CHINESE-STYLE GLAZED PORK BELLY RECIPE BY TASTY
This Chinese-style pork belly is sweet, salty, and perfectly tender. Slowly cooking the pork in a flavorful mixture of garlic, ginger, and brown sugar gives it that signature sticky-sweet glaze that pairs perfectly with salty soy sauce. Serve it over rice for the ultimate dinner and forget you ever wanted to order take-out.

Steps:
- Cut the pork belly into roughly 1-inch (2 ½ cm) cubes.
- Bring 1 liter of water to a boil in a pot, then add the pork, ginger, onion, and garlic, and cook for 3-4 minutes.
- Remove the pork from the water using a slotted spoon and drain on a plate lined with a paper towel. Discard the remaining water and vegetables.
- Clean and dry the pot, then return it to high heat and add the olive oil. Return the pork to the pan and cook until browned. The oil may pop and splatter, so be careful.
- Add the brown sugar, then reduce the heat to low. Stir continuously until the sugar has melted, caramelized, and coated the pork evenly.
- Immediately add the soy sauces and rice wine, stirring continuously for 5-6 minutes more, or until the liquid has reduced to a thick glaze.
- Add the remaining 250 milliliters of water. Stir, cover, and simmer for about 45 minutes. Make sure the mixture is at a low simmer, not boiling. Stir every 10 minutes or so, adding more water if the pot is getting dry.
- Remove the lid. The sauce should coat the pork in a very thick glaze. If it is too runny, continue to stir, uncovered, until the liquid has reduced.
- Serve immediately over a bowl of rice and sprinkle with sliced green onions.

Steps:
- Combine all the marinade ingredients in a mixing bowl. Stir until all the ingredients are well blended.
- Put the sliced pork belly into the bowl with the marinade. Make sure that the pork gets coated.
- Cover the bowl. Refrigerate for 6 hours. This will be enough time to marinate the pork.
- Prepare the basting sauce by combining all the ingredients in a bowl. Mix well.
- Heat-up your grill. Grill one side for the pork for 3 to 4 minutes. Baste the top part by brushing the basting sauce. Turn the pork belly over. Let it cook for 3 minutes. Brush some basting sauce on the top part. Continue turning over the pork belly every 3 to 4 minutes while basting, until it is completely cooked. (Turning it over constantly prevents the pork from getting burnt).
- Serve with pickled papaya and rice.

Steps:
- Cut pork belly into pieces about 3-inches square. Thinly slice each piece into squares no more than 1/4-inch thick. (Partly freezing the pork belly will make it easier to slice.)
- Combine soy sauce, mirin, salt and pepper to taste in a bowl. Place pork in the bowl, cover and refrigerate 30 minutes but preferably overnight.
- In a small saucepan, bring stock to a simmer. Add mushrooms, turn off heat and steep 30 minutes. Strain out mushrooms, and save for other use. Add honey and 1 tablespoon sesame oil to the stock. Simmer 10 to 15 minutes, until reduced by half. Whisk in cornstarch mixture and cook a few minutes longer, until thickened. Remove from heat, transfer to a bowl, cover and refrigerate until ready to use.
- Remove pork from refrigerator. Heat a grill or grill pan and brush with vegetable oil. Place pork slices on grill and cook, turning every 4 minutes or so, until well seared and caramelized at the edges, about 20 minutes' total cooking time. Add remaining sesame oil to the marinade, add the squash, set aside 5 minutes, then place on the grill, turning, until cooked through, about 15 minutes.
- Arrange pork and squash on a platter. Heat glaze and brush on pork and squash. Sprinkle with scallions and sesame seeds and serve.

- In a large bowl, combine the soy sauce, lime juice, ground black pepper, garlic powder, and hot sauce. Mix well.
- Put the cleaned pork belly in a large resealable bag. You can slice the pork belly thinner so that it can quickly absorb the marinade.
- Pour the soy sauce mixture in the resealable bag. Let all the air out then seal. Let the pork belly marinate for at least 1 hour. You can place the bag in the refrigerator during the process.
- Heat-up the grill. Start to grill the marinated pork belly for 3 minutes per side. Baste the pork belly with the remaining marinade. Note: Do this process at least 3 times. This means that each side of the pork belly is grilled for a minimum of 9 minutes (3 minutes x 3 times). This will prevent the pork from getting burnt quickly. Make sure that you baste it every time you flip it over. Grill longer if the pork belly is not cooked enough.

- Braise the belly. Preheat the oven to 300°F (150°C). Rub the pork belly all over with the salt and set the pork, fat side up, in a baking dish just a little bigger than the pork itself.
- Add the unseasoned rice vinegar to the baking dish; it should come about halfway up the sides of the pork. Cover the baking dish tightly with aluminum foil and braise the pork in the oven for 3 hours.
- Remove from the oven and let cool, still covered, to room temperature. When cooled, uncover the baking dish and then peel off and discard the skin and the top layer of fat that comes off with the skin. At this point, you can refrigerate the braised pork belly for a few days. You can also freeze it for up to 2 weeks. Thaw completely before using. Then, cut the pork into bricks about 2 inches long and 1 inch wide.
- Fire up and grill. Heat your grill for direct heat but don't make it too blazing hot. Place the belly bricks, meat side down, on the grate and sear on all sides, 2 to 3 minutes per side, including the ends. Grill the fatty side last. During the last few minutes, brush the bricks all over with the ssam jang. Transfer the pork to a plate.

- Heat a large pan over high heat, add oil and pan fry the pork belly on a single layer, work in batches if necessary. Cook them until they are golden on both sides. Be careful as the pork belly will release oil which might cause some splattering.
- Once the pork belly pieces are cooked, remove them from the pan and wipe excess oil off the pan with some paper towel.

- Measure all of the marinade ingredients into a bowl or measuring cup. Use a whisk to combine it and set aside.
- Next, transfer the prepared pork to a bowl with a tight fitting lid. Pour the marinade over the pork and toss the pork well to combine with the marinade.
- Once the pork has marinated, assemble the kebabs. Skewer one piece at a time, making sure that each piece just touches the next. Do not push the pork pieces together, because this will prevent the pork from caramelizing properly.
