GRILLED ONIONS AND POTATOES

Grilled Onions and Potatoes image

My family loves these tasty potatoes. There are never leftovers. Once the potatoes are all tucked in their foil packets, they can wait overnight to be grilled the next day. Great for camping. Check foil packets at 15 and 30 minutes to ensure they are not burning. May require a few more minutes to ensure all is cooked through.

GRILLED PARMESAN POTATOES

Grilled Parmesan Potatoes image

This is a simple and good recipe from bettycrocker.com. NOTE: This recipe is even better if you double the cheese and bread crumbs. Or, if you would like to cut the calories down, toss the potatoes with some seasonings (we like garlic salt and pepper), the breadcrumbs and a drizzle of olive oil, and omit the butter and cheese.

LIFE CHANGING GRILLED POTATOES

Life Changing Grilled Potatoes image

This grilled potatoes recipe is a total game changer. You can use Yukon Gold, russet or sweet potatoes-russets will be a bit fluffier and lighter in the middle, while Yukon Golds and sweet potatoes will be denser but richer. They're all delicious! The granulated garlic provides flavor and won't burn on the grill like fresh garlic would (you can use garlic oil instead). The potatoes are the ultimate side dish or appetizer. I take them over the top with freshly grated parmesan cheese, chopped chives and a creamy Herbed Aioli for dipping. HEAVEN!

Provided by Nicki Sizemore

Categories     Side Dish

Time 30m

Number Of Ingredients 8

4 medium Yukon Gold, russet or sweet potatoes, cut crosswise into 1/4-inch slices
2 tablespoons extra virgin olive oil
1 teaspoon granulated garlic
Salt and freshly ground black pepper
Neutral vegetable oil for grill
Freshly grated parmesan cheese
Chopped chives
Herbed Aioli (recipe link in header above)

Steps:

  • Preheat your Spark grill to 500˚F, or preheat a regular grill to medium heat.
  • In a large bowl, toss the potato slices with the olive oil and granulated garlic. Season well with salt and pepper.
  • Clean and oil the grill grates. Arrange the potatoes in a single layer on the grill. Cover and cook until they're lightly browned with grill marks on the bottom, about 6-8 minutes. Flip the potatoes over and rearrange them on the grates. Cover and continue cooking until the potatoes are caramelized on the other side and are tender in the center, about 5-6 minutes longer-don't be afraid to flip and move the potatoes around the grill for even cooking (if you're using a gas grill adjust the heat as needed so that the potatoes don't darken too quickly).
  • Transfer the grilled potatoes to a platter and sprinkle lightly with salt. Garnish with grated parmesan cheese and chopped chives, and serve with Herbed Aioli, if you'd like.

  • Preheat oven to 425°F degrees. Cut potatoes into wedges, first by cutting down the middle lengthwise, then cut into long pieces about an inch thick. Toss in the olive oil, salt, and pepper. Place in an oven safe dish and cover with foil. Bake 45 minutes to an hour until just done.
  • Make the sauce by melting the butter over medium-low heat. Add in the garlic until just fragrant about a minute. Do NOT burn the garlic, if it starts to turn a brownish color at all take the pan off the heat, it is done. Add in the cheese and let it melt down. Set aside.
  • Get the grill heated over high heat and oil the grates. Place wedges carefully on the grill over medium heat. Flip them over after about 5 minutes or until grill marks start to form. Baste with the garlic sauce but be careful of flare-ups, always have a water bottle handy!
  • When the potatoes have nice grill marks on all sides they are done, take off the grill carefully and place in a bowl. Drizzle the rest of the garlic sauce over them and add the parsley. Toss until coated.
