GRILLED PINEAPPLE WITH POUND CAKE AND RUM-CARAMEL SAUCE



Grilled Pineapple with Pound Cake and Rum-Caramel Sauce image

2 tablespoons unsalted butter
3/4 cup dark brown sugar
2 tablespoons dark rum
1/2 cup heavy cream
1 small pineapple, peeled and cut in 1/2
1/4 cup canola oil
1 store-bought pound cake, cut into 1/2-inch thick slices
Vanilla ice cream, for serving
Maraschino cherries, optional

Steps:

  • Melt the butter in a small saucepan over high heat, add the brown sugar and rum and cook, whisking until the sugar has melted and the mixture is smooth. Whisk in the heavy cream and cook until heated through and slightly thickened. Transfer the mixture to a bowl, keep warm.
  • Heat the grill to high.
  • Brush the pineapple on both sides with the oil and place on the grill. Grill until golden brown and caramelized on both sides, about 6 minutes. Remove from the grill, stack the slices and cut into chunks. While the pineapple is grilling, place the pound cake on the grill until lightly golden brown on both sides, about 20 seconds on each side. Remove the pineapple from the grill and, when cool enough to handle, either slice or cut into chunks.
  • Top each piece of pound cake with some of the pineapple and drizzle with the caramel-rum sauce. Top with more pound cake, vanilla ice cream and a maraschino cherry, if desired.

Delicious pineapple kabobs, sprinkled with cinnamon and brown sugar then grilled for the perfect summertime dessert!

1-2 fresh pineapples cut into chunks (dispose of top, shell, and core)
2 T brown sugar
1/2 tsp. ground cinnamon
good olive or canola oil

Steps:

  • Soak skewers in water for at least 10 minutes to prevent burning.
  • Preheat grill to high or 400 degrees.
  • Poke the skewers through 8-10 fresh pineapple chunks each, depending on the size of the chunks. Lay them out on a baking sheet or tray when finished.
  • Brush lightly on all sides with good olive or canola oil.
  • Mix brown sugar and cinnamon together in a small bowl and lightly sprinkle onto the skewers. I just do this lightly on one side, but you can do more, and on both sides if you want a sweeter result.
  • Place skewers onto preheated grill. Monitor carefully as they cook. Flip every 2-3 minutes until warmed/cooked through. I flipped my skewers a total of 3 times. The individual chunks may flip and have a mind of their own. It is totally okay if some sides get cooked more than others.

  • Soak skewers in water 30 minutes. Meanwhile, trim ends from pineapple, then stand it upright and cut off peel. Quarter pineapple lengthwise and cut out core. Reserve half the pineapple for another use. Cut each remaining quarter into 4 lengthwise slices, then cut each slice in half crosswise to make 16 thin wedges. Skewer each lengthwise.
  • In a small saucepan, combine sugar with 1/2 cup water. Bring to a boil, swirling to dissolve sugar; boil, swirling occasionally (do not stir), just until golden and honeylike. Remove from heat and slowly whisk in coconut milk (mixture will bubble furiously).
  • Heat a grill to high (450° to 550°). Using a pastry brush, coat pineapple pieces with caramel sauce. Grill just until marks appear, then turn to mark other side, 4 to 5 minutes total. Put skewers on a platter, sprinkle with toasted coconut, and serve with remaining caramel sauce for dunking.
