GRILLED PINEAPPLE SALSA
This is my favorite salsa to go with summer grilling! Have served this for guests and family and everyone loves it! Serve with grilled chicken breast, fish, or pork.

- Preheat grill for medium heat and lightly oil the grate. Spray pineapple pieces with cooking spray.
- Cook pineapple on the grill until lightly browned and caramelized, 5 to 10 minutes. Remove pineapple from grill and cool; chop.
- Mix pineapple, red bell pepper, onion, cilantro, jalapeno pepper, garlic, lime juice, sugar, salt, and ground black pepper together in a bowl; refrigerate until chilled and flavors blend, about 1 hour.

Steps:
- Prepare grill and oil grill racks.
- Trim the top and bottom of pineapple and then quarter pineapple.
- Cut onion into rings.
- Grill pineapple and onion rings for a few minutes on each side until slightly charred. Allow them to cool and then trim the outer skin and core from pineapple wedges (discarding skin and core).
- Chop pineapple and onion into bite-size pieces.
- In a serving dish or bowl combine pineapple, onion, garlic, lime juice and cilantro. Add salt and chipotle powder to taste.

These are SO easy and really good. The hot sauce gives it an extra kick and cuts the sweetness. They can help with patience while the rest of the grilled feast comes together, but be warned, they go quickly!

- Place pineapple in a large resealable plastic bag. Add honey, butter, hot pepper sauce, and salt. Seal bag, and shake to coat evenly. Marinate for at least 30 minutes, or preferably overnight.
- Preheat an outdoor grill for high heat, and lightly oil grate.
- Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.

GRILLED HALIBUT WITH PINEAPPLE CHIPOTLE SALSA
Halibut is a low fat, very mild flavored fish with a firm flaky meat. It is easily available year round, relatively inexpensive, easy to grill and lends itself to almost any flavor. I found this recipe in the local Living Magazine & was intrigued by the salsa. I'm sure it would be wonderful with any mild fish such as grouper, flounder or snapper.

- Plump raisins in rum for 30 minutes; drain.
- Heat grill to medium high heat. Brush pineapple slices with oil & grill until lightly caramelized on both sides. Cool & cut into 1/2" pieces; put in mixing bowl.
- Combine chipotles, lime juice, orange zest & juice. Whisk in olive oil. Pour over pineapple chunks, fold in green onion, red pepper, cilantro & raisins. Salt to taste. Set aside.
- Brush halibut heavily with oil & grill just until fish is opaque throughout, gently turning once. The grilling time on halibut is pretty short so keep a close eye on it to avoid over cooking. *** A 1-inch halibut steak will grill up in about 10 minutes over a medium high heat. Thinner cuts and fillets can cook in as little time as 6 minutes.
- Serve topped with salsa.

- Add chicken, 3 tbsp. lime juice, 2 tbsp. maple syrup, adobo sauce, peppers, olive oil, and 1/2 tsp. salt to a large ziplock baggie. Seal shut and massage the mixture into the meat. Palce in a bowl and marinate in the fridge for 2-5 hours.
- Once you're ready to cook. Heat the grill to a medium-high heat. Take the chicken out of the marinade and let any excess drip off. Season with a little bit more salt and pepper on both sides. Grill until slightly charred and cooked through, about 10 minutes per side.
- While the chicken cooks, add the pineapple, remaining lime juice, maple syrup, cilantro, red onion, jalapeno, and remaining salt to a medium bowl. Stir to combine. Season with salt and pepper.

- Prepare salsa ingredients. Peel, core and slice pineapple into thick round or long slices. Small dice red onion and chop cilantro. In a wide bowl, add red onion, 2 tbsp of lime juice with generous pinch of salt. Mix and set aside to marinate.
- For pineapple glaze, mix minced chipotle chili plus adobo sauce with 1.5 tablespoon honey and generous pinch of salt (*You can also use tsp of soy sauce for darker glaze). Mix the ingredients well (Honey should be well dissolved). Taste and add more honey if it is too spicy for you. Coat pineapple slices in glaze on both sides.
- Grill Pineapple: Grill on low-heat side of grill until nice grill marks appear on both sides of pineapple. or pineapple is slightly caramelized. Don't cook too long to get grill marks. Don't let pineapple get mushy. Once grilled, leave aside to cool completely.

- Taste the salsa, add salt to taste, stir to combine, and serve. Salsa will keep airtight in the fridge for up to 1 week. I find the flavors of the salsa marry as time passes and the overall flavor profile improves with time.
