teaspoon grated lemon zest and 1/2 teaspoon each garlic powder and red pepper flakes.

- Mix water, soy sauce, vegetable oil, lemon pepper seasoning, and minced garlic in a deep bowl; add pork chops and marinate in refrigerator at least 2 hours.

EASY GRILLED PORK CHOPS

- Begin by making the marinade. In a small bowl, whisk together the honey, oil, vinegar, cumin and red pepper flakes. Easy, right?
- Sprinkle both sides of the pork chops with salt and pepper and place in a re-sealable plastic bag with the marinade. Let rest on the counter for 1 hour. That's easy.
- Heat a grill or grill pan over medium heat. Remove the pork chops from the bag and lightly sprinkle with salt and pepper. Place on the grill and cook until the pork chop releases from the grill, about 4 minutes. Flip and cook on the other side for another 3 minutes. If using a grill pan, be sure to do in batches so you don't steam the chops. And don't worry if you have neither; you can do this in a pan. See, easy!

- Start with the pork chops of your choice but I suggest 1-inch thick center cut chops with or without bones.
- If you leave a layer of fat on the edge, score it every inch to prevent cupping. I trim it back if it is over 1/4 inch.
- Optional: Mix brine in a 1-gallon zip lock of 2 cups cold water, 1 tablespoon table salt, 1 tablespoon brown sugar, and 1 teaspoon garlic powder (optional). Mix well and submerge the pork. Refrigerate for 30 minutes to 2 hours. Salt Note: 1 teaspoon table salt = 1 1/4 teaspoons Morton kosher salt = 2 teaspoons Diamond Crystal kosher salt. Rinse the pork under running water after removing it from the brine.
- When ready to cook, clean the grates and preheat the grill to medium-high temperature (450°-500° surface temperature).
- Pat dry and season to taste usually with seasoning salt and black pepper. Other optional seasonings can be used if desired. But remember to not add any seasoning with salt if you did brine.
- Place the pork chops on a well-oiled grill grate and grill with a closed lid for about 4 minutes per side initially, then flip occasionally, aiming for an internal temperature of 145°-150°. About 12-18 minutes total time depending on grill and thickness. If you want BBQ, add a light coat of sauce with about 5 minutes left and again for the last 2 minutes.
- Remove from grill and let rest for 5 minutes or a little more before serving.

GRILLED MAPLE-GLAZED PORK CHOPS

- In a small mixing bowl, whisk together all marinade ingredients. Divide equally and set aside half the mixture at room temperature.
- Place pork chops in a zip-top bag and cover with the remaining half of the marinade. Remove as much air as possible from the bag, massage marinade into meat, and place on a plate to prevent leaks. Place chops in refrigerator for 30 minutes or up to 4 hours.
- Light your grill and set up for two-zone cooking. Establish grill temperature between 225° and 250° F.
- Remove pork chops from the bag, and discard any marinade that has touched the pork. Place chops on your preheated grill over indirect heat. Close lid and allow pork chops to cook until internal temperature reaches 130° F. Remove pork from grill and stoke coals to create high direct heat.
- Place pork chops over high direct heat, flipping every 20-30 seconds in order to create a perfect crust. Remove pork chops from the grill when they are five degrees less than desired eating temperature.
- Brush hot pork chops with warm marinade that was set aside, and allow them to rest for 5 minutes.
- Plate pork chops on a bed of arugula and drizzle with remaining marinade as desired for serving.

This is our favorite recipe for pork chops dry rub. The flavors are an excellent foil for the smoky flavor of the grill, but the mixture works well no matter which cooking method you use.
