This Chinese-style pork belly is sweet, salty, and perfectly tender. Slowly cooking the pork in a flavorful mixture of garlic, ginger, and brown sugar gives it that signature sticky-sweet glaze that pairs perfectly with salty soy sauce. 20 oz pork belly, lean
4 cups water, plus 250 milliliters, divided
4 slices of fresh ginger
1 spring onion, cut into 2-inch (5 cm) pieces
2 cloves garlic, crushed
2 tablespoons oil
2 tablespoons brown sugar
3 tablespoons light soy sauce
3 tablespoons dark soy sauce
3 tablespoons shaoxing rice wine
cooked rice, for serving
sliced green onion, for serving

Steps:

  • Cut the pork belly into roughly 1-inch (2 ½ cm) cubes.
  • Bring 1 liter of water to a boil in a pot, then add the pork, ginger, onion, and garlic, and cook for 3-4 minutes.
  • Remove the pork from the water using a slotted spoon and drain on a plate lined with a paper towel. Discard the remaining water and vegetables.
  • Clean and dry the pot, then return it to high heat and add the olive oil. Return the pork to the pan and cook until browned. The oil may pop and splatter, so be careful.
  • Add the brown sugar, then reduce the heat to low. Stir continuously until the sugar has melted, caramelized, and coated the pork evenly.
  • Immediately add the soy sauces and rice wine, stirring continuously for 5-6 minutes more, or until the liquid has reduced to a thick glaze.
  • Add the remaining 250 milliliters of water. Stir, cover, and simmer for about 45 minutes. Make sure the mixture is at a low simmer, not boiling. Stir every 10 minutes or so, adding more water if the pot is getting dry.
  • Remove the lid. The sauce should coat the pork in a very thick glaze. If it is too runny, continue to stir, uncovered, until the liquid has reduced.
  • Serve immediately over a bowl of rice and sprinkle with sliced green onions.

This is a recipe for grilled pork belly. It is known as Inihaw na Liempo in Filipino.

2 lbs pork belly (sliced into strips with 3/4 inch width)
7 tablespoons dark soy sauce
Juice from a piece of lemon
1/4 teaspoon black pepper (ground)
1/2 teaspoon salt
4 cloves crushed garlic
4 to 6 tablespoons banana sauce (also known as banana ketchup)
1 tablespoon canola oil
4 tablespoons soy sauce
3 tablespoons banana sauce
Juice from 1/2 lemon
1 teaspoon sugar

Steps:

  • Combine all the marinade ingredients in a mixing bowl. Stir until all the ingredients are well blended.
  • Put the sliced pork belly into the bowl with the marinade. Make sure that the pork gets coated.
  • Cover the bowl. Refrigerate for 6 hours. This will be enough time to marinate the pork.
  • Prepare the basting sauce by combining all the ingredients in a bowl. Mix well.
  • Heat-up your grill. Grill one side for the pork for 3 to 4 minutes. Baste the top part by brushing the basting sauce. Turn the pork belly over. Let it cook for 3 minutes. Brush some basting sauce on the top part. Continue turning over the pork belly every 3 to 4 minutes while basting, until it is completely cooked. (Turning it over constantly prevents the pork from getting burnt).
  • Serve with pickled papaya and rice.

1 pound skinless pork belly
1 cup soy sauce
1 cup mirin
Sea salt
white pepper
1 cup beef stock
2 dried shiitake mushrooms
1/4 cup honey
3 tablespoons Asian sesame oil
1 tablespoon cornstarch dissolved in 2 tablespoons cold water
Vegetable oil for coating grill or pan
1 small kabocha squash, seeded, in 1/2-inch thick slices with skin
2 tablespoons chopped scallions
2 tablespoons roasted, salted sesame seeds

Steps:

  • Cut pork belly into pieces about 3-inches square. Thinly slice each piece into squares no more than 1/4-inch thick. (Partly freezing the pork belly will make it easier to slice.)
  • Combine soy sauce, mirin, salt and pepper to taste in a bowl. Place pork in the bowl, cover and refrigerate 30 minutes but preferably overnight.
  • In a small saucepan, bring stock to a simmer. Add mushrooms, turn off heat and steep 30 minutes. Strain out mushrooms, and save for other use. Add honey and 1 tablespoon sesame oil to the stock. Simmer 10 to 15 minutes, until reduced by half. Whisk in cornstarch mixture and cook a few minutes longer, until thickened. Remove from heat, transfer to a bowl, cover and refrigerate until ready to use.
  • Remove pork from refrigerator. Heat a grill or grill pan and brush with vegetable oil. Place pork slices on grill and cook, turning every 4 minutes or so, until well seared and caramelized at the edges, about 20 minutes' total cooking time. Add remaining sesame oil to the marinade, add the squash, set aside 5 minutes, then place on the grill, turning, until cooked through, about 15 minutes.
  • Arrange pork and squash on a platter. Heat glaze and brush on pork and squash. Sprinkle with scallions and sesame seeds and serve.

  • Braise the belly. Preheat the oven to 300°F (150°C). Rub the pork belly all over with the salt and set the pork, fat side up, in a baking dish just a little bigger than the pork itself.
