GRILLED BOK CHOY WITH GINGER SCALLION GARLIC OIL



Grilled Bok Choy with Ginger Scallion Garlic Oil image

Bok choy is a weeknight veggie staple in our house, and it doesn't take a lot of work to make it taste great. Just throw it in a pan and forget about it while you prep the rest of dinner - the edges get crispy, the innards stay tender, and drizzling it with scallion ginger oil really takes it up a notch.

1 pound baby bok choy, halved lengthwise
2 tablespoons neutral oil
Garlic, Ginger and Scallion Oil, recipe follows
Toasted white and black sesame seeds, for garnish
Flaky salt
1 tablespoon plus 1 cup neutral oil
1 tablespoon grated fresh ginger
4 scallions, trimmed and finely chopped
2 large cloves garlic, minced
2 tablespoons toasted sesame oil
Kosher salt

Steps:

  • Heat a gas or charcoal grill over medium-high heat. Alternatively, you can heat a grill pan on the stovetop over medium-high heat. Arrange the bok choy on a sheet tray, or place in a large mixing bowl. Drizzle with oil and toss to coat. Place the bok choy onto the heated grill or grill pan, cut-side down and cook until wilted and grill marks appear, 3 to 4 minutes. Flip and cook for until tender, 1 to 2 minutes more. Remove from the grill onto a platter. Drizzle with the Garlic, Ginger and Scallion Oil (recipe follows), a sprinkling of sesame seeds and flaky salt.
  • In a small saucepan over medium heat, add the tablespoon of neutral oil and heat until shimmering. Add the ginger, scallions, garlic and salt and cook, stirring, to soften, 2 to 3 minutes. Add the sesame oil and the remaining 1 cup neutral oil. Reduce the heat to medium-low and simmer, stirring occasionally and taking care not to let the oil get too hot, until the oil is infused with flavors, about 10 minutes. Remove from the heat.

2 1/2 pounds fresh poblano peppers
2 cloves garlic, sliced extra thin
Salt
freshly ground black pepper
1 1/2 cups extra virgin olive oil
4 to 6 sprigs fresh thyme
1 loaf country bread (optional)
Pickled white anchovies (optional)

Steps:

  • Heat a grill or griddle until very hot. Place whole peppers on cooking surface (if using a grill, lay a sheet of aluminum foil under peppers) and cook until skin is completely black and flesh is soft, about 20 minutes. Turn peppers every 2 to 3 minutes for even cooking.
  • When completely charred, wrap peppers in newspaper or place in paper bag; set aside to cool at least 15 minutes. When cool enough to handle, remove stems, seeds and skin, working gently to limit breakage.
  • Cut peppers lengthwise in half, then into strips about 1/4-inch thick. Arrange peppers in a shallow dish and sprinkle with sliced garlic, salt and pepper. Add olive oil and thyme, cover and marinate at least 2 hours or, preferably, overnight.
  • Serve at room temperature with crusty bread as an appetizer, or as a side dish with grilled fish, steak or pork. To serve on toast, slice bread and toast or grill just before serving. Drizzle toast with a little oil from dish, add a few pepper strips, and top with an anchovy.

1 cup chopped grilled red onions
1 cup chopped roasted poblano chiles
1/2 cup capers
1/2 cup chopped cilantro
1 tablespoon hot pepper sauce, recommended: Cholula
1 tablespoon minced garlic
1/2 cup balsamic vinegar
1 tablespoon honey
1 lemon, zested and juiced
1 cup red wine vinegar
4 cups olive oil
Salt and pepper

Steps:

  • Combine all of the ingredients, except for the olive oil and salt and pepper, into a medium size mixing bowl and mix well. Whisk the olive oil into the mixture in a slow steady stream until fully incorporated. Season with salt and pepper.

I love the spice of a poblano pepper, cooled down with cream cheese and mozzerella. I came up with this recipe when trying to find an interesting way to grill a poblano. It turned out great, and everyone made the "mmm" noise:) This recipe is a snap!

6 poblano peppers
6 tablespoons olive oil
1 (8 ounce) package cream cheese
2 cups mozzarella cheese, shredded
6 teaspoons ground cumin
3 teaspoons ground cayenne pepper
aluminum foil

Steps:

  • Heat grill on low, about 250 degrees.
  • Halve peppers and clean out seeds. Peppers should lay flat and wide.
  • Cut 6 portions of foil, one for each pepper. Foil should be big enough to fold up edges around pepper, forming a "bowl" so juices and cheese don't drip. Drizzle 1 tbsp of olive oil onto each piece of foil.
  • Divide cream cheese into 6 equal parts. Spread each pepper with one part of cream cheese. (Use your thumbs to spread into pepper). Place pepper on foil.
  • Sprinkle 1/3 cup of mozzarella cheese, 1 teaspoons ground cumin, 1/2 tsp cayenne pepper on to each pepper.
  • Fold and scrunch up sides of foil around pepper, forming a bowl. Place on grill.
  • Peppers should cook for about 20 minutes or until cheese is melted and browned on top.
