SIMPLEST GRILLED PEACHES
Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

Steps:
- Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
- Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
- Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

GRILLED PINEAPPLE WITH RUM SAUCE
Steps:
- Preheat grill to 400° F. cleaning and oiling the grates well. Peel, cut and core the pineapple into 6-8 rings that are approximately 3/4 - 1 inch thick. Brush the pineapple rings lightly with oil or melted butter.
- While the grill preheats, combine the brown sugar, rum, cinnamon, butter (if using it) and pinch of salt. Bring the mixture to a boil and stir everything together. Reduce the heat to medium-low and let the sauce simmer until it's reduced and thick enough to coat the back of a spoon, about 5 minutes. Pour the sauce into a jar or serving bowl and set aside while the pineapple grills.
- Place the pineapple rings onto the grill and cover with the lid. Grill for 2-3 minutes or until they're golden brown and have grill marks, then flip them over and grill another 2-3 minutes.
- Remove the pineapple from the grill. Serve the pineapple with a scoop of vanilla ice cream, rum sauce and toasted slivered almonds on top.

Steps:
- Prepare a grill for medium-low to low heat. Spray a grill tray with holes with cooking spray.
- Mix the olive oil and maple syrup together in a small bowl and brush over the peaches and pineapple. Put the fruit cut-side down on the prepared grill tray and cook low and slow, rotating them 90 degrees halfway through, about 5 minutes. Monitor the cooking temperature and keep it low enough so that the maple syrup doesn't burn but browns a little. Set the fruit aside to cool.
- To serve, arrange the fruit over scoops of vanilla ice cream, sprinkle pecans all over the top and drizzle with extra maple syrup.

- Prepare the grill for direct or one zone cooking. Target the temperature over the heat at 375 degrees Fahrenheit.
- Cut peaches with a pairing knife along seam, cutting from the stem and vertically along the peach from one side of the stem to the other in one motion. Cut along the pit so the two hemispheres are equal in size. Using the knife, carefully cut along the pit and remove with a small spoon.
- Coat the flesh side of the peaches with olive oil using a brush and place the peaches over direct heat. Grill over direct heat for 4-5 minutes or until the peaches have grill marks and have softened a bit. See note below for ripeness considerations.
- Remove the peaches from the grill and place one scoop of ice cream and a drizzle of honey. Finish with some of the crushed graham cracker and a small amount of mint. Serve immediately so the ice cream doesn't melt.
