- Combine pork, soy sauce, rice vinegar, brown sugar, sesame oil, lime juice, Sriracha, ginger, and garlic in a large resealable bag. Seal and shake up to combine well. Refrigerate for 1 hour, turning occasionally.
- While the pork is marinating, soak skewers in water for about 20 minutes prior to using them. That will help the skewers to not burn up when exposed to the flame.
- Preheat an outdoor grill or indoor grill pan to medium-high heat and lightly grease the grates with a small amount of vegetable oil.
- Thread the skewers with marinated pork, pineapple, and red pepper, alternating back and forth; discard the marinade.
- Cook skewers on the preheated grill until they obtain grill marks and the pork is no longer pink, about 2 minutes per side. Garnish with green onions and sesame seeds.

- Place pork pieces into a bowl, add sliced onion. Season with salt and pepper, mix until everything is combined. Cover with plastic wrap or a lid and refrigerate over the night or for at least 4 hours.

- Using charcoal for grilling, get them ready for grilling by lighting up and let them burn until they turn white. If using a grill preheat to medium/high heat. - Heat gas or charcoal grill. In 1-quart saucepan, heat marmalade, rosemary and salt to boiling, stirring frequently. Remove from heat; set aside.
- In 1-quart microwavable bowl, place sweet potato pieces and water. Cover loosely with microwavable paper towel. Microwave on High 2 to 3 minutes, stirring once, just until potatoes are tender (do not overcook). Drain sweet potatoes; rinse with cold water.
- On each of four 10- to 12-inch metal skewers, carefully thread pork, sweet potatoes and zucchini (with cut side facing out) alternately, leaving 1/4-inch space between each piece.
- Cover and grill kabobs over medium heat 8 to 10 minutes, turning once and brushing with marmalade glaze during last 3 minutes, until pork is no pink in center.

- 1. Combine all ingredients for marinade in a large bowl.
- 2. Add pork. Marinate for at least 2 hours, overnight is best.
- 3. Put meat on skewers and barbecue or bake at 350 degrees for 45 minutes to one hour, basting often with marinade.
- 4. We like to do ours on the grill, grilling it slowly and basting with marinade.
GRILLED SWEET POTATO SKEWERS
Steps:
- Place all of the sweet potato chunks in a large microwaveable bowl. Cover with plastic wrap and microwave for three minutes. Remove from the microwave, stir, recover with plastic wrap and microwave 2-3 minutes more, until the sweet potatoes are just tender enough to thread on skewers (but not overly soft - they will cook through on the grill).
- Thread 5-6 pieces of sweet potato on each skewer. Place all the skewers on a rimmed baking sheet and drizzle with 1-2 tablespoons of olive oil, rolling the skewers back and forth to evenly distribute the oil. Sprinkle the skewers with salt and pepper.
- Preheat a charcoal or gas grill to medium or medium-high heat. Grill the sweet potato skewers, flipping every 5-6 minutes, for a total of about 20 minutes, until the sweet potatoes are tender. If desired, finish the hot sweet potatoes off with a quick brush of olive oil mixed with a little salt.

- In a large mixing bowl (or ziploc bag), combine chopped pork, 1 Tbsp Italian seasoning, 1 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp black pepper and stir until well combined. Separate onion pieces and add them to the bowl. Add 2 Tbsp olive oil and toss to combine. Cover and marinate in the refrigerator for at least 4 hours and preferably overnight.
- Thread the kabobs onto metal skewers*, alternating between meat and onion. For even browning, the meat and onions should be just touching on the skewers and not crowded together. Let your skewers stay at room temperature for 30 minutes before placing on the grill.

- Combine oil, lemon juice, rosemary, parsley, garlic, and salt in a large resealable bag.
- Add pork; marinate, refrigerated, for 30 minutes (to 4 hours).
- Preheat grill or broiler on high.
- Boil water in steamer or large saucepan over high heat. Reduce heat to medium-high. Place sweet potato pieces in steamer basket; cook for 3 to 4 minutes, or until tender-crisp. Place in ice water bath to stop cooking process. Set aside.

- Cut the pork chops into bite size pieces, I like to cut off the excess fat but that is a personal preference.
